BACON CHEESEBURGER LASAGNA

2 tablespoons extra virgin olive oil
2 cups onions, diced
2 tablespoons garlic, minced
2 pounds 80/20 ground beef (don't worry, fat will be drained off after cooking)
1 cup ketchup
2 tablespoons spicy brown mustard (we use Gulden's)
1 pound bacon
1 pound lasagna noodles (20 strips)
2 pounds whole milk ricotta cheese
2 whole eggs, beaten
¼ cup chopped fresh flat leaf parsley
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
4 ounces Monterey Jack cheese, shredded
1 pound sharp white cheddar cheese, shredded
½ pound white American sliced cheese (use real American cheese and not the brands that say "cheese food")
2 cups tomato sauce
Diced dill pickles
Diced fresh tomatoes
Diced red onion
Shredded iceberg lettuce

Steps:

  • In a medium to large skillet over medium, heat olive oil then add onions and garlic and cook for three minutes.
  • Add ground beef and cook until no longer pink. Remove from heat and pour into a strainer and strain off all fat and liquid.
  • Place the meat back in the pan and back on burner and add ketchup and mustard and cook for five minutes on medium heat. Set aside.
  • Cook bacon to crisp, drain on paper towels and crumble or chop. Set aside. Dispose of bacon fat.
  • Heat a large pot of water to a boil and once boiling, add a little salt then add all of the lasagna noodles. Cook to a few minutes less than fully cooked, still chewy. Drain and run under cold water. Set aside.
  • In a large bowl, mix ricotta cheese, eggs, cooked crumbled bacon, chopped parsley, salt, pepper and the shredded jack cheese. Set aside.
  • Preheat oven to 350 degrees F.
  • Spray a 9X13X3-inch casserole pan with kitchen pan spray.
  • Spread 2/3 cup of tomato sauce on bottom then lay out four lasagna noodles overlapping to fit.
  • Top with 1/3 of the ricotta mixture, spreading evenly.
  • Top that with one half of the American cheese slices.
  • Layer on four more lasagna noodles.
  • Spread half the meat mixture evenly and sprinkle on half of the shredded cheddar cheese.
  • Spread another 2/3 cup of tomato sauce over the cheese and layer on four more noodles.
  • Spread another one third ricotta mixture over the noodles and layer the second half of the American cheese.
  • Top the American with four more lasagna noodles, the rest of the meat mixture and the rest of the ricotta mixture.
  • Finally, top with the remaining four lasagna noodles, the remaining tomato sauce and the remaining shredded cheddar cheese.
  • Bake uncovered for one hour.
  • Remove from the oven, cover and let rest 20 minutes to set up.
  • Cut 4X3 into 12 pieces and serve with lettuce, tomato, onion and pickle over each portion.

2 medium onions, chopped (1 cup)
1/4 teaspoon salt
1/8 teaspoon pepper
1 can (28 oz) chunky tomato sauce
1 cup water
1 egg
1 container (15 oz) ricotta cheese
1 cup shredded Swiss cheese (4 oz)
1/4 cup chopped fresh parsley
8 slices bacon, crisply cooked, crumbled (1/2 cup)
12 uncooked lasagna noodles
2 cups shredded Cheddar cheese (8 oz)

Steps:

  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 12-inch skillet, cook beef, onions, salt and pepper over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is brown; drain. Stir in tomato sauce and water. Heat to boiling; reduce heat to medium-low. Simmer uncovered 10 minutes.
  • In medium bowl, beat egg with fork. Stir in ricotta cheese, Swiss cheese, parsley and 1/4 cup of the bacon.
  • Spread about 1 cup of the beef mixture in baking dish. Top with 4 uncooked noodles. Spread half of the ricotta mixture, 2 cups beef mixture and 3/4 cup of the Cheddar cheese over noodles. Repeat layers once, starting with 4 noodles. Top with remaining noodles, beef mixture, Cheddar cheese and bacon. Spray 15-inch sheet of foil with cooking spray. Cover lasagna with foil, sprayed side down. Refrigerate at least 2 hours but no longer than 24 hours.
  • Heat oven to 350°F. Bake covered 45 minutes. Uncover and bake about 30 minutes longer or until bubbly and golden brown. Cover and let stand 10 minutes before cutting.

