BACON MAC AND CHEESE CASSEROLE

My Bacon Mac and Cheese Casserole is loaded with crisp bacon, cheddar, mozzarella and cream cheese. Topped with buttery, golden brown Panko breadcrumbs, this is pasta perfection!

8 oz elbow macaroni
4 slices thick cut bacon
6 tbsp butter (separated)
4 tbsp all purpose flour
2 cups milk
1 tbsp hot sauce
1 tbsp dijon mustard
1/2 tsp salt
1/2 tsp black pepper
8 oz cream cheese
2 cups mozzarella cheese ((or Monterey Jack))
2 cups cheddar cheese
1 cup Panko bread crumbs
1/4 cup parsley (chopped (loosely packed))

Steps:

  • Preheat oven to 400°F. In a small bowl mix together 2 tablespoons of melted butter, Panko breadcrumbs and chopped parsley. Set aside.
  • In a large stock pot boil pasta in heavily salted water per package directions. Drain and toss with 1 tablespoon of olive oil to prevent sticking in a 9x9" square or a 13x9" pan coated with cooking spray. Set aside.
  • In a large skillet, render bacon until crispy and browned. Remove bacon and set aside to crumble. Keep bacon fat in pan. Add crumbled bacon to pasta, reserving some to top pasta at serving.
  • In same skillet with bacon fat add 4 tablespoons of butter and melt over medium heat. Whisk in the flour and cook for a minute. Add the milk and whisk to mix thoroughly. Whisk in the mustard, hot sauce, salt and pepper. Lower the heat to simmer and cook for 4 minutes, the sauce will thicken.
  • Add the cream cheese and stir to melt in the sauce. Add the mozzarella and cheddar cheeses and stir to melt and incorporate. Sauce should be smooth.
  • Pour cheese sauce over pasta and bacon and stir to mix in completely. Top with breadcrumb mixture and bake uncovered for 20 minutes until top is golden brown and crunchy. This should be enough for 4 large servings or 6 as a side.

1 lb. bacon
2 c. macaroni
2 c. milk
2 c. shredded cheddar cheese (reserve ½ c. of this to top your dish with)
1 c. processed American cheese
2 Tbsp. Country Crock spread
2 Tbsp. flour

Steps:

  • Preheat oven to 350F and begin boiling macaroni according to package instructions. Drain and set aside.
  • Cook bacon until chewy, drain from fat and set aside.
  • Heat milk and Country Crock spread in a saucepan on low heat until spread is melted.
  • Stir in flour, heating until the mixture begins to thicken. Stir frequently.
  • Once your milk mixture has thickened, melt your processed cheese into the mix. When that becomes a creamy sauce, add 1-1/2 c. shredded cheddar and stir until just melted. Stir in bacon.
  • Combine cheese and bacon mixture with drained macaroni and put into a 9x13 inch casserole dish. Top with reserved shredded cheddar cheese.
  • Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes.

Kosher salt
1 pound elbow macaroni
4 cups milk
2 or 3 sprigs thyme
4 cloves garlic, smashed and divided
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
5 1/2 cups shredded sharp white Cheddar
Freshly ground black pepper
1/4 cup chopped flat-leaf parsley
4 slices bacon, cut crosswise into thin strips
1 large onion, diced
2 garlic cloves, smashed
Leaves from 1/4 bunch fresh thyme

Steps:

  • Bring a pot of salted water to a boil over high heat. Add the macaroni and cook for 8 to 9 minutes, until al dente. Drain.
  • Preheat the oven to 400 degrees F.
  • In a small saucepan heat the milk with the thyme sprigs and 2 garlic cloves. Melt the butter in a large, deep skillet over medium-high heat. Whisk in the flour and cook for about 1 minute, stirring constantly, to keep lumps from forming. Strain the solids out of the milk and whisk it into the butter and flour mixture. Continue to whisk vigorously, and cook until the mixture is nice and smooth. Stir in the 4 cups of the cheese and continue to cook and stir to melt the cheese. Season with salt and pepper. Add the cooked macaroni and the parsley and fold that all in to coat the macaroni with the cheese mixture. Scrape into a 3-quart baking dish and sprinkle with the remaining 1 1/2 cups cheese. Bake for 30 minutes, or until hot and bubbly.
  • While that bakes, heat a saute pan. Add the bacon, render the fat and cook until crispy. Add onion, garlic and thyme leaves and cook for about 5 minutes to soften the onion. Season with salt and pepper.
  • To serve, scatter the bacon mixture over the mac and cheese. Use a big spoon to scoop out servings, making sure you get some of the smoking bacon mixture on each spoonful.

1/4 cup panko bread crumbs

Steps:

  • Heat oven to 400ºF.
  • Combine cheeses. Bring 1-1/2 cups milk just to boil in medium saucepan on medium heat. Whisk flour and remaining milk in small bowl until blended; gradually whisk into heated milk. Cook 2 to 3 min. or until thickened, stirring constantly. Remove from heat.
  • Add 1-1/2 cups cheese mixture; stir until melted. Stir in pasta, macaroni and bacon.
  • Spoon into 8-inch square baking dish sprayed with cooking spray; top with remaining cheese mixture and bread crumbs.
  • Bake 12 to 15 min. or until macaroni mixture is heated through and bread crumbs are lightly browned.

3 cups macaroni noodles, uncooked
1 cup shredded cheddar cheese
1 cup v 8 vegetable cocktail
bacon, sliced, raw
salt
pepper
milk (if necessary)

Steps:

  • Cook noodles as directed on package, drain.
  • Add shredded cheese to cooked noodles while still hot and mix together.
  • Add v8.
  • Add enough milk so there is juice on the bottom of casserole dish, enough that it doesn't dry out, so the milk may not be necessary.
  • Add salt and pepper to taste.
  • Cover casserole with uncooked bacon slices.
  • Bake uncovered at 350 degrees Fahrenheit for 45 minutes to an hour. Bacon needs to be cooked on top.
