BACON CHEDDAR WAFFLES



Bacon Cheddar Waffles image

Loaded with bacon, sharp cheddar cheese and green onion, these bacon waffles don't even need maple syrup or butter to taste amazing.

2 cups all-purpose flour
2 tbsp sugar
1 tsp salt
1 1/2 tsp baking powder
3 eggs, yokes and whites separated
2 cups buttermilk
2 tbsp unsalted butter, melted
1 tbsp bacon fat
8 oz crumbled bacon
6 oz sharp cheddar cheese, shredded
5 scallions, diced
Non-stick cooking spray
Maple syrup for serving

Steps:

  • Preheat oven to 400°F. Line baking sheet with parchment paper. Place bacon on parchment sheet and bake for 20-25 minutes, or until crispy. Set on paper towel-lined plate and reserve bacon fat.
  • Reduce oven to 200°F. In a large bowl, combine the flour, sugar, salt and baking powder. In another bowl, whisk to combine the egg yolks, buttermilk, butter and bacon fat. Set aside.
  • In a medium bowl, use a hand mixer to whip the egg whites to soft peaks. Set aside.
  • Pour the egg yolk mixture into the dry ingredients and stir until almost combined. Add the bacon, cheese and scallions and fold in. Finally, gently fold in the egg whites until just combined.
  • Preheat a waffle iron and spray with non-stick cooking spray. Add 1 cup of waffle mixture and cook to waffle iron's instructions. (About 5 minutes for me). When waffle is done place on wire rack in oven to keep warm. Repeat with remaining batter. Serve with some more chopped scallions and maple syrup. Enjoy!

2 cups all-purpose flour ((10 oz by weight))
3/4 cup granulated sugar
1 tsp salt
1 tbsp baking powder
3 eggs (separated)
1.5 cups milk
1 cup unsalted butter (melted)
6 strips bacon (cooked and crumbled*)
2.5 oz grated cheddar cheese
3 scallions (chopped)

Steps:

  • Preheat your waffle iron. Mine only has one setting anyway, but you want the iron to be pretty hot.
  • Preheat the oven to 200 degrees F.
  • In a large bowl, whisk to combine the flour, sugar, salt and baking powder. Set aside.
  • In another bowl, whisk to combine the egg yolks, milk, and butter. Set aside.
  • In a large (and very clean) bowl, use a hand mixer to whip the egg whites to soft peaks.
  • Add the wet ingredients to the dry, and mix until they are almost combined. Add the egg whites, bacon, cheese, and scallions to the bowl, and gently fold them in until combined.
  • Portion the batter into your waffle iron (the amount will vary by waffle iron, but I use about one cup per waffle), and cook for approximately 5 minutes, until golden brown.
  • When the waffle has finished cooking, place directly on the wire rack in the oven, to let the steam escape. Finish cooking the remaining waffles, and enjoy!

Nonstick cooking spray
2 cups all-purpose flour
3 teaspoons baking powder
Kosher salt
2 large eggs, separated
1 1/2 cups milk
3 tablespoons unsalted butter, melted
6 slices bacon, cut in half
Maple syrup, for serving

Steps:

  • Spray a waffle iron with nonstick cooking spray and preheat it.
  • Sift together the flour, baking powder and 1/2 teaspoon salt in a medium bowl. Beat the egg whites in a second medium bowl until stiff.
  • Beat the egg yolks with the milk and butter in a large bowl. Add the flour mixture, stirring until just blended. Fold in the beaten egg whites.
  • Place 2 halves of a bacon slice in each waffle grid and close the cover. Cook for 1 minute and then add a scant 1/2 cup batter to each waffle grid. Bake until golden brown, about 5 minutes. Serve with maple syrup.

1 1/3 cups milk
2 tablespoons vegetable oil
1 egg
3/4 cup shredded sharp Cheddar cheese (3 oz)
1 cup crisply cooked and crumbled bacon (14 to 15 slices)
1/2 cup chopped apple
Warm maple syrup
Sliced green onions, if desired

Steps:

  • Heat waffle maker; lightly brush with vegetable oil, if necessary. In medium bowl, stir Bisquick™ mix, milk, oil and egg until mixed well. Mix in shredded cheese, 1/2 cup of the crumbled bacon and the chopped apple.
  • Pour 1/2 cup batter onto center of hot waffle maker. (Waffle makers vary in size; check manufacturer's directions for recommended amount of batter). Close lid of waffle maker. Bake according to manufacturer's directions or until steaming stops and waffle is golden brown; carefully remove waffle. Repeat with remaining batter.
  • Top each waffle with heaping tablespoonful bacon; serve warm with maple syrup. Garnish with sliced green onions.

1/4 teaspoon kosher salt
1 3/4 cups milk
1/2 cup vegetable oil
1/2 teaspoon vanilla extract
1/2 cup crumbled cooked bacon
1/2 cup shredded sharp Cheddar
Nonstick cooking spray, for the waffle iron
Butter, maple syrup and/or fried eggs with runny yolks, for serving

Steps:

  • Preheat a waffle iron.
  • In a small bowl, whisk the eggs until fluffy; reserve.
  • Next, in a large bowl, mix together the flour, baking powder, sugar and salt. In a third bowl, whisk together the milk, oil and vanilla extract. Add the wet ingredients into the dry ingredients and mix just until combined. Add the bacon, Cheddar and reserved whisked eggs and mix until combined.