One 12-ounce package thick-cut bacon
4 burger buns
1 1/2 pounds ground beef (preferably 80/20)
1 tablespoon Worcestershire sauce
Kosher salt and freshly ground black pepper
Vegetable oil, for oiling grill grates
4 slices (1/4 pound) American cheese
1/2 cup store-bought ranch dressing
4 leaves Bibb lettuce
2 Roma tomatoes, sliced
1 small red onion, thinly sliced

Steps:

  • Put the bacon in a large nonstick saute pan over medium heat. Cook just until the fat is rendered out, 5 to 7 minutes. (The bacon should not brown at all.) Remove the bacon from the pan and place in the bowl of a small food processor. There should be about 2 tablespoons of bacon fat that has collected in the pan.
  • Place the buns into the warm bacon fat, cut-side down. Toast the buns they are until golden brown around the edges, about 2 minutes. Set aside for burger assembly.
  • Pulse the par-cooked bacon in the food processor until it is coarsely ground, 30 seconds to 1 minute. Transfer the bacon to a large mixing bowl. Add the ground beef, Worcestershire sauce, 1/2 teaspoon salt and 1/2 teaspoon pepper. Use your hand to gently work the bacon and seasonings into the ground beef. Divide the meat into 4 portions (6 to 7 ounces each). Loosely pack the meat into 4 thick patties, using your thumb to create a shallow dimple in the center of each. Sprinkle the outside of each patty with salt and pepper as desired.
  • Preheat the grill and generously oil the grill grates. Place the patties on the grill and cook to the desired degree of doneness, 3 to 5 minutes on each side. Top each patty with a slice of American cheese and cover the grill to allow the cheese to melt, 30 seconds.
  • Assemble the burgers and top with ranch, lettuce, tomato slices and red onion. Serve immediately.

1/4 cup mayonnaise
2 tablespoons ketchup
2 tablespoons yellow mustard
2 tablespoons pickle relish
1 tablespoon apple cider vinegar
8 slices thick-cut bacon
4 sesame seed hamburger buns, split
2 pounds ground beef (80-percent lean)
Kosher salt
4 thin slices sharp white Cheddar
4 thin slices red onion
8 thin slices tomato
1/4 head iceberg lettuce, shredded

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the mayonnaise, ketchup, mustard, relish and vinegar in a small bowl; set aside.
  • Working in batches if necessary, add the bacon to a large cast-iron skillet over medium heat. Cook, flipping halfway through, until crisp and golden, about 10 minutes. Transfer the bacon to a nonstick baking sheet. Discard the bacon fat (or save for another use) and wipe the skillet clean but do not wash. Heat over medium-high heat until very hot, about 5 minutes.
  • Add the buns split-side up to the baking sheet with the bacon and bake until the buns are toasted, about 5 minutes.
  • Loosely form the beef into 4 balls. Add one ball of beef to the skillet and press firmly to flatten with a large flat metal spatula for 10 seconds, then gently remove the spatula. Sprinkle the patty generously with salt; repeat with the remaining beef balls, cooking in batches if necessary. Let cook, undisturbed, until well browned on the bottoms, 2 to 3 minutes. Steps:

  • Heat oven to 375°F. In 3-quart saucepan, cook ground beef over medium-high heat, stirring frequently, until thoroughly cooked; remove from heat and drain. Stir in tomato sauce, ketchup, water and soup mix.

1 pound sliced bacon, diced
5 pounds ground beef chuck
1 large onion, chopped
¼ cup steak sauce
salt and pepper to taste
1 pound American cheese slices

Steps:

  • Preheat a grill for high heat.
  • Place bacon in a large skillet over medium heat. Fry, stirring occasionally. When the bacon is almost done, add the onion. Cook until the bacon is crisp, and the onion is tender. Remove onion and bacon from the pan with a slotted spoon, and transfer to a food processor. Pulse a couple of times to chop finely. Do not puree. Pour into a large bowl, and mix with steak sauce and ground chuck using your hands. Form into 16 patties.
  • Place patties on the grill, and cook for 5 minutes per side, or until well done. Place a slice of cheese on top of each one during the last minute.

