BACON BUTTERSCOTCH COFFEE CAKE

Steps:
- Heat oven to 375°F. Spray 9-inch cake pan with cooking spray.
- Cook bacon in skillet until browned and fat is rendered, about 5 minutes. Remove bacon with slotted spoon, and place on paper towel to drain.
- In large bowl, mix 2 cups Bisquick mix, the granulated sugar and baking soda. Add buttermilk and egg, and mix until just combined. Fold in the butterscotch chips and cooked bacon.
- To make Streusel, in small bowl, mix 1/3 cup Bisquick mix and the brown sugar. Cut in cubed butter until roughly the size of small peas.
- Spread batter in cake pan. Sprinkle with streusel. Bake 22 to 25 minutes or until golden and toothpick inserted in center comes out clean. Cool completely, 45 to 60 minutes.
- To make Icing, mix powdered sugar and 2 tablespoons milk. Add additional milk if necessary. Drizzle over cooled coffee cake.

- Preheat an oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper. Whisk together the flour, baking powder, baking soda, and salt; set aside.
- Beat together the butter, brown sugar, and white sugar with an electric mixer until smooth. Add one egg; beat until blended into the butter mixture. Add the remaining egg, vanilla extract, and maple extract; beat until well blended and slightly fluffy. Stir in the flour mixture a little at a time, mixing just until combined. - Preheat Oven to 400 Degrees Fahrenheit
- In a bowl, place the flour, baking powder and salt. Mix until combined
- In a mixer bowl place the butter and brown sugar. Mix on medium speed for 3-4 minutes or until the mixture becomes creamy and fluffy. Scrape down the sides of the bowl with a spatula
- With the mixer running, add the eggs one at a time and the vanilla
- Slowly add the flour mixture. Scrape the sides of the bowl with a spatula
- Finally, add the butterscotch chips
- Remove from mixer and add the potato chips. Using a spatula, mix the chip in the cookie dough being careful not to crush the chips
- Using an ice cream scoop or spoon, place mounds of cookie dough onto a cookie sheet lined with parchment paper
- Top each cookie with crushed potato chips
- Bake the cookies for 7-10 minutes or until brown at the edges but still soft in the center
- Remove from oven and let them cool on a cooling rack
- Enjoy!

BACON-BUTTERSCOTCH CHIP COOKIES
After reading about 'Bacon Chocolate Chip Cookies', I thought that it sounded good and worth a try. Found a few recipes, but then I 'tweaked' a basic cookie dough recipe, as I was out of chocolate chips. I substituted butterscotch chips and they turned out to be very good. As for the bacon, I just used a low-sodium which I had on hand. If using regular bacon, you might want to omit the salt in the recipe.

- Preheat oven to 350ºF. Line a cookie sheet with Silpat (or other silicone mat), parchment paper will also work.
- Whisk together flour, baking soda and baking powder & salt, set aside.
- Using an electric mixer, beat the butter, brown & white sugar till smooth. Add 1 egg, beat till blended, then add the last egg, and vanilla extract.
- Slowly add the flour mixture, a little at a time, till it's mixed well. Stir in bacon and butterscotch chips.
- Drop by tablespoons onto cookie sheets.
- Bake in oven for about 10 - 12 minutes, or until the edges turn golden brown. Remove from oven, let cool for a few minutes on the sheet then move to a wire rack.
NATHAN'S PEANUT BUTTER BUTTERSCOTCH CHOCOLATE CHIP COOKIES

- In a large bowl or stand mixer, beat 1 cup butter for 2 minutes until smooth, scraping the sides and bottom a few times in between.
- Add 1 cup brown sugar and 3/4 cup white sugar. Beat for another 2 minutes, taking the time to scrape the bottom and sides of the bowl in between. Your butter and sugar should be light and fluffy with no chunks of butter.
- Add 1 cup creamy peanut butter and mix well.
- Add 2 eggs and 1 and 1/2 teaspoons vanilla. Beat well, scraping sides and bottom.
- Add 2 cups flour but don't mix it in yet (make sure you spoon and level your flour). Use a small spoon to stir in 2 teaspoons baking soda and 1 teaspoon kosher salt into the flour, then beat in gently. There should still be flour streaks.
- Chop one cup of the dark chocolate chips with a knife. Add to the dough. Add the other cup of dark chocolate chips, and most of the butterscotch chips. (Reserve a handful of the butterscotch chips if you would like to press them into the top of each cookie.)
- Cover the bowl and chill the dough in the fridge for 1-3 hours (or overnight). You can bake the cookies right away without chilling (I tried it) but they will bake a little more flat.
- When the dough is chilled, preheat the oven to 350 degrees F. Line 2 baking sheets with silicone baking mats or parchment paper.
- Use a 2-inch cookie scoop to shape the dough into balls. Place the cookies on the lined baking sheets with about 2 inches in between each one.
- Bake the cookies at 350 for 10-11 minutes until the centers are alllmost done being shiny. The edges should be firm and light brown. Do not over bake.
- Immediately after removing these cookies from the oven, use two spoons to push the edges of the cookie toward the center. This will give your cookies a more circular shape, make them thicker and chewier, and the centers even more fudgy. See this Chocolate Chip Cookies post for more details and photos.
- If you saved any dark or butterscotch chips to add to the top, press them in while the cookies are still very warm, within 1-3 minutes of taking them out of the oven.
- Let cool on the sheet for 5 minutes before removing to a cooling rack. You should definitely eat at least one of these warm. Or maybe 2 or 3.

- In a large mixing bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes on medium speed). Add vanilla extract and eggs and continue beating at high speed for about 5 minutes longer, occasionally scraping down the sides of the mixing bowl. Your dough should be noticeably lighter in color and very fluffy.
- In a medium bowl, mix together the flour, baking soda, cream of tartar, and salt.
