1/3 cup olive oil
1/4 teaspoon black pepper
1/2 teaspoon salt

1/2 teaspoon dried parsley or 1 1/2 teaspoons fresh chopped parsley
1/2 teaspoon minced garlic
2 teaspoons white granulated sugar
1 tablespoon bacon drippings

This easy dish is a family favorite on the buffet table when we have summer birthday or summer celebration parties. It makes a really nice side dish to any BBQ and will reheat nicely in the microwave. The cheesy cracker and dried onion mixture will encourage any fussy kids to eat their vegetables!

Provided by Ellen Bancroft Ziegler

Categories     Meat and Poultry Recipes     Pork

Time 50m

Yield 8

Number Of Ingredients 14

6 tablespoons melted butter, divided
2 teaspoons canola oil
5 cups cubed yellow summer squash
½ large onion, diced
½ teaspoon ground thyme
½ teaspoon garlic powder
30 buttery round crackers, crushed
1 ½ cups shredded Cheddar cheese
½ (2.8 ounce) package French-fried onions, slightly crumbled
¼ teaspoon salt
ground black pepper to taste
4 strips cooked bacon, crumbled
¾ cup whole milk
2 eggs, beaten

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish.
  • Heat 1 tablespoon butter and oil in a skillet over medium heat. Add squash, diced onion, thyme, and garlic. Cook, stirring frequently, until squash is tender, about 5 minutes. Cook, covered, until squash juices are released, about 2 minutes. Uncover and continue to cook until juices evaporate, 3 to 5 minutes more. Drain squash mixture into a bowl.
  • Mix remaining butter with crushed crackers, Cheddar cheese, French-fried onions, salt, and pepper. Reserve 1 cup of the mixture; stir the rest into the squash mixture. Add bacon and stir well.
  • Mix milk and eggs together in a small bowl and add to the squash mixture. Mix well. Spread into the prepared baking dish. Sprinkle reserved portion of the cracker mixture on top of casserole.
  • Bake in the preheated oven until lightly browned, about 25 minutes.

BUTTERNUT, BACON AND APPLE HOTDISH

Butternut, Bacon and Apple Hotdish image

Provided by Molly Yeh

Time 1h40m

Yield 8 servings

Number Of Ingredients 16

3/4 pound thick-cut bacon
2 large purple onions, thinly sliced
2 pounds butternut squash, seeded, peeled and chopped into 1/2-inch cubes
6 sprigs fresh thyme, stems removed
Kosher salt and freshly ground black pepper
Crushed red pepper flakes
1/8 cup white wine
1/2 cup vegetable broth
2 large apples, like Honeycrisp, chopped into 1/2-inch cubes
2 cups all-purpose flour, plus additional for dusting
2 teaspoons baking powder
3/4 teaspoon kosher salt
14 tablespoons unsalted butter, cold and cubed
1/4 cup heavy cream
1 large egg, lightly beaten
Freshly ground black pepper

Steps:

  • For the filling: Lay the bacon in a large oven-safe skillet (I like to use a cast-iron pan or braiser) and turn the heat to medium. Cook, flipping once, until crisp on both sides, about 7 minutes total. Remove from the heat and place on a paper towel-lined plate to drain and cool slightly.
  • Drain half the bacon grease from the skillet, leaving just enough to coat the skillet. Add the onions and turn the heat to medium-high. Saute until soft, about 10 minutes. Add the squash, thyme, some salt, a few turns of pepper and a few pinches of crushed red pepper and cook, stirring occasionally, 10 more minutes. Add the wine and broth. Roughly chop the bacon and add it to the skillet along with the apples. Bring the mixture to a light boil, then reduce the heat to low and simmer for 15 to 20 minutes, while you make the biscuits.
  • For the biscuits: Preheat the oven to 425 degrees F.
  • Whisk together the flour, baking powder and salt in a bowl. Add the butter and, using a food processor, pastry cutter or your hands, incorporate the butter until the mixture is the consistency of raw oatmeal. Mix in the cream until the mixture comes together to form a dough. Turn it out onto a floured work surface, pat it out to 3/4-inch thick and then cut out round biscuits, re-rolling scraps as needed.
  • Turn off the heat before dotting the top of the skillet with the biscuits. Brush the biscuits with the beaten egg and top with black pepper. Bake until the biscuits are golden brown, cooked through and flaky, about 25 minutes. Remove from oven and serve right from the skillet!

SAVORY BUTTERNUT SQUASH CASSEROLE

Savory Butternut Squash Casserole image

This butternut squash casserole features bacon, chopped nuts and crushed crackers for a savory stuffing-like dish. A deliciously unique dressing recipe that's perfect as a holiday side dish!

Provided by Sommer Collier

Categories     Holiday     Side Dish

Time 1h10m

Number Of Ingredients 13

3.5 pounds butternut squash (peeled and chopped into ¾ inch cubes)
2 tablespoons olive oil
5-6 slices thick-cut bacon (chopped)
1 large onion (diced)
4 cloves garlic (minced)
¾ cup chopped pecans
2 tablespoons fresh chopped sage
1 tablespoon fresh thyme leaves (1 tsp dried thyme)
1 sleeve saltine crackers (about 36 crackers)
1 cup half & half
2 large eggs
¼ cup grated parmesan cheese
Salt and pepper

Steps:

  • Preheat the oven to 400°F. Set out a large rimmed baking sheet, a 9 x 13 inch baking dish, and a large skillet. Grease the baking dish and set aside.
  • Place the chopped butternut squash onto the rimmed baking sheet. Drizzle with olive oil. Then salt and pepper liberally. (This is the only time salt is added to the recipe due to the use of bacon, saltine crackers, and Parmesan cheese, so be generous.)
  • Spread the cubed butternut squash out into a single layer. Roast in the oven for 30+ minutes until the squash is soft and toasted around the edges.
  • Meanwhile, place the skillet over medium heat. Brown the chopped bacon in the skillet. Once crispy, add in the onions and garlic. Sauté for 3 to 5 minutes to soften the onions. Then stir in the chopped pecans, sage, and thyme. Sauté another 1 to 2 minutes, then turn off the heat.
  • Crush the sleeve of saltine crackers with your hands. In a small mixing bowl whisk the half-and-half and eggs together.
  • Once the butternut squash comes out of the oven, move it to the greased baking dish. Add in the bacon and onion mixture, and the crushed crackers. Toss well to mix, then spread out and an even layer.
  • Pour the egg mixture evenly over the casserole. Sprinkle the Parmesan cheese evenly over the top.
  • Bake for 20 to 25 minutes until the top is crispy. Serve warm.

  • You will need to peel the butternut squash, cut it in half - lengthwise and scoop out all of the seeds. Then it's a matter of cutting it into one inch cubes. A time-saver tip would be to buy already cubed squash from the produce section in the grocery store.
  • Once you have your squash cubed you can preheat your oven to 400 degrees and grease your 13" by 9" baking dish with one tablespoon of melted coconut oil.
  • Then core your apples and chop them up into one inch cubes. You can peel the apples if you prefer, though it's not necessary. I like to use a Honeycrisp apple but your favorite will work as well.
  • Place squash and apples in a large bowl. Rough chop your onion and then add it to the bowl. Add 2 tablespoons melted coconut oil, sage, and thyme to the squash mixture. Season with salt and black pepper, to taste, and toss to combine.
