YUMMY BRUSSELS SPROUTS WITH BACON & ONION

Yummy Brussels Sprouts With Bacon & Onion image

I came up with this myself. Since brussels sprouts have a similar flavor to cabbage, I have adapted my cabbage recipe for them. My husband thought he did not like brussels sprouts until I made these. I usually have to do a double batch and we end up fighting over the leftovers!!!

Provided by JenJenMarie

Categories     Vegetable

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 6

1 (16 ounce) package frozen Brussels sprouts
4 slices of thick smoked bacon, cut into 1/2-inch pieces
1 small onion, diced
1/4 cup margarine
salt
pepper

Steps:

  • Cook brussels sprouts according to package. I steam mine in the microwave.
  • While sprouts are cooking, in a pot on the stove, cook your bacon and onion together. Cook until bacon and onion are thoroughly done.
  • Add brussels sprouts to bacon & onion. Add margarine and salt & pepper to taste. When margarine is melted, you are done!
  • I like to cook mine until the sprouts get a little brown on the bottom.

CHEESY BACON BRUSSELS SPROUTS

Cheesy Bacon Brussels Sprouts image

Our family really likes brussels sprouts, and adding cheese and bacon makes this an irresistable side vegetable.

Provided by TasteTester

Categories     Vegetable

Time 1h25m

Yield 8 serving(s)

Number Of Ingredients 11

1 1/4 lbs Brussels sprouts, cut in half (about 5 cups)
6 slices bacon, cut into 1-inch pieces
1 tablespoon butter or 1 tablespoon margarine
1 large onion, finely chopped (1 cup)
1 tablespoon all-purpose flour
1/4 teaspoon dried thyme leaves
1/4 teaspoon pepper
3/4 cup half-and-half
2 teaspoons chicken bouillon granules
1/3 cup shredded parmesan cheese
1/2 cup shredded cheddar cheese

Steps:

  • Heat oven to 350 degrees. Remove any discolored outer leaves and trim stem portion of brussels sprouts. In a 3-quart saucepan, place brussels sprouts; add enough water just to cover. Heat to boiling; boil 6-8 minutes or until crisp-tender. Drain and return to saucepan; set aside.
  • Meanwhile, in a 10-inch skillet, cook bacon over medium heat, stirring occassionally, until crisp. Remove bacon and drain on paper towels; set aside. Drain all but 1 tablespoon bacon fat from skillet.
  • Add butter to bacon fat in skillet. Heat over medium-high heat until butter is melted. Add onion; cook 2-3 minutes, stirring frequently, until crisp-tender. Add flour, thyme and pepper; cook and stir until well-blended. Gradually stir in half-and-half and bouillon granules. Heat to boiling, stirring constantly; boil and stir 1 minute. Remove from heat and stir in Parmesan cheese.
  • Pour sauce over brussels sprouts in saucepan; mix gently. Spoon into 2-quart casserole. Bake uncovered 25-30 minutes, sprinkling with crumbled bacon and Cheddar cheese for last 10 minutes of baking, until hot and bubbly. Serve right away.

  • Squeeze the juice of the lemon and orange into a large bowl with the shallots. Pour the oil into the bowl in a steady stream, whisking to form an emulsion (it should appear more creamy and less transparent). Season generously with salt and pepper. Refrigerate until ready to use.
  • Using a mandoline, shave the brussel sprouts (not including the stems) into thin slices to make a shredded/slaw texture. I rinsed and dried mine again after shaving them just to be sure they were totally clean.
  • Place the almonds in a food processor and pulse until chopped coarsely. Add 3/4 of the almonds, cheese, and bacon to the shredded brussel sprouts; toss to combine. When ready to serve, toss with the dressing and sprinkle remaining almonds, cheese, and bacon over the top. If needed, add a few more tablespoons of olive oil and toss.
