BAKED BABY BACK RIBS

Even a barbeque purist cannot scoff at these foil-wrapped, baked and glazed baby back ribs. They're satisfyingly sweet, savory, smoky and flavorful. The meat falls off the bones! Baking in foil also reduces the amount of clean up. You'll be busy enjoying these ribs -- who has time for dishes?

2 slabs baby back ribs, about 1 pound each (see Cook's Note)
1/4 cup light brown sugar
1 tablespoon chipotle chile powder
2 teaspoons kosher salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon seafood seasoning, such as Old Bay
1/2 teaspoon freshly ground black pepper
1 cup apple cider
2 tablespoons apple cider vinegar
1 tablespoon pure maple syrup
1 tablespoon Worcestershire sauce
2 cloves garlic, minced

Steps:

  • In a small bowl, combine the brown sugar, chipotle chile powder, salt, onion powder, garlic powder, seafood seasoning and black pepper.
  • Place each slab of ribs on a piece of aluminum foil large enough to fold over and seal, then place on a baking sheet. Do not seal the ribs in the foil yet (see Cook's Note). Generously sprinkle the dry rub on both sides of the ribs. Place in the refrigerator, meat-side down and uncovered, for at least 1 hour. Preheat the oven to 300 degrees F.
  • In a small bowl, combine the apple cider, apple cider vinegar, maple syrup, Worcestershire and minced garlic. Pour half the liquid over each slab and tightly seal each in the aluminum foil, crimping the edges to make a packet.
  • Transfer the foil packets and baking sheet to the oven and bake until the meat is tender and starts to pull away from the bones, about 2 hours.
  • Remove the sheet pan from the oven. Carefully open the aluminum packets and pour the braising liquid into a small saucepan. Bring the liquid to a simmer over medium heat until it becomes a thick and syrupy glaze, about 4 minutes.
  • While the braising liquid reduces, line a baking sheet with foil and gently transfer the ribs to it. Position a rack on the top level of the oven and preheat the broiler.
  • Using a pastry brush, generously brush the ribs with about half the glaze. Place the ribs under the broiler for about 1 minute. Brush with the remaining glaze and return to the broiled until charred in spots, about 1 minute more. Slice each rack between the bones into 2-rib portions and serve.

50g light brown soft sugar
2 tbsp smoked paprika
2 tbsp English mustard powder
1 tsp celery salt
1 tsp garlic granules
4 racks baby back pork ribs (about 450g each)
250ml yellow mustard (we used French's Classic)
150ml cider vinegar
2 tbsp treacle
75g light brown soft sugar
2 tbsp Worcestershire sauce
1-2 tbsp hot chilli sauce
2 tsp hot chilli powder

Steps:

  • Heat oven to 160C/140C fan/gas 3. Combine the sugar, paprika, mustard powder, celery salt and garlic granules in a bowl, and rub all over the ribs. Place in 2 large roasting tins with racks set inside (if you don't have racks, that's fine). Pour 150ml water into the bottom of each tin, cover tightly with foil and roast for 3 hrs until nearly falling apart. If your roasting tins are on different shelves, swap them over halfway through the cooking time. Once cooked, remove and drain the cooking liquid.
  • Meanwhile, to make the baste, mix all the ingredients in a saucepan and cook for 10 mins, stirring occasionally, until the sugar has dissolved. Set aside.
  • Heat an outdoor barbecue. Whether your grill is gas or charcoal, use low heat to barbecue the ribs. Cook the ribs for 3-4 mins each side, brushing regularly with the baste, until golden and sticky. Alternatively, heat oven to 220C/200C fan/ gas 7 and roast the ribs for 25-30 mins, turning the ribs over and rotating the tins halfway through the cooking time.

2 racks baby-back ribs (about 1 1/4 pounds each), halved crosswise
2 cloves garlic, minced
1 tablespoon freshly grated, peeled ginger
2 teaspoons chile paste
3 tablespoons dark-brown sugar
1/4 cup molasses
1/2 cup hoisin sauce
1/2 cup dark soy sauce
1/2 cup red currant jelly

Steps:

  • Place ribs in a large shallow baking dish; set aside.
  • Combine the garlic, ginger, chile paste, sugar, molasses, hoisin, soy, and jelly in a medium bowl. Pour mixture over ribs, stirring to coat. Cover with plastic wrap and let marinate, refrigerated, for at least 8 hours or up to overnight.
  • Preheat oven to 375 degrees. Remove ribs from marinade, reserving marinade. Place ribs on a rack set over a foil-lined baking sheet. Bake, turning frequently and basting with reserved marinade, until the ribs are tender and well browned, about 45 minutes.
  • Transfer ribs to a cutting board and let stand 5 minutes before cutting into individual ribs.