This freezable, family-friendly recipe is economical and has a wonderful comfort-food feel about it

3 large onions , halved and thinly sliced
3 tbsp olive oil
1 tsp dried oregano
300g pack lean smoked back bacon , chopped
2 x 400g cans chopped tomatoes in rich juice
20 basil leaves , roughly torn, plus extra to serve if you like
250g pack fresh egg lasagne (check pack for cooking instructions)
600ml milk
50g each butter and plain flour
generous grating fresh nutmeg
50g grated parmesan

Steps:

  • Fry the onions in the oil for about 15 mins until golden. Add the oregano and bacon and fry for 5 mins more, stirring frequently. Tip in the tomatoes, season and bubble uncovered for 5 mins. Remove from the heat and stir in the basil.
  • Meanwhile, make the white sauce. Pour the milk into a pan and tip in the butter and flour. Whisk continuously over a moderate heat to incorporate the flour, then simmer, stirring until thickened. Season with salt, pepper and nutmeg.
  • Spoon a third of the tomato sauce on the base of a lasagne dish. Top with a third of the lasagne sheets. Then top with a third sauce, a third lasagne, the last of the tomato sauce and finally the last sheets of lasagne. Pour over the white sauce and scatter with the cheese and an extra grating of nutmeg. Chill. If eating straight away, bake at 190C/170C fan/gas 5 for 40 mins until golden and bubbling. Scatter with basil, if you like, and serve with a salad and garlic bread.
  • To freeze, cool completely, then wrap in cling film, then foil. Will store for 3 months. To serve, thaw for 6 hrs in a cool place. Unwrap and bake at 190C/170C fan/gas 5 for 50-60 mins until thoroughly heated through.

2 pounds lean ground beef (90% lean)
2 medium onions, chopped
1-1/2 pounds bacon strips, cooked and crumbled

2 cans (14-1/2 ounces each) diced tomatoes, undrained
2 tablespoons sugar
1 teaspoon salt
8 cups shredded Colby-Monterey Jack cheese

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions for al dente; drain., In a 6-qt. stockpot, cook beef and onions over medium-high heat until beef is no longer pink, breaking up beef into crumbles, 10-12 minutes; drain. Stir in bacon, tomato sauce, tomatoes, sugar and salt; heat through., Spread 1 cup sauce into each of two greased 13x9-in. baking dishes. Layer each with four noodles, overlapping as needed, 1-2/3 cups sauce and 1-1/3 cups cheese. Repeat layers twice., Bake, covered, 40 minutes. Uncover; bake until bubbly, 5-10 minutes longer. 2 medium onions, chopped (1 cup)
1/4 teaspoon salt
1/8 teaspoon pepper
1 (28 ounce) can chunky tomato sauce
1 cup water
1 egg
1 (15 ounce) container ricotta cheese
1 cup shredded swiss cheese (4 oz)
1/4 cup chopped fresh parsley
8 slices bacon, crisply cooked, crumbled (1/2 cup)
12 uncooked lasagna noodles
2 cups shredded cheddar cheese (8 oz)

Steps:

  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 12-inch skillet, cook beef, onions, salt and pepper over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is brown; drain. Stir in tomato sauce and water. Heat to boiling; reduce heat to medium-low. Simmer uncovered 10 minutes.
  • In medium bowl, beat egg with fork. Stir in ricotta cheese, Swiss cheese, parsley and 1/4 cup of the bacon.
  • Spread about 1 cup of the beef mixture in baking dish. Top with 4 uncooked noodles. Spread half of the ricotta mixture, 2 cups beef mixture and 3/4 cup of the Cheddar cheese over noodles. Repeat layers once, starting with 4 noodles. Top with remaining noodles, beef mixture, Cheddar cheese and bacon. Spray 15-inch sheet of foil with cooking spray. Cover lasagna with foil, sprayed side down. Refrigerate at least 2 hours but no longer than 24 hours.
  • Heat oven to 350°F Bake covered 45 minutes. Uncover and bake about 30 minutes longer or until bubbly and golden brown. Cover and let stand 10 minutes before cutting.

