TEMPURA FISH STIR-FRY WITH ASSORTED PEPPERS



Tempura Fish Stir-Fry With Assorted Peppers image

A delicious, refreshing alternative to the traditionally dipped Japanese Tempuras. This is Chinese cooking with a twist, incorporating the best of Chinese and Japanese cuisine! Best of all, it's relatively simple to make, and tastes absolutely great as a one pot meal served with jasmine rice, or on it's own, as a low-carb meal!

1 (2 ounce) packet tempura mix
500 g pacific dory fillets (Or other flaky fish)
1 medium red pepper
1 medium green pepper
1 medium orange bell pepper
1 large onion, sliced
3 sprigs coriander, chopped
4 tablespoons abalone sauce
2 teaspoons cornflour
4 tablespoons water
24 ml water
1 teaspoon oil
3 tablespoons oil
3 cups oil

Steps:

  • Firstly, follow instructions on tempura batter packet.
  • Slice the fish fillets into 2 - 4 inch chunks, and coat with tempura batter.
  • Heat the oil for deep frying (3 cups) in a shallow pan, and deep fry till golden brown. Set Aside.
  • In a wok, put 3 tablespoons of oil in and fry onions for 2 minutes on medium until fragrant.
  • Add assorted peppers in and stir-fry on high heat till cooked, or if desired, till slightly charred (for a pleasant, sharper taste.).
  • Add in the deep fried fish fillets with the peppers, fry on high heat for 1 minute Cover, and leave to simmer on low heat.
  • While fish and peppers are simmering, in a sauce pan, heat 1 teaspoon of oil and heat on medium flame.
  • Add 4 tablespoons of abalone sauce and fry for a few seconds. Then, add the cornflour and 4 tablespoon of water together separately into a cup, mix well, add to abalone sauce. Stir gently until mixture is bubbling.
  • Pour the abalone sauce seasoning into the simmering wok. Take off heat.
  • Mix chopped coriander with the stir-fry dish. Serve immediately.

THIS COMES NOTHING CLOSE TO A REAL STIR FRY, BUT IT'LL SURE SATISFY YOUR CRAVING WITH A DEFINITE ALL AMERICAN TWISTS. FOR AN FLAVOR VARIATION TRY ADDING DIFFERENT MEATS LIKE AN SCRAMBLED EGG!!! NOTE: YOU CAN USE ANY COMBINATION OF YOUR FAVORITE VEGEYS. JUST MAKE SURE YOU CHOP THEM UP INTO FAVORABLE BITE SIZED PIECES!!

1 cup rice
1 can sardines
1/2 zucchini
1/2 large onion
1/2 large carrot
broccoli (WHATEVER THE RATIO WOULD BE TO THE OTHER VEGEYS)
2 teaspoons chicken bouillon
oil

Steps:

  • PREHEAT SKILLET OR WOK AND A POT OF BOILING WATER FOR THE RICE.
  • (JUST FOLLOW THE DIRECTIONS ON THE PACKAGE) WHEN FINISHED BOILING ADD RICE AND CHICKEN FLAVORING.
  • WHILE SKILLET OR WOK IS WARMING UP SLICE ALL VEGEYS INTO 1/4 TO 1/2 INCH HALF MOONS (I FIND THAT MEASUREMENT TO BE THE PERFECT BITE FOR A STIR FRY).
  • FOR THE BROCCOLI JUST CUT IT APART.
  • PLACE AS MUCH OIL AS YOU NEED FOR THE STIR FRY INTO THE SKILLET OR WOK AND PUT ALL YOUR VEGEYS INTO IT AND BEGIN TO STIR FRY THEM.
  • WHEN RICE IS DONE AND NICE AND FLUFFY ADD SARDINES (MAKE SURE YOU CHOP THEM UP NICE AND FINE BEFORE ADDING).
  • STIR FRY ALL INGREDIENTS TOGETHER FOR A COUPLE OF SECONDS AND TRY IT WITH A LITTLE SOY SAUCE.
  • NOTE: MAY NOT BE THE REAL THING, BUT ABSOLUTLY DELICIOUS NEVER THE LESS!
  • FOR MORE FLAVOR IMPACT OF SARDINES, ADD LESS RICE OR ANOTHER CAN OF SARDINES.

Add the fish and cook for 2-4 minutes, depending on the variety you’re using, until the fish is just cooked. Spoon the fish out of the pan and onto a side plate, then add the broccoli or snow peas, to the pan. Stir-fry for 1 minute to give some color, then add the stock, and the soy sauce. Stir to combine, then cook for 1-2 minutes more, or until the vegetables are crisp-tender. Add the fish back into the pan and stir to combine.
  • Remove from the heat. Garnish with black pepper or red pepper flakes, if using. Serve the fish stir-fry immediately with steamed rice.
