Steps:
- Combine hash browns, egg, baking powder and flour in a large bowl and stir to mix. Stir in bacon and cheese.
- Heat oil over medium high in a large frying pan until hot.
- Using a large scoop or 1/4 cup measuring cup, scoop mixture into frying pan.
- Flip pancakes over when the edges are set, about 5 minutes, and fry until browned.
- Serve warm with sour cream and chives.

- Cook bacon in a skillet over medium heat until crisp, 3 to 5 minutes. Transfer to a paper towel-lined plate to drain; let cool and crumble. Reserve bacon drippings in skillet.
- Combine crumbled bacon, potatoes, flour, eggs, garlic, thyme, salt, and black pepper in a large bowl.
- Pour vegetable oil about 1/4-inch deep into skillet with bacon drippings and place over medium heat; heat until the oil and bacon drippings shimmer.
- Gently drop potato mixture by heaping tablespoon into hot oil and flatten potatoes into small patties about 3 inches in diameter. Cook until browned, about 3 minutes on each side.

- Mix the mashed potatoes, flour, sugar, baking powder, salt, milk, butter, egg and sharp cheddar cheese together in a large bowl.
- Heat a large pan or skillet to medium-high heat and melt 2 Tablespoons of butter.Saute bacon and onions for 5-7 minutes until onions become translucent and bacon begins to crisp. Remove with a slotted spoon and let cool. Add to potato mixture
- Use the remainder of the butter and bacon grease to cook the pancakes. Scoop 1/4 cup batter per pancake into the pan..

- Cook bacon in a saute pan until crisp. Remove from pan, reserve the grease, and let bacon drain on paper towels. Crumble the bacon and set aside.
- In a large bowl whisk together the flour, baking powder, salt, and black pepper.
- In a separate bowl, whisk together the buttermilk, eggs, and melted butter. Add all of the wet ingredients into the bowl with the flour mixture all at once. Stir together just until combined. The batter will be lumpy. Place the bowl in the refrigerator for just about 5 minutes.
- Heat a large skillet over medium heat then add a few tablespoons of bacon grease. Once grease is hot, drop about 1/4 cup of batter per pancake into the skillet.
- Allow bubbles to form on top of the cakes and pop before flipping once to finish cooking on the other side.
- Top with shredded cheese, crumbled bacon, and real maple syrup or hot sauce.

Mmmmm... bacon! This is a recipe from Chef Michael Smith that someone posted on Facebook. Once I saw it, I knew I had to make it! One piece of advice - go light on the salt because the bacon and cheddar both have plenty.

- Preheat oven to 350 degrees.
- Mix the minced onions and garlic together.
- Get a skillet (all metal, no rubber or plastic handles) or pie dish.
- Coat the cooking area of the skillet with cooking spray.
- Cut the parchment paper into a circle that covers the cooking area of the skillet, and place it in side the skillet.
- Start lining the center of the skillet with a layer of bacon in a fan pattern, with one end of the bacon at the center and the other end hangs over the end of the skill. Each slice should overlap about a 3rd to half of the width of a bacon slice. Take care to stagger the bacon at the center so you don't end up with a very thick layer of bacon in the center of the pan.
- Slice your potatoes in about 1/4 inch thick slices.
- After the skillet is completely covered with bacon, start adding potato slices in layers inside the skillet on top of the bacon, creating a layer of potato on top of the bacon.
- After completely adding a layer of potato that covers the bottom of the skillet, sprinkle some pepper, onions/garlic mixture, and a generous portion of cheddar on top of each layer.
- Repeat the previous 2 steps until the potato & cheese layers are stacked about 1 inch above the top of the skillet.
- Fold all of the bacon stips on top of the stack of potato until the top layer is completely covered.
- Place a small, metal skillet or pot cover on top of the tart to hold the bacon in place during baking.
- Bake at 350 degrees for 2 hours and 30 minutes.