1 medium yellow onion, chopped
kosher salt
Freshly ground black pepper
2 cloves garlic
1 lb. ground beef
1 tbsp. tomato paste
2 tsp. Worcestershire sauce
2 tsp. yellow mustard
2 15-oz. cans tomato sauce
1 16-oz. container whole milk ricotta
1 large egg
1 tsp. garlic powder
2 1/2 c. shredded Cheddar
2 1/2 c. Shredded Monterey Jack
1/3 c. chopped tomatoes, for garnish
1/4 c. chopped pickle chips, for garnish
1 green onion, chopped
Sesame seeds, for garnish

Steps:

  • Preheat oven to 375°.
  • In a large pot of salted boiling water, cook noodles according to package directions until al dente. Drain and toss with a bit of olive oil to prevent noodles from sticking.
  • In a large skillet over medium-high heat, heat olive oil. Add onion, season with salt and pepper, and cook until soft, 5 minutes. Stir in garlic and cook until fragrant, 1 minute more.
  • Add ground beef to skillet and season generously with more salt and pepper. Cook until browned, about 8 minutes, then drain the fat. Return to pan over medium heat and stir in tomato paste, Worcestershire sauce, and mustard. Pour in tomato sauce, season with salt and pepper, and simmer 5 minutes. Set aside.
  • Make ricotta mixture: In a medium bowl, stir together the ricotta and egg and season with garlic powder, salt, and pepper.
  • Assemble lasagna: In a large baking dish, spread a thin layer of meat sauce. Top with a layer of noodles, a big spoonful of ricotta mixture, another spoonful of meat sauce, and a sprinkle of cheeses. Repeat 3 more times, ending with cheese.

12 hard-boiled large eggs, sliced
2 cups shredded Swiss cheese
1/3 cup grated Parmesan cheese
2 tablespoons minced fresh parsley, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook bacon until crisp. Remove with a slotted spoon to paper towels. Drain, reserving 1/3 cup drippings. In the drippings, saute onion until tender. Stir in the flour, salt and pepper until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. , Spread 1/2 cup sauce in a greased 13x9-in. baking dish. Layer with 4 noodles and a third each of the eggs, bacon, Swiss cheese and remaining sauce. Repeat layers twice. 1/3 cup milk
1/2 cup chopped CLAUSSEN Kosher Dill Pickles
1 pkg. (8 oz.) KRAFT Mozzarella & Cheddar Cheese Expertly Paired for Mac 'n Cheese & Casseroles, divided
9 lasagna noodles, cooked

Steps:

  • Heat oven to 375°F.
  • Brown meat with onions in large nonstick skillet on medium heat. Add tomato sauce, ketchup and mustard; mix well. Cook 5 min., stirring frequently. Remove from heat.
  • Mix cream cheese and milk in medium bowl until blended. Add pickles and 1 cup shredded cheese; mix well.
  • Spread 1 cup meat mixture onto bottom of 13x9-inch baking dish sprayed with cooking spray; cover with 3 noodles and half the cream cheese mixture. Repeat layers. Top with remaining noodles, meat mixture and shredded cheese. Cover.

12 lasagna noodles, cooked and drained
4 cups shredded colby cheese

Steps:

  • In a Dutch oven, cook beef and onions over medium heat until meat is no longer pink; drain.
  • Stir in the bacon, tomato sauce, tomatoes, sugar and salt; cook until heated through.
  • Spread 1/2 cup meat sauce in a greased 13-inch x 9-inch x 2-inch baking dish. Layer four noodles, some of the meat sauce and some of the cheese in dish. Repeat layers twice.

2 tablespoons dry onion soup mix
2 eggs
2 cups cottage cheese
1/2 cup grated parmesan cheese
8 uncooked lasagna noodles
1 cup shredded cheddar cheese
1 cup shredded colby-monterey jack cheese

Steps:

  • Heat oven to 375'. In a 3-quart saucepan, cook ground beef over medium-high heat, stirring frequently, until thoroughly cooked; remove from heat and drain. Stir in the tomato sauce, ketchup, water and soup mix.
  • In a medium bowl, beat eggs well. Stir in the cottage cheese and Parmesan cheese.
  • Spoon 1-1/2 cups of meat sauce in bottom of a ungreased 13x9 inch glass baking dish. Top with 4 uncooked noodles(noodles will probably not reach the ends of the dish). Top with half of cottage cheese mixture and half of remaining meat sauce.
  • Repeat layers with remaining lasagna noodles, cottage cheese mixture and meat sauce. Sprinkle shredded cheeses' over top. Cover loosely with aluminum foil that has been sprayed with cooking spray(sprayed side down). Or use Reynolds non-stick foil.
  • Bake 1 hour or until lasagna is bubbly and noodles can be easily pierced with tip of sharp knife. Uncover dish; bake 10-15 minutes longer or until cheese on top is melted. Let stand 15 minutes before serving.
