Crispy bacon, runny egg, avocado, and white cheddar cheese sandwiched between buttery flakey toasted croissants.

2 croissants (toasted)
4 eggs
1/2 Avocado
4 bacon slices (cooked)
2 slices Tilamook White cheddar
Salt & pepper

Steps:

  • Fry the eggs in hot oil according to your liking. Season with salt and pepper.
  • Slice each croissant in half and toast on lowest heat. Add 1 slice of white cheddar on each bottom croissant half.
  • Add the bacon, eggs, and avocado on top of the cheese. Then place the top half on top.

4 freshly baked croissants
8 eggs
12 strips bacon, cooked
1 avocado, sliced thin
4 slices cheddar cheese

Steps:

  • In a griddle or frying pan, over medium heat, cook eggs over-easy.
  • Preheat oven to broil.
  • Cut croissants, and place the top and bottom of each croissant center-side up on a baking sheet.
  • Top the bottom of each croissant with two eggs, 3 strips of bacon, 1/4 the avocado slices, and one slice of cheddar cheese.
  • Broil the open-faced sandwiches, as well as the tops of each croissant, for 1-2 minutes until cheese is melted and the croissant starts to crisp slightly.
  • Remove from the oven, place the top of each croissant on each bottom, and serve warm.

8 slices bacon
4 scallions
8 slices bread (potato sandwich bread)
6 tablespoons unsalted butter (room temperature)
8 ounces cheddar cheese (sliced)

Steps:

  • Preheat oven to 375 degrees. Lay bacon in a single layer on a rimmed baking sheet and cook until crisp, about 15 to 20 minutes. Drain on paper towels. Cool and rinse the pan.
  • Line the baking sheet with foil. Trim the root ends of the scallions, halve lengthwise, and chop into about 1-inch pieces.
  • Lay out the bread on a work surface and butter 1 side of each piece. Put 4 slices of the bread, buttered side down, on the prepared baking sheet. Layer half of the cheese slices on the bread. Layer the bacon and scallions on top of the cheese and cover with the remaining cheese. Top with the remaining slices of bread buttered side up and bake until each bottom pieces of bread is golden brown, about 10 minutes. Flip the sandwiches and bake until the other side is golden brown and the cheese has melted, about 8 to 10 minutes more.
