STEAK SANDWICHES WITH BACON AND BLUE CHEESE

Steps:
- Put the contents of the salad kit in a medium bowl and toss to coat with the dressing; set aside.
- Heat the vegetable oil in a large cast-iron skillet over medium-high heat. Combine 1 1/2 teaspoons black pepper and the red pepper flakes in a small bowl. Season the steaks with salt on both sides and sprinkle with the pepper mixture, pressing to adhere. Add the steaks to the skillet and cook 2 to 3 minutes per side for medium rare. Remove to a cutting board and let rest 5 minutes, then thinly slice against the grain.
- Divide the steak between the rolls and top with the red onion, tomato and salad mixture.

- 1 Mix bacon, American cheese and sliced green onions in a bowl. Set aside. 2 Place white bread and beef broth in a large mixing bowl. Work together until bread has absorbed all of broth and is soft. Add salt, pepper, ground beef and eggs, then blend together using your hands. Chill mixture well. 3 Divide meat mixture into 8 equal portions. Work each potion into a firm ball, and place between 2 pieces of plastic wrap. Using your hands, flatten ball out into an oval. Refrigerate until ready to cook. 4 Preheat oven to 350*F. In a large skillet on medium high heat, cook two or three steaks 3 minutes on each side. Remove and place on a foil-lined baking sheet. 5 Distribute cheese mixture evenly among cooked steaks. Place steaks in oven about 2 minutes to melt cheese topping.

BACON WRAPPED BEEF TENDERLOIN STEAKS WITH SPINACH AND CHEESE CAKES

- Defrost spinach in microwave. Wring spinach dry by nesting in kitchen towel and twisting towel over garbage bowl or sink until spinach has given off all of its liquid. Place spinach in a medium mixing bowl. Heat a nonstick skillet over medium heat, add oil and onion and saute the onion until soft, 5 minutes. Add onion to spinach in bowl and return pan to stove top. Turn off heat.
- Add remaining ingredients to spinach: bread crumbs, cheese, egg, nutmeg, salt and pepper. Combine mixture with a fork, then form into 3-inch patties. Set aside.
- Line bacon up on meat-safe cutting board a few inches apart. Preheat a second skillet over high heat. Reheat the spinach cakes skillet over medium high heat. Season steaks with salt and pepper and set on bacon slices in the center of each slice. Wrap bacon over steaks. Place seam side down in pan and cook 2 minutes on each side. Add 2 tablespoons oil to spinach cakes pan and set cakes in to cook. Work in 2 batches if necessary. Cook cakes 3 minutes on each side.
- Reduce heat to medium under steaks after the first 2 minutes on each side. Cook meat another 6 to 10 minutes, turning occasionally, for medium rare to medium well doneness.
- Remove meat from the pan and let it rest. Add 1 tablespoon of the butter and flour and cook together 1 minute. Whisk in wine and deglaze pan. Whisk in broth and thicken sauce 1 minute. Add remaining tablespoon butter and remove skillet from heat.
- Quarter tomatoes lengthwise.
- To serve, set the spinach cakes and steaks beside each other on 2/3 of serving plates and pour sauce evenly over steaks. Scatter a quartered tomato next to spinach cakes on each plate. Drizzle tomatoes with oil, season with salt and pepper and top with chopped chives. Serve plates immediately.
BACON CHEESEBURGERS
This takes a little more effort than the average cheeseburger, but is well worth it! Serve on buns with your favorite condiments.

- Preheat a grill for high heat.
- Place bacon in a large skillet over medium heat. Fry, stirring occasionally. When the bacon is almost done, add the onion. Cook until the bacon is crisp, and the onion is tender. Remove onion and bacon from the pan with a slotted spoon, and transfer to a food processor. Pulse a couple of times to chop finely. Do not puree. Pour into a large bowl, and mix with steak sauce and ground chuck using your hands. Form into 16 patties.
- Place patties on the grill, and cook for 5 minutes per side, or until well done. Place a slice of cheese on top of each one during the last minute.

This burger came to me in a daydream and I just happened to have enough ingredients to make it work. It is incredibly juicy and the flavors harmonize very well together. If you enjoy a good pub-style burger, this one's definitely for you! Add whatever condiments you prefer.

- Place bacon in a large skillet and cook over medium-low heat, turning occasionally, until evenly browned, about 5 minutes. Drain bacon bits on paper towels.
- Preheat an outdoor grill for medium heat, 300 degrees F (150 degrees C) to 325 degrees F (165 degrees Fahrenheit). Lightly oil the grate.
- Separate ground beef into 1/4-pound portions. Mix bacon and green onions in a bowl and press onto either side of ground beef, working it in until mixture has an even consistency. Shape mixture into patties. Mix garlic salt and ground black pepper in a bowl and rub on both sides of the patties. Press a small indentation into the center of each patty.
- Place burgers on the preheated grill and pour 1/2 tablespoon of steak sauce into each indentation. Grill burgers for 5 minutes. Flip and add 1/2 tablespoon of steak sauce to the center of each burger. Top each with a slice of Cheddar cheese and grill until cheese is melted and burger has reached desired degree of doneness, about 4 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Meanwhile, begin toasting hamburger buns on the grill rack.
- Remove burgers and buns from the grill once the cheese has melted. Assemble burgers.

- In a bowl combine the Greek yogurt, dijon mustard, and horseradish sauce.
- Spread it over the tortillas and sprinkle one half cup of mozzarella cheese over the tortillas.
- Saute your green peppers until they are soft and the edges begin to golden.
- Cook your steak till it's desired doneness and sprinkle steak seasoning over it.
- Add a few peppers to each wrap, shredded steak, and bacon crumbles.
- Wrap up the tortilla and heat up both sides of the wrap, with a pan at medium high heat, over the stove, sprayed with nonstick cooking spray.

- Preheat broiler or prepare barbecue.
- Season steak with garlic salt and pepper.
- Score steak diagonally twice, reversing direction creating "x"s or crisscross pattern.
- Place bacon lengthwise over steak and sprinkle with parsley.
- Roll steak lengthwise, securing with toothpicks at 1-inch intervals.
- Broil or grill, turning frequently until browned on all sides and cooked to degree of doneness desired (20 minutes for med rare).
