These yummy potatoes are like some I enjoyed in a pub once, with a nice cold beer. Top with caramelized onions, sour cream, chili, or whatever you have on hand. Yum!

- Preheat oven to 375 degrees F (190 degrees C).
- Toss potatoes with olive oil, salt, and pepper in a bowl until coated. Arrange potatoes in 1 layer in an oven-proof skillet.
- Cook potatoes over medium-high heat until golden brown, about 4 minutes. Flip and continue cooking until golden brown on other side, about 4 more minutes.
- Bake potatoes in the preheated oven until tender, about 25 minutes.
- Place turkey bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels and chop.
- Sprinkle bacon, Cheddar-Monterey Jack cheese, and green onions over potatoes. Return to oven until cheese is melted, about 3 minutes.

CHEESE AND BACON POTATO BAKE
I bought 2 jars of white cheese sauce to make lasagne with the other day and had enough left over to try something without wasting the rest of the sauce. I made this and it worked. It's super easy and ready in 45 mins. You can add other ingredients such as onion, leek and herbs if you wish but I just used bacon this time.

- Preheat oven to 180 degrees (fan)
- Peel your potatoes and slice thinly (about 1/2 cm thick)
- Cook your bacon in a frying pan to your preference.
- Layer your potatoes in a oven proof dish and cover with half of the cheese sauce, if you think there isn't enough to cover you can add a little whole milk and stir to thin it out.
- Cut up 2 bacon rashers onto your first layer randomly placing on top of the potatoes. Repeat steps 4 and 5 once more.
- Place in the oven for 20 minutes
- Remove from oven and sprinkle on the cheddar cheese and parmesan. Place back into the oven for a further 20 minutes.
- Remove from oven and serve.

- Preheat the oven to 425° and line a rimmed sheet pan with parchment paper.
- Slice the potatoes into 1/4" thick rings and add the sheet pan. Drizzle with 1 tablespoon of oil and sprinkle with 1 1/2 teaspoon salt and pepper. Toss the potatoes to evenly distribute the seasoning and lay out in a single layer on the sheet pan.
- Bake for 30-32 minutes, until the potatoes are golden brown across the tops. While the potatoes are baking, fry the bacon and make the cheese sauce.
- Add the diced bacon to a large pan over medium-high heat. Cook, stirring occasionally, until the bacon is crispy, 6-8 minutes. Set bacon aside on a plate lined with a paper towel.
- For the cheese sauce, add 1 tablespoon of oil to a saucepan over medium heat. Allow to come to temperature and sprinkle over the flour. Whisk about 1 minute. Do not allow the flour to brown.
- Begin adding the half-and-half one generous splash at a time, whisking well after each addition. Once all of the half-and-half has been added, allow the mixture to simmer 4-5 minutes, just until slightly thickened.
- Remove from the heat and stir in 1 cup of Cheddar cheese and a generous pinch of Kosher salt. Set aside.
- Remove the potatoes from the oven, drizzle with the cheese sauce, cheese curds (if using), the remaining 1/2 cup of Cheddar, and diced bacon.
- If desired, return to the oven for 4-5 minutes, just until the cheese curds have melted. Top with sliced green onions and sour cream (if using), serve, and enjoy!

- Fill a large pot halfway up with oil and heat to 365 degrees F. Cook the bacon in a large skillet, over medium heat, until crispy on both sides, about 5 to 8 minutes. Transfer onto paper towels to drain, and then roughly chop.
- Prepare the mashed potatoes according to package directions and then stir in half of the bacon, 2 tablespoons chopped chives, and half of the cheese. Let cool to room temperature.
- To shape the wontons, work with one wrapper at a time. Add about a teaspoon or two of the potato mixture in the center. Brush the edges with egg wash and then seal and crimp into a triangle. Fold 2 points together, brush with egg and pinch to seal. Continue shaping until all the filling has been used.
- Once vegetable oil is hot, carefully add a few of the wontons at a time and fry until golden brown, about 3 to 5 minutes. Transfer to a paper towel lined plate and continue frying the rest.
- To make the sauce, stir together the sour cream, garlic, salt, pepper and scallions. Set aside.
- Arrange the wontons onto a baking sheet, piling them up in the center. Sprinkle with the remaining cheese and bacon and bake in a 350 degree F oven for about 10 minutes, just to melt the cheese.
- Remove from the oven and sprinkle with remaining bacon and chives. Serve with scallion sour cream sauce on the side.

- Soak potato slices in a large bowl of cold water for as long as you have time for (20mins minimum). This is important to remove starch, which will result in the fries having a fluffier centre. Drain water away and thoroughly dry with a tea towel. This is really important to remove as much moisture as possible to help them crisp up.
- Whilst the spuds are soaking, in a medium sized pot or pan over medium heat melt 3 tbsp butter. Whisk in 3 tbsp flour until a paste forms then slowly add in 1/2 cup Guinness, whisking as you go to ensure no lumps form. Gradually pour in milk, again whisking as you go to ensure no lumps form. Once the sauce has thickened add Worcestershire sauce, hot sauce (optional) and salt & pepper to taste. Turn heat to low and start stirring in your cheese until thick and gloopy/cheesy. 4cups/400g will not only make the sauce more cheesy, but will make it slightly thicker. The sauce will thicken considerably as it rests.
- Add 3-4cups oil in a suitably sized pot or deep pan and heat to 180C/350F. Fry the potatoes in batches until deep golden on the outside and soft through the inside, around 10-15mins. Rest on wire rack to drain off oil. Sprinkle both sides with a good pinch of salt and pepper as they rest. Try to keep the oil at a steady temp throughout and bring it back to 180C/350F between batches.
- Heat enough oil to coat the base of a large frying pan until sizzling, but not smoking (again, around 180C/350F works great). Place in potatoes and fry until deep golden on the outside and soft through the inside, turning once. Rest on wire rack to drain off oil. Sprinkle both sides with a good pinch of salt and pepper as they rest.
