20 large shrimp, peeled and deveined
10 slices bacon

Steps:

  • Preheat grill for medium heat.
  • Wrap shrimp in bacon, and secure with toothpicks.
  • Lightly oil grate, and arrange shrimp on grill. Cook for 3 to 4 minutes, turning once. The shrimp will be done when the bacon is fully cooked.

30 uncooked shrimp (31-40 per pound), peeled and deveined
6 tablespoons creamy Caesar salad dressing, divided
15 bacon strips, halved crosswise
2 jalapeno peppers, seeded and thinly sliced

Steps:

  • Preheat broiler. In a large bowl, toss shrimp with 4 tablespoons dressing; let stand 15 minutes., Meanwhile, in a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain; keep warm., Remove shrimp from marinade; discard marinade. Top each shrimp with a jalapeno slice and wrap with a bacon strip; secure with a toothpick. Place on a greased rack of a broiler pan., Broil 4 in. from heat 2-3 minutes on each side or until shrimp turn pink, basting frequently with remaining dressing after turning., Discard toothpicks before serving.

2 tablespoons smoked paprika
2 teaspoons granulated garlic
1 teaspoon onion powder
1 teaspoon granulated sugar
3/4 teaspoon kosher salt
1/2 teaspoon ground coriander
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
4 tablespoons salted butter
1 pound shrimp (21-25 count), peeled, deveined and tails removed
1 pound thick-cut bacon
1 cup mayonnaise
1 tablespoon capers, drained and chopped
1 tablespoon hot sauce
1 tablespoon fresh lemon juice
1 tablespoon honey mustard
1 tablespoon chopped fresh parsley
1 tablespoon sweet relish
1 clove garlic, grated
Salt and freshly ground black pepper
2 avocados, medium dice
2 Roma tomatoes, medium dice
2 tablespoons fresh orange juice
4 large 12-inch flour tortillas, very lightly grilled til' just charred and beginning to bubble

Steps:

  • For the shrimp: Heat a grill to medium-high heat. Combine the paprika, garlic, onion powder, sugar, salt, coriander, black pepper and cayenne in a bowl. Melt the butter in small saucepan over medium-low heat. Add the spice mixture and cook until fragrant, stirring frequently, about 3 minutes. Let cool, then toss the shrimp with the butter and spices and let sit for 15 minutes.
  • Lay the bacon across grates of a grill and grill until crisp, 2 to 3 minutes per side. Set aside on paper-towel-lined plate.
  • Grill the shrimp until charred, 1 to 2 minutes per side. Let rest, then chop each shrimp into 3 smaller chunks.
  • For the remoulade: Mix together the mayonnaise, capers, hot sauce, lemon juice, mustard, parsley, relish and garlic in a bowl and season with salt and black pepper.
  • Mix together the avocados, tomatoes and orange juice. Season with salt and black pepper. Schmear a tablespoon of remoulade on each tortilla and top with avocado and tomatoes, 2 slices of bacon and some grilled shrimp. Tightly wrap and serve with extra remoulade for dipping.

1/2 teaspoon cumin
1/2 teaspoon onion powder
1/2 teaspoon citrus lemon pepper
1 teaspoon garlic
1 tablespoon Worcestershire sauce
1 tablespoon fresh squeezed lemon juice
4 tablespoons butter, melted
9 slices bacon
18 prawns
18 wooden skewers, soaked in water for at least 15 min

Steps:

  • Combine butter and spices, add shrimp, stirring to coat the shrimp. Let shrimp marinate for 1 to 2 hours.
  • Slice bacon in half and cook over medium high heat to render out some fat, keeping bacon flexible. Drain the bacon and pat grease out with a paper towel.
  • Wrap each piece of shrimp with a piece of bacon. Slide on to skewers. If you use wooden skewers, the skewers need to be soaked in water for about 15 minute in water or use metal ones.
  • Grill on a hot grill until shrimp are opaque. Use remainder of marinade when turning the shrimp.

I found this recipe last year in the Chicago Tribune and have made it several times since then. It's best to use a good, smoky bacon and I prefer the lavash bread to the flour tortillas, but that's just a personal taste. Also, I usually buy the cooked shrimp when it's on sale at my store, which makes this even easier. I make one of these up in the evening, wrap in plastic wrap and throw it in my lunch bag in the morning to take to work.

2 large lavash flat bread or 2 large flour tortillas
2 tablespoons mayonnaise, regular or low-fat, or amount to your taste (I use more)
4 leaves lettuce
1 avocado, peeled, pitted, sliced
1 tomatoes, sliced
1/2 lb shrimp, cooked and peeled
4 slices cooked bacon

Steps:

  • Spread the flatbreads or tortillas with mayonnaise. Lay a lettuce leaf on each; top each with avocado and tomato slices. Divide the shrimp and bacon evenly among the sandwiches; top each with the remaining lettuce. Roll the flatbread to make a tight cylinder.
  • If made ahead, wrap well in plastic wrap and refrigerate. I've only kept them as long as the next day, for lunch so don't know how well they'd keep any longer than that.

1/8 teaspoon salt
1/8 teaspoon ground black pepper
4 lemons, cut into wedges

Steps:

  • Preheat broiler.
  • Cut bacon strips in half widthwise.
  • On a large cutting board lay bacon strips flat.
  • Place a basil leaf in the middle of each piece of bacon.
  • Place a shrimp on top of the basil with the tail at a right angle to the bacon strip.
  • Wrap the bacon around the shrimp and place seam side down on a broiling pan; secure with toothpick if desired.
  • Sprinkle with salt and pepper.
  • Broil, 4 to 5 inches from the heat for 3 minutes.
  • Turn over and broil another 3 minutes, or until the shrimp are pink and curled and the bacon is crisp.
  • Squeeze lemon juice over cooked shrimp just before serving.
