Chicken and bacon salad image

This salad is really easy, but packed with tasty flavor, and easy to add more to as the mood suits.

Number Of Ingredients 7

6 leaves romaine (approx)
3 1/2 oz chicken tenders (95g, 1-2 pieces, approx weight (or thigh))
3 slices smoked bacon (2 1/2 oz/75g approx (streaky))
2 tbsp extra virgin olive oil
1 tbsp lemon juice (or wine vinegar)
1 tsp Dijon mustard (or grain mustard)
2 tsp honey

Steps:

  • Warm a small-medium skillet over a medium-high heat. When it's warm add the bacon and cook until gently brown and ideally crisp on both sides.
  • Remove the bacon from the pan and set aside. Add the chicken to the pan and cook a few minutes on both sides until cooked through.
  • Thinly slice the romaine and cut larger pieces in half (eg at top of leaves). Place all of the dressing ingredients (oil, lemon, mustard and honey) in a small bowl or jar and whisk/shake to combine. You can do these as the chicken and bacon cooks.
  • Once the chicken is cooked through, remove from pan and slice both the chicken and bacon into small bite-sized pieces. Add both to the sliced romaine, drizzle over the dressing then toss to mix. Serve, ideally with meats still warm or at room temperature.

1 package (22 ounces) frozen grilled chicken breast strips
1 cup crumbled blue cheese
3 tablespoons white wine vinegar
1 tablespoon water
1/8 teaspoon coarsely ground pepper
1/4 cup canola oil
8 cups chopped romaine
3 medium tomatoes, chopped
6 bacon strips, cooked and crumbled

Steps:

  • Heat chicken according to package directions. Cool slightly; coarsely chop chicken., For dressing, place cheese, vinegar, water and pepper in a small food processor; cover and process until smooth. While processing, gradually add oil in a steady stream., In a large bowl, combine romaine, chicken, tomatoes and bacon. Serve with dressing.

XO sauce is a funky chile and pork sauce that adds a wonderful depth of flavor to Chinese dishes, but it takes time and lots of ingredients to make at home. This is a great little shortcut, using a jar of ready-made bacon jam (easily available online and in supermarkets) and adding a twist with soy sauce, fish sauce and rice vinegar.

350 grams (12 ounces) red cabbage (about 1/3), finely shredded
1/2 Chinese cabbage, shredded
1 large carrot (150grams/5 ounces), peeled and julienned or shredded
Olive oil, for cooking
4 boneless, skinless chicken thighs
One 100-gram (3 1/2-ounce) jar bacon jam
2 teaspoons fish sauce
1 teaspoon reduced salt soy sauce
2 teaspoons rice vinegar
1 bird's-eye chile, finely chopped
2 tablespoons rice vinegar
1 tablespoon reduced salt soy sauce
1 1/2 tablespoons sesame oil

Steps:

  • Put the shredded cabbages and carrot into a salad bowl. Whisk all the ingredients for the dressing together in a small bowl, pour over the salad and toss to combine. Set aside to soften and macerate.
  • Heat the oil in a frying pan. Season the chicken and fry over a medium heat for 3 to 4 minutes on each side until just cooked. Set aside to rest.
  • Meanwhile, in a small saucepan warm the bacon jam with the fish sauce, soy sauce, rice vinegar and chile.
  • Chop the chicken and add to the salad with the warm bacon jam. Toss to combine before serving.

225g bag ready-to-eat Caesar salad (which includes croûtons, dressing)
1 ripe avocado
2 cooked chicken breasts , any skin and bones removed

Steps:

  • Stir fry the bacon in a frying pan for 2-3 minutes on each side. Remove, then sprinkle the croûtons into the fat in the pan and toss over a medium heat for a minute or two to give them flavour and crisp them up.
  • Divide the leaves between 2 plates. Halve the avocado and dig out the stone; peel and cut into chunks and scatter over the leaves. Tear the chicken into pieces on top. Finally, snap the bacon into chunky pieces over the chicken and top with the croûtons.
  • Drizzle the dressing over the whole salad and finish with a good dusting of parmesan and a grind of pepper.

3 cups cooked diced chicken
4 slices bacon, cooked and crumbled
3/4 cup mayonnaise
1 tablespoon parsley, fresh
2 tablespoons finely minced green onions
1 teaspoon lemon juice
1/4 teaspoon ground cumin (or curry powder)
1 dash Worcestershire sauce
salt and pepper, to taste

Steps:

  • Combine chicken and bacon.
  • In a small bowl, whisk together remaining ingredients to make the dressing. Chill for 20 minutes.
  • Combine dressing with chicken mixture. Add the dressing slowly to make the desired consistency.
  • Chill and stir again before serving.

100g fresh or frozen pea
1 large avocado , cut into small chunks
100g roasted chicken , shredded
1 celery heart, stalks removed, thinly sliced, leaves reserved
2 tsp chopped tarragon
5 spring onions , thinly sliced
2 tbsp extra-virgin olive oil
2 tbsp white balsamic or white wine vinegar
1 tbsp Dijon mustard
pinch of sugar

Steps:

  • Heat a non-stick frying pan over a medium-high heat until very hot. Add the bacon and cook until golden and crisp. Remove and drain on kitchen paper until it's crisp enough to crumble easily.
  • To make the dressing, mix all the ingredients with a pinch of sea salt in a bowl. Blanch the peas in boiling salted water for 30 secs. Drain, running under cold water for a few mins, and set aside.
  • Put the avocado, chicken, celery slices and leaves, tarragon, spring onions, peas, and bacon in a large bowl. Pour over the dressing and gently toss to combine.
