OVEN STEAK
Here's a fast, fuss-free way to cook the perfect steak-no smoky stovetop cooking necessary. The secret to getting a nice sear is to preheat the skillet in the oven. When the meat hits the hot surface, it creates a delectable crust.

Yield 2 steaks

Steps:
- Sprinkle both sides of the steaks all over with 1 teaspoon salt and 1/4 teaspoon pepper, then let sit out at room temperature for 30 minutes.
- Meanwhile, position a rack in the center of the oven and place a 12-inch cast-iron skillet on the rack. Preheat the oven to 450 degrees F.
- Carefully remove the hot skillet from the oven and add the steaks, making sure they are spaced apart, so they don't steam. Top each steak with 1 sprig of thyme, one-half sprig of rosemary and 1 tablespoon cold butter. Return the skillet to the oven and cook until the undersides of steaks are well browned, about 4 minutes.
- Carefully remove the skillet from the oven and flip the steaks using tongs, then continue to cook until desired doneness, about 2 minutes more for medium-rare and 3 minutes more for medium. Remove the steaks from the skillet and let rest 5 to 10 minutes before slicing and serving.
BACON STEAK WITH CARAMELIZED BUTTER
Steps:
- Wrap 1 slice of bacon around the edge of each steak, and secure with a wooden pick.
- In a medium skillet, heat oil over medium-high heat. Cook steaks for 4 to 6 minutes per side, or until steaks reach desired degree of doneness.
- In a small bowl, combine brown sugar, butter, and chipotle mustard. Spread on steaks, and cook briefly to melt sauce. Serve immediately.
- Note: Remove wooden picks from steaks before serving.
GRANDMA'S BACON FAT CORNBREAD
When you cook bacon or chicken, the rendered fat left behind in the pan is loaded with flavor so don't throw it out. Use it to add complexity to dishes like this cornbread. To save fat, let it cool slightly, then strain into an airtight container and refrigerate.

Steps:
- Preheat the oven to 375 degrees F. Whisk the cornmeal, sugar, baking powder, salt and baking soda together in a large bowl. Whisk the buttermilk and eggs together in a medium bowl. Fold the wet ingredients into the cornmeal mixture until just combined; set aside.
- Heat a 10-inch cast-iron skillet over high heat. When the skillet is smoking-hot, turn off the heat and add the fat, carefully stirring it around the pan as it melts. Pour the melted fat into the cornmeal batter and stir to combine. (Do not wipe out the skillet.) Pour the cornmeal mixture into the hot skillet (batter will sizzle) and bake until the edges are golden brown and the center bounces back when pressed with a finger, 18 to 20 minutes. Serve warm or at room temperature.

- Spread It on Your Toast. We said "anywhere you'd use butter," and toast happens to be right at the top of that list. Try it on a crusty sourdough, or for a real revelation, something sweeter, like cinnamon raisin bread.
- Drizzle It on Your Popcorn. This, too, will be revelatory. You can skip chilling the bacon fat and drizzle it straight from the bacon pan to the popcorn.
- Spread It on Corn on the Cob. There is nothing like an ear of sweet corn, roasted on a charcoal grill until moderately caramelized, then brushed with bacon butter and sprinkled with salt, pepper, and maybe a dash of garlic powder.
- Serve It Atop a Grilled Steak. The French have been serving grilled steak topped with a pat of butter since, roughly, the beginning of food. And the only way to improve on that is substituting bacon butter for ordinary butter.
- Cook Your Eggs in It. Bacon and eggs—only the most famous food duo ever. You'll notice that bacon fat doesn't sizzle in the pan the way butter does. That's because butter is about 15 percent water, whereas bacon fat is pure fat.
