BACON AND MUSHROOM LASAGNA

- For the bechamel: Melt the butter in a large saucepan over medium heat. Whisk in the flour to form a smooth paste. Cook, whisking constantly, for 3 minutes. Slowly whisk in the milk until smooth. Add the salt and bay leaf and bring the mixture to a simmer, whisking occasionally. Reduce the heat to low and simmer, stirring occasionally to prevent burning, for 20 minutes. Remove and discard the bay leaf.
- For the lasagna: Meanwhile, add the oil and bacon to a large skillet over medium heat and cook, stirring often, until the bacon is crispy and golden brown and the fat is rendered, about 15 minutes. Using a slotted spoon, remove the bacon to a paper towel lined plate. Drain off all but 3 tablespoons of the fat from the skillet. Add the mushrooms and 1 teaspoon salt to the skillet and increase the heat to medium-high. Cook, stirring occasionally with a wooden spoon, until the mushrooms have released their liquid and are beginning to brown, about 15 minutes. Add the onion, carrot, celery, garlic, thyme and remaining 1 1/4 teaspoons salt and cook until fragrant, the vegetables are soft and the mushrooms have browned, about 5 minutes longer. Deglaze with the white wine. Simmer until the liquid is almost entirely evaporated, about 4 minutes. Stir in the reserved bacon.
- Preheat the oven to 400 degrees F. Butter a 9-by-13-inch baking dish.
- Ladle and spread 1 cup bechamel on the bottom of the baking dish. Place a layer of pasta over the bechamel, breaking the pasta to fit the pan if needed. Spread 1 1/2 cups bechamel over the pasta. Spoon half of the mushroom filling over the bechamel and top with 3/4 cup Parmesan. Place another layer of pasta on top of the filling and repeat with the bechamel, the remaining mushroom filling and another 3/4 cup Parmesan. Layer on another layer of pasta and top with the remaining bechamel and Parmesan.
- Bake until golden brown and bubbly around the edges, 30 to 35 minutes. Allow the lasagna to rest for 15 minutes before serving.
CREAMY BACON AND MUSHROOM PASTA
This bacon and mushroom pasta recipe has crispy bacon and plenty of mushrooms in a delicious garlic herb cream sauce. It only takes about 30 minutes to make!

- Boil a salted pot of water and cook pasta al dente according to package instructions.
- Meanwhile, cut the bacon up (I use kitchen shears to make it easy) and add it to a skillet. Fry it until crispy over medium-high heat. When it's done, transfer it to a paper towel lined plate. Leave the bacon fat in the pan.
- Add the mushrooms to the skillet, and cook them, stirring occasionally, for about 5-6 minutes or until they release water and it's been cooked off.
- Stir in the garlic and cook for 30 seconds.
- Take the mushrooms out of the pan (add them to the same plate that has the bacon).
- Add the broth, Italian seasoning, lemon juice, flour, and Dijon mustard to the pan. Give it a good stir (only let it cook for about a minute max or it'll all cook off).
- Add in the cream and let it simmer for about 2 minutes.
- Add the mushrooms and bacon back to the skillet. Let it heat through/cook for a few more minutes until it's slightly thickened, then drain the pasta and add it to the skillet and toss. Season with salt & pepper as needed and serve with parmesan cheese and parsley if desired. If the sauce gets a tad too thick, add in a splash of the hot pasta water prior to draining it.

CREAMY BACON PASTA BAKE

- Preheat the oven to 180°C/350°F.
- In a large, oven-proof pan, fry the bacon until it starts to crisp. Remove from the pan and set aside. Drain off the bacon fat and reserve for cooking with.
- In the same pan, melt the butter and add the onion. Allow to cook until soft.
- Add the garlic and sage and cook for a minute before adding the flour.
- Stir the flour into the butter then whisk in the milk and cream. Reduce the heat and allow to simmer for 5-7 minutes until the sauce is thick and creamy. Remove from the heat then stir in the bacon, Parmesan and half of the grated cheese. Season to taste.
- Add the cooked pasta and some of the pasta cooking water. Stir to coat the pasta in the sauce. At this stage, the sauce should look quite thin. The pasta will absorb more sauce as it cooks so if it looks too dry at this stage, add more pasta cooking water.
- Top with the remaining cheese and more sage leaves if desired then place in the oven.
- Allow to bake for 15-20 minutes until the cheese is golden brown.
- Remove from the oven, allow to cool for 10 minutes then serve.

