Zucchini Baby Food image

Simple zucchini puree for one of your baby's first foods. The rule of thumb is to give your baby a new food for 2 to 3 days before introducing another to rule out any potential allergies. Once you've given zucchini for 2 to 3 days, you can combine it with another vegetable you've already introduced, such as carrot.

Steps:

  • Place zucchini in a saucepan and cover with water. Bring to a boil and cook until very soft, 5 to 10 minutes. Drain well.
  • Transfer zucchini to a blender or food processor; puree until smooth. Allow to cool before serving.

2 teaspoons finely grated fresh lemon zest
2 tablespoons fresh lemon juice
2 teaspoons Dijon mustard
1 tablespoon honey
1 teaspoon anchovy paste
1 tablespoon sherry vinegar
Salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
3 small zucchini, trimmed and thinly sliced into half moons
3 cups loosely packed frisee (French curly endive), trimmed and torn into small pieces
1/4 cup loosely packed fresh flat-leaf parsley
1/4 cup loosely packed fresh mint leaves, torn in 1/2 lengthwise if large
1/4 cup loosely packed fresh basil leaves, torn into small pieces
12 kalamata olives, pitted and thinly sliced lengthwise
1 small red onion, halved lengthwise and thinly sliced crosswise

Steps:

  • Whisk together zest, juice, mustard, honey, anchovy paste, sherry vinegar, salt, and pepper in a large bowl until combined. Slowly whisk in the olive oil. Add zucchini, frisee, herbs, olives, and onion and toss to coat. Serve immediately.

3 stalks celery, chopped
1/4 lime, squeezed
2 teaspoons Salad Supreme dry seasoning
1/2 teaspoon kosher salt
1 tablespoon olive oil
cracked black pepper

Steps:

  • Julienne zucchini and place in large size bowl. (I have a handy little julienne peeler that I use.)
  • Chop celery and squeeze lime.
  • Measure dry seasoning, kosher salt, olive oil, and cracked black pepper.
  • Combine all together.
  • Let marry for a little while in refrigerator.

1 (10 ounce) bag whole baby zucchini, 3-4 inches long
1 tablespoon olive oil
1 tablespoon parmesan cheese
1 teaspoon chopped chives
salt and pepper

Steps:

  • Clean ends off zucchini and rinse well.
  • Place oil and baby zucchini in pan over medium-low heat. Cover and let cook for 7 minutes, stirring occasionally.
  • Take off heat and sprinkle with parmesan cheese and chives. Toss to coat.
  • Use salt and pepper to taste and enjoy.

  • Mix zucchini with olive oil. Fry in a hot pan for 1 minute on each side, until browned.
  • In a bowl, season spinach with salt to taste and toss with lemon juice. Then, add walnuts, cranberries, cheese, and zucchini.
  • Toss with balsamic vinegar.
  • Serve.