This is my own marinade...the type or brand of hot sauce will have to be your own choice. I like to use the slow roasting method for these and uncover the ribs the last half hour of cooking. Marinating time not included.

1/3 cup ketchup (or more to taste)
1/2 cup hot pepper sauce
1/3 cup soy sauce
1/3 cup honey
1/3 cup butter, melted
5 garlic cloves, crushed

Steps:

  • Mix all the ingredients for the marinade.
  • Brush the ribs with the marinade, be generous but reserve about half a cup or so.
  • Wrap the ribs in pieces of foil, brushed or sprayed with oil.
  • Put in the fridge and leave overnight.
  • When ready to cook preheat oven to 300°F.
  • Put the packets on a tray lined with foil and bake for two hours, then open up the packets and brush with the rest of the sauce, bake for another half hour, if you want finish them under the grill.

1 4-pound slab baby back ribs
1 cup mayonnaise

Steps:

  • Preheat oven to 325 degrees. In a bowl combine all ingredients except ribs to make a sauce; season with salt and pepper. On a rack set in a roasting pan season ribs with salt and pepper and brush with a thick layer of sauce. Roast ribs, basting every 30 minutes, until tender and falling off the bone, about 1 1/2 hours. Slice into individual ribs before serving with potato salad.
  • In a bowl, stir together mayonnaise with cilantro, garlic, salt and 7 turns black pepper. Add potatoes and onions and toss to combine thoroughly; cover and refrigerate up to 24 hours before serving.

1 rack (2 to 3 pounds) baby back ribs
2 Tablespoons dry rib rub
¾ cup BBQ sauce
1 cup apple juice
¼ cup apple cider vinegar
1 Tablespoon liquid smoke
1 Tablespoon salt

Steps:

  • Rinse the whole rack of ribs in water and then pat dry with paper towels.
  • Remove the membrane (silver skin) from the boney side of the ribs by sliding a butter knife under the membrane on top of a bone and pulling up. Using your hands or a paper towel, remove the membrane completely.
  • Rub the dry rib rub all over the rack of ribs on both sides. (You can either cook the ribs right away or wrap them in plastic wrap and store in the refrigerator overnight before cooking.)
  • Place the metal rack (trivet) into the bottom of the pressure cooker insert. Add apple juice, apple cider vinegar, liquid smoke, and salt into the bottom of the pot.
  • Place the rack of ribs into the pot on top of the metal rack, standing them up on their side. Wrap them around the inside lining of the pot with the meaty side of the ribs facing outward.
  • Close the lid and lock into place. Set the pressure valve to "Sealing" and pressure cook on "Manual" high pressure for 25 minutes. Once done, allow pressure to naturally release for 10 minutes, and then quick-release the remaining pressure according to the manufacturer's instructions.
  • Using tongs (I use 2 sets), carefully remove the ribs and place onto a baking sheet.
  • Set your oven to "Broil" (or the highest temperature setting).
  • Generously brush ribs down with BBQ sauce on both sides. Place under the broiler for 5 minutes, until sauce is bubbly and starts to caramelize.
  • Slice into individual ribs before serving. Serve with extra BBQ sauce and enjoy!

These tender, simple sous vide baby back ribs are a favorite recipe of mine. I've served them at multiple barbecues and parties and they are always a crowd favorite! My favorite combination is probably 150°F (65°C) for around 18 to 24 hours, it's shreddable but not too fall-apart. Some other popular combinations are 165°F (73.9°C) for 18 to 24 hours or 176°F (80°C) for 12 hours. For a chop-like consistency I generally prefer 140°F (60°C) for 1 to 2 days.

1/2 to 1 teaspoons spice rub or herbs (optional)

Steps:

  • Start your sous vide machine preheating. I prefer 150°F (65.6°C) for a perfect braise-like texture that is extra juicy but many people want a more shreddable, fall-apart version at 165°F (73.9°C).
  • Trim off any fat or gristle. Salt the pork then coat with any spices.
  • Seal the pork in a sous vide bag, Ziploc-brand freezer bag, silicon bag, or other food- and heat-safe bag or zip top bag.
  • Cook the pork until tenderized, usually 18 to 36 hours for pork baby back ribs.
  • Take the sous vide bag out of the water and remove the cooked baby back ribs. Dry it off thoroughly using paper towels or a dish cloth.
  • Sear the baby back ribs for 1 to 2 minutes per side over high heat. It should just start to brown but the core temperature shouldn't rise. Remove it from the heat.
  • Place the baby back ribs onto a plate with any salads or sides then serve.
