Maple Bacon BBQ Sauce
8 slices of bacon, diced
1/2 large onion, diced (or 1 medium onion)
1 cup ketchup
1/2 cup applesauce
1 cup maple syrup (the real stuff)
1/4 cup cider vinegar
2 tbsp. soy sauce
1 tsp. mustard powder
3 tbsp. brown sugar

Steps:

  • 1. While the ribs are braising, prepare the sauce. In a medium sauce pan, take the diced bacon (cut up before cooking) and cook it until it is half done. Drain off all of the fat, leaving 3 tbsp. in the saucepan. Add the onion to the cooking bacon. Fry until the onions are tender and beginning to brown. 2. Add the ketchup, applesauce, maple syrup, vinegar, soy sauce, mustard powder, brown sugar, salt and pepper. Bring the contents to a boil, reduce the heat to low and simmer for about 15 minutes, and stirring every so often.

10 slices bacon
20 large sea scallops
1 cup whipping cream
2 tablespoons maple syrup
1 tablespoon Dijon mustard
finely chopped fresh chives
salt
pepper

Steps:

  • Preheat oven to 350 degrees. Place bacon slices individually onto a baking sheet. Bake until a pale golden brown, about 8 minutes. It should still be flexible, not crisp. Cut slices in half crosswise and let cool.
  • Wrap one slice of bacon around the sides of each scallop and secure it with a toothpick. (They can be prepared 6 to 8 hours ahead. Just cover and refrigerate.).
  • Preheat oven to 400 degrees Place the scallops on a baking sheet and bake until cooked through, about 8 minutes.
  • While the scallops are cooking, boil the cream in a large skillet until it is reduced to about 3/4 of a cup, approximately 3 minutes. Keep an eye on the heat and lower to medium maintaining a steady reduction. Add mustard and maple syrup then boil for approximately another 4 minutes. Season with salt and pepper to taste.
  • Spoon sauce on a serving platter. Arrange scallops on the platter, sprinkle with chives and serve.

3 slice(s) thick cut bacon
1 clove(s) garlic
1 cup(s) apple juice
1/2 cup(s) pure maple syrup

Steps:

  • In a sauté pan cook the 3 bacon slices until crispy. Set aside and drain the fat.
  • In the same pan add the garlic cook until golden brown (should take less than a min).
  • deglaze the pan with the apple juice then add the maple syrup.
  • Basically you are going to reduce the liquid in half. If you think the sauce to be thicker, continue cooking it down until it reaches your desired consistency. Remember it will thicken as it sits.
  • Remove from heat and add the crumbled bacon to the sauce and drizzle over the fish, Chicken, Pork...etc

  • Preheat the oven to 400 degrees F.

6 cups water
1 cup kosher salt
2/3 cup packed dark brown sugar
2 1/2 tablespoons Instacure No. 1*
2 teaspoons vanilla
1/2 cup pure maple syrup
3 cups ice cubes
2 (2-lb) pieces boneless pork loin (2 inches thick; preferably from rib end)
Special Equipment
a 1- to 2-gallon plastic storage tub or stainless-steel bowl; a 22 1/2-inch covered kettle grill with a hinged top rack; a 12- by 8- by 2-inch disposable aluminum roasting pan; 3 lb hardwood sawdust*; charcoal briquettes; a chimney starter; long metal tongs; an instant-read thermometer

Steps:

  • Stir together water, salt, brown sugar, Instacure, and vanilla in storage tub until solids are dissolved, about 3 minutes, then add maple syrup and stir until dissolved. Add ice and stir until cure is cold (ice may not be completely melted; keeping liquid cold slows salt absorption).
  • Add pork to cure, then weight with a large plate to keep submerged. Chill, tub covered with a lid or plastic wrap, 36 hours.
  • Rinse pork and pat dry, then discard brine.
  • Prepare grill and smoke bacon:
  • Open vents on bottom of grill and on lid. Remove lid and top rack from grill, then center disposable roasting pan on lower rack. Add 6 cups hardwood sawdust to pan.
  • Light 5 briquettes in chimney starter. When briquettes are fully lit (covered completely with gray ash and glowing), transfer with tongs to sawdust, spacing evenly.
  • When sawdust begins to smolder, replace top rack and arrange pork pieces on rack about 1 inch apart. Cover grill with lid, then insert thermometer into a vent hole in lid to monitor air temperature, which should be 80 to 120°F. (If temperature rises above 120°F, remove 1 or more briquettes or uncover grill slightly until temperature falls. If temperature falls below 80°F, light 1briquette and add to sawdust.)
  • Smoke pork, adding 1 cup sawdust to roasting pan and stirring with tongs every 11/2 hours to ignite unburned sawdust, 8 hours. Cool completely, then chill, wrapped in plastic wrap, until ready to use.
  • Cut finished bacon crosswise into 1/8- to 1/4-inch-thick slices (or roast whole; see cooks' note, below) and fry in a nonstick skillet over moderate heat, turning, until browned. Transfer to paper towels to drain.
