BACON WRAPPED ASPARAGUS WITH GOAT CHEESE
Bacon wrapped asparagus sprinkled with goat cheese is an easy and DELICIOUS three-ingredient vegetable side that's as decadent as it sounds!

Steps:
- Line a rimmed baking sheet with parchment paper and preheat oven to 425 degrees F.
- Mix asparagus with olive oil (1 tablespoon), salt, and pepper on the rimmed baking sheet.
- Divide the asparagus into 8 equal portions.
- Wrap each portion in 1/2 piece of bacon and arrange spaced apart on prepared baking sheet.
- Roast for 30 minutes, or until bacon is beginning to brown and asparagus is getting crispy.
- While it's cooking, put the goat cheese in the freezer so it's easier to crumble. Use the tines of a fork to twist crumbles off the goat cheese.
- Transfer asparagus bundles to a serving plate and sprinkle with crumbled goat cheese.

Steps:
- Snap the tails from the asparagus. Peel the ends, if preferred. Blanch in boiling water, until bright green. Drain and refresh in icy water.
- Take 4 asparagus spears together with a rosemary sprig. Wrap with a rasher of bacon. Repeat with the remaining asparagus, rosemary and bacon.
- Heat an oiled, ridged frying pan, until very hot. Place the wrapped asparagus in the pan. Pan-fry on all sides, until the bacon is cooked.
- To make the dressing, crumble the cheese into a bowl. Add the remaining ingredients and whisk to make a smooth dressing. Drizzle over the asparagus and serve.

- Heat a griddle pan. Drizzle the asparagus with a little oil, season and cook for 3-4 mins, rolling around the pan until just tender. Leave to cool.
- Lay a slice of prosciutto on your chopping board. Put 3 asparagus spears on top, with the tips poking out the end, then top with a few rocket leaves and 2 semi-dried tomatoes. Roll up the prosciutto tightly to enclose the filling and put in a sealable container for transporting. Continue until all the ingredients are used up.
- Mash the cream cheese and goat's cheese together in a bowl with a fork. Season and add enough milk to make a smooth consistency, into which you can dip the bundles. Transfer to a pot for travelling and sprinkle over the hazelnuts.

- Cook bacon in heavy large skillet over medium heat until brown and crisp.
- Transfer to paper towels and drain.
- Crumble and set aside.
- Position rack in center of oven and preheat to 500 degrees.
- Arrange asparagus on large rimmed baking sheet.
- Drizzle with 2 T. oil and turn to coat well.
- Sprinkle generously with salt and pepper.

- Wash and trim asparagus spears.
- Cut bacon strips in half crosswise.
- Wrap one-half strip bacon around each asparagus spear, leaving tip and end exposed.
- Lay on a cookie sheet with sides.

I threw this together tonight in a last minute "what's for dinner" moment. Even my son who doesn't like asparagus liked this recipe. Serve this with a couscous salad and some warmed flat bread for a tasty mediterranean style dinner.

- Tenderize steaks with a meat tenderizer. Rub steaks with your favorite steak seasoning (I like to use a greek seasoning blend). Lay out flat on cookie sheet and drizzle heavily with balsamic vinegar. Cover and marinate for 30 minutes.
- Trim asparagus to 4-5 inches in length. Divide steaks into 3 oz pieces, large enough to hold approx 3 asparagus spears each. Divide goat cheese into 1/2 ounce servings.
- Place 3-4 trimmed asparagus spears and 1/2 oz of goat cheese in center of each steak. Roll steak to seal in asparagus and cheese. Wrap each beef roll with 1-2 slices of uncooked beef bacon. Place toothpick through seam to help hold bacon on while cooking. Place wrap, seam side down, on broiler pan. Bake in oven on 350F for 30 - 35 minutes.
