HOLIDAY BACON APPETIZERS

- Preheat the oven to 250 degrees F.
- Lay the crackers face up on a large rack over a baking sheet (or broiler pan). Scoop about 1 teaspoon of the grated Parmesan onto each cracker. Cut the package of bacon in half (or cut pieces individually) and carefully, so the cheese doesn't fall off, wrap each cheese covered cracker with one half piece of bacon, completely covering the cracker. It should fit snugly around the cracker, but not be pulled too taut. Place the bacon-wrapped crackers onto the rack. Place the baking sheet in the oven for about 2 hours. Serve immediately or at room temperature!

- Cut each slice of bacon in half widthwise. Wrap a strip around each chestnut or pineapple chunk; secure with toothpicks. Place in an ungreased 15x10x1-in. baking pan. Bake at 400° for 25-35 minutes or until bacon is crisp. , Pour sweet-and-sour sauce into a microwave-safe bowl. Cover and microwave on high for 1-2 minutes or until heated through. Serve with appetizers.

- Lay the chayotes on a work surface; cut them in half horizontally and pit them. Bring a large pot of lightly salted water to a boil. Add the chayotes and cook over high heat until just tender, about 15 minutes. Drain and let cool slightly. Using a melon baller or small spoon, scoop out the center of the chayotes, leaving a 1/4-inch shell. Transfer the shells to a large baking dish. Finely chop the flesh.

- Preheat the oven to 450°. Bake the stuffed chayotes for about 25 minutes, or until golden and bubbling. Let stand for 10 minutes before serving.
