Easy Bacon and Cheese Pumpernickel Puffs image

Simple to make and perfect to serve for a get-together or enjoy for a weekend evening snack --- purchase the smaller sliced party pumpernickel loaves for this, you may prepare the puffs and place in the fridge on the baking sheet until ready to broil, this should yield about 30 puffs.

1 lb sliced bacon, cooked, drained and crumbled
2 1/2 cups finely grated cheddar cheese
2 tablespoons prepared mustard
1 cup mayonnaise (not salad dressing)
1 loaf pumpernickel bread, sliced

Steps:

  • Set oven to broiler heat.
  • In a medium bowl combine the crumbled cooked bacon, cheese, mustard and mayo; stir well to combine.
  • Arrange the pumpernickel slices on a cookie sheet.
  • Spoon the mixture on each slice of bread.
  • Broil for about 5-6 minutes or until hot and bubbly.

2 slices bacon
2 slices bread
1/4-1/2 cup shredded sharp cheddar cheese
lettuce
tomatoes
pickle
onion

Steps:

  • Preheat the oven to broil at 425°F.
  • Heat a frying pan on the stove.
  • Fry bacon strips until they are the desired doneness.
  • Set aside bacon to cool and drain. place bread on a cookie sheet and broil for about 3 minutes until bread is lightly toasted.
  • Turn bread slices over (use a tong) and sprinkle shredded cheese on top in a nice thick layer and broil for about 3 minutes until the cheese is nice and melted.
  • Take the bread out of the oven and let cool for about 2 minutes.
  • Next layer a slice of tomato, onion, pickle and lettuce on one side and place bacon on.
  • You may want to add a little low fat mayo or mustard.
  • Put together and enjoy!

2 teaspoons adobo sauce, from chipotle chile peppers in adobo sauce
8 slices whole wheat bread, toasted
1/2 lb thinly sliced deli smoked turkey breast
8 slices tomatoes
fresh ground black pepper
8 slices bacon, crisply cooked
8 slices American cheese
4 leaves lettuce leaves

Steps:

  • Heat broiler.
  • Combine mayonnaise and adobo sauce in small bowl. Evenly spread on 1 side of each toast slice.
  • To assemble sandwiches, layer 4 slices toast, spread-side up, divide the turkey between the 4 slices toast and top with 2 slices tomato each; sprinkle with black pepper. Top each with 2 slices bacon and 2 slices cheese.
  • Place sandwiches onto ungreased baking sheet. Broil 5 to 6 inches from heat until cheese begins to melt (1 to 2 minutes).
  • Top sandwiches with lettuce leaves and remaining toast slices, spread-side down.
  • Slice each sandwich in half and serve.

3 tablespoons flour
1/2 cup shredded sharp cheddar cheese
1 cup milk
1 1/2 cups diced cooked turkey

1/4 teaspoon cayenne pepper
1/2 cup fresh grated parmesan cheese
6 slices bacon, cooked and crumbled

Steps:

  • Place bread slices on a lightly greased baking sheet.
  • Bake at 500 degrees for 3-4 minutes; set aside.
  • In a saucepan over low heat, melt butter.
  • Add flour; whisk continually until smooth.
  • Add cheddar cheese and whisk until cheese melts.

This recipe will make about 48-50 appetizers but the recipe can be reduced but half, these are always the first to vanish at my get-togethers, but don't wait for the holidays to make these, serve these as a snack! This will work good with chicken in place of turkey, but the turkey is better!

48 slices pumpernickel cocktail bread
3 tablespoons butter
1 -2 jalapeno pepper, seeded and finely chopped
6 tablespoons flour
3 cups old cheddar cheese, grated
6 -7 cups finely chopped cooked turkey or 6 -7 cups cooked chicken
2 cups half-and-half cream or 2 cups full-fat milk
salt and black pepper
Tabasco sauce (optional)
3/4 cup grated parmesan cheese (you can use more)
7 -8 slices bacon, cooked and crumbled
7 -8 firm plum tomatoes, thinly sliced

Steps:

  • Place the pumpernickel slices onto a large baking sheet; broil 6-inches from heat source for about 4 minutes (watch closely not to burn!) set aside.
  • Melt butter in a saucepan, add in the chopped jalapeno, stir with wooden spoon for 1 minute.
  • Add in flour and whisk until smooth.
  • Gradually add in the half and half cream; cook over medium heat whisking continously until thickened and hot.
  • Add in the grated chedder cheese, stir until melted.
  • Add in chopped turkey or chicken; season with salt and black pepper and cayenne (if using).
  • Spoon EACH slice pumpernickel bread with the warm turkey/cheese mixture, then sprinkle with a small amount of grated Parmesan cheese, then sprinkle with the crumbled bacon .
  • Bake in a 450 degree oven for about 3 minutes or until the Parmesan is melted.
  • Remove from oven and top with a tomato slice then serve.
