SUPER SIMPLE SPINACH SALAD



Super simple spinach salad image

A simple but divine spinach salad with homemade balsamic vinaigrette!

5-6 cups fresh baby spinach
1/2 clove minced garlic
1 overflowing tablespoon balsamic vinegar
1 1/2 tablespoons extra-virgin olive oil
pinch of sea salt and freshly cracked black pepper

Steps:

  • Put your spinach into a big bowl. If you're using any add-ins, go ahead and add them now. (See notes for ideas.)
  • Mix all of the dressing ingredients together in a small jar or container with a tight-fitting lid. Shake them up until it's well mixed.
  • Pour the dressing over the spinach right before you're ready to serve.
  • Enjoy!

Spinach Salad with Asian Salad Dressing image

When you want a simple salad to make the meal complete, this easy Spinach Salad with Asian Dressing is all you need.

3 Tbsp roasted walnuts
¼ red onion
1 navel orange
3 oz baby spinach
3 Tbsp neutral-flavored oil (vegetable, rice bran, canola, etc.)
2 Tbsp soy sauce
1½ Tbsp rice vinegar (unseasoned)
¼ tsp grated ginger
¼ tsp sugar
½ Tbsp toasted white sesame seeds
⅛ tsp freshly ground black pepper
¼ tsp kosher salt (Diamond Crystal; use half for table salt)

Steps:

  • To make the dressing, in a small bowl, whisk together 3 Tbsp vegetable oil, 2 Tbsp soy sauce, 1 ½ Tbsp rice vinegar, ¼ tsp grated ginger, ¼ tsp sugar, and ½ Tbsp sesame seeds and set aside.
  • Heat a frying pan over medium high heat and toast the walnuts, stirring frequently until fragrant. Transfer the walnuts to a plate and set aside.
  • Slice the red onion thinly. Cut the navel orange into 8 wedges. Slice off the peel and pith. Cut each wedge into 2-3 pieces.
  • Add the spinach, the navel orange, and walnuts in a large bowl. Pour as much dressing as you like and toss gently to coat thoroughly. Serve immediately.

A flavoursome Beanshoot, Avocado and Baby Spinach Salad with and Asian Vinaigrette which I have adapted from one of the recipes featured today on Huey's popular TV cooking show. He suggests serving this as an entrée or for a light lunch. Huey (Iain Hewitson) is an Australian chef, who is particularly fond of Asian cuisine. I am posting this for the 2005 Zaar World Tour.

4 tablespoons asian fish sauce
2 tablespoons japanese rice vinegar
2 tablespoons water
2 teaspoons shaved palm sugar
1 chili pepper, seeded & finely sliced
1 teaspoon freshly grated ginger
4 large garlic cloves, grated
150 g baby spinach leaves
100 g bean sprouts
1/2 small red onion, finely sliced
1 red capsicum, cored, seeded & diced
1/4 English cucumber, halved lengthways & thickly sliced
1 avocado, diced

Steps:

  • Place the fish sauce, rice vinegar, water, palm sugar, chilli, ginger and garlic in a bowl and whisk up. Taste for seasoning.
  • In another bowl, mix together the baby spinach leaves, beanshoots, onion, capsicum, cucumber and avocado with dressing to taste.

This is an original recipe from Puelo's Italian Restaurant in Knoxville, TN. It was finally given out to our newspaper after tons of patrons begged for it. I have not tasted this yet, but judging by their other meals I've had this is sure to be a winner!

4 cups loosely packed Baby Spinach
1 tablespoon shredded carrot
2 tablespoons caramelized pecans
2 tablespoons gorgonzola, crumbles (blue cheese)
3 slices granny smith apples
1 tablespoon alfalfa sprout
2 tablespoons strawberry ginger salad dressing
6 tablespoons fresh ginger, finely minced
3 tablespoons gulden's mustard
2 teaspoons fresh ground black pepper
1/2 cup honey
1 1/2 tablespoons sea salt
2 tablespoons Mrs. Dash seasoning mix
1/2 cup rice vinegar
1/2 cup white balsamic vinegar
1 cup strawberry puree
2 cups extra virgin olive oil

Steps:

  • Combine salad ingredients together in a salad bowl and top with dressing.
  • For dressing:.
  • In bowl combine ginger, mustard, honey, pepper, salt and Mrs. Dash, whisking well. Slowly add rice and white balsamic vinegars. Add strawberry puree and whip well. Add oil and whip well.
  • Pour in blender and mix until desired thickness. Store in fridge.
  • Makes 3 1/2 cups.