FOUR CHEESE MUSHROOM AND BACON BAKED PASTA
A cheesy pasta bake with a homemade tomato sauce and mushrooms and bacon.

- Preheat oven to 450 degrees F. Bring a large pot of salted water to a boil.
- Heat the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of the tomatoes and 1 cup of water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly and simmer rapidly, uncovered, until thick, 15 to 20 minutes. Stir in the ricotta and season with salt and pepper.
- While the sauce simmers, put the bacon in a large skillet and cook over medium heat, stirring often, until crispy, about 10 minutes. Transfer to a large bowl with a slotted spoon. Discard all but about 2 tablespoons of the bacon drippings from the skillet then add the mushrooms and cook, stirring, until golden brown, about 8 minutes. Add the mushrooms to the bowl with the bacon.
- Cook the farfalle in the boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the bowl.
- Add the tomato sauce, the Asiago and half of the pecorino to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the mozzarella and the remaining pecorino. Bake, uncovered, until browned, about 15 minutes. Let the pasta rest for about 10 minutes before serving.
MUSHROOM-BACON PASTA
If you like mushrooms, you'll like this pasta dish! Make it a main course, or serve it as a side dish. As well, this dish easily doubles.

- Note: use any type of mushrooms you like, or a combination; try button, cremini or shiitake.
- Cook pasta according to package directions in a large pot of boiling salted water; cook until al dente then drain well; place in a serving bowl and reserve.
- Meanwhile, in a large skillet over low heat, heat one tbsp of the olive oil.
- Add bacon and mushrooms to skillet and cook, stirring, until browned.
- Add remaining oil to skillet, then the capers, garlic, salt and hot pepper flakes.
- Cook, stirring, for about 10 minutes or until garlic is just slightly golden.
- Stir in basil (you can also substitute fresh parsley, for a different taste) and toss with cooked pasta.
- Serve with parmesan cheese on the side.

- reheat oven to 375°.
- Cook pasta according to the package directions, omitting salt and fat.
- Drain well. Set cooked pasta aside.
- Cook bacon and set aside to cool.
- Melt butter in a large nonstick skillet over medium-high heat.
- Add shallots; sauté 3 minutes.
- Add mushrooms, 1 tablespoon thyme, salt, pepper, and garlic; sauté 8 minutes or until mushrooms are tender.
- Add sherry; cook 1 minute, stirring frequently.

- Slice onion thinly. In a bowl, mix together panko bread crumbs and parmesan cheese.
- Cook spaghetti followed by the package directions.
- While the spaghetti is cooking, cook bacon in a non-stick skillet over medium heat until crisp. Drain on paper towels. Then chop bacons. Put the onions into the same skillet as the bacons were cooked and cook onion over medium heat until tender. Then stir in the pasta sauce. Reduce heat to medium-low and simmer for 1-2 minutes.
- When the pasta has cooked, drain in a colander and put the pasta into the skillet. Toss to coat.
- Transfer the pasta with the sauce into a serving ramekin (24 oz.). Make a deep dent in the center and crack in egg into the dent. - Cook the pasta according to pack instructions, then drain. Heat oven to 200C/fan 180C/gas 6, then melt a little butter in a large saucepan. Fry the mushrooms for a couple of mins, then scoop out and set aside. Use some kitchen paper to wipe out the pan.
- Melt the remaining butter in the pan, then add most of the onions and soften for 1 min. Stir in the flour for another min, then gradually stir in the milk until you have a lump-free sauce. Increase the heat and bubble the sauce, stirring for a few mins to thicken. Turn off the heat, stir in the ham and most of the cheese, then season to taste.
- Tip the pasta and mushrooms into a large ovenproof dish, then pour over the sauce and mix well in the dish. Scatter over the remaining cheese and spring onions, then bake for 10 mins until golden.

- Cook the pasta in boiling water in a large non-stick saucepan according to pack instructions. Meanwhile, slice the mushrooms and snip the bacon into bite-size pieces with scissors or a sharp knife.
- Reserve a few drops of the cooking water in a cup or bowl, then drain the pasta and set aside. Fry the bacon and mushrooms in the same pan until golden, about 5 mins. Keep the heat high so the mushrooms fry in the bacon fat, rather than sweat.
- Tip the pasta and reserved water back into the pan and stir over the heat for 1 min. Take the pan off the heat, spoon in the pesto and crème fraîche and most of the basil and stir to combine. Sprinkle with the remaining basil to serve.
