OLD-FASHIONED SOUTHERN SPOON BREAD
Spoon bread has a long history and has a similar texture to a soufflé. It is served with a spoon, hence its name.

Steps:
- Gather the ingredients.
- Preheat the oven to 350 F. Grease an 8-inch-square baking dish or 1 1/2-quart casserole.
- Combine the cornmeal and salt in a mixing bowl.
- Gradually add the boiling water while whisking out any lumps. Add the melted butter and stir to blend. Let the mixture cool for about 5 minutes.
- Whisk the milk into the cornmeal mixture.
- In a small bowl, beat the eggs thoroughly.
- Whisk the beaten eggs into the cornmeal mixture along with the baking powder. Blend well with a whisk or electric mixer.
- Turn the batter into the prepared baking dish.
- Bake for about 35 minutes or until set and lightly browned.
- Serve the spoon bread hot with plenty of butter.

- Put the corn meal, bacon drippings, sugar, and salt into a baking dish. Pour the boiling water over them gradually and beat well. When the mixture is cool add the beaten egg, milk, and the baking soda, plus the 1 tsp cold water. Beat the whole mixture well. Bake in a deep dish for 20 minutes in a preheated 350 degree F oven.

SPOON BREAD

- Preheat the oven to 350 degrees. Lightly butter a 1 1/2-quart souffle dish.
- Combine the cornmeal, salt, and sugar and stir slowly into scalded milk in saucepan. Over low heat, blend in butter. Remove saucepan from heat and beat in egg yolks and baking powder. Let cool.
- Beat egg whites with a pinch of salt until stiff. Gently fold into cornmeal mixture. Pour batter into prepared mold and bake until puffed and golden, 30 to 35 minutes. Serve immediately.

I have been making this spoon bread for years. My kids loved it when they were at home. The recipe is over 100 years old. It makes a good side dish. Add 1/2 cup of sugar or honey to turn it into an old fashion dessert.

Steps:
- Preheat oven to 375 degrees.
- Scald milk (do not boil).
- Stir in butter, cornmeal and salt.
- Cook stirring constantly.
- Until cornmeal comes away from sides of pan and thickens.
- Set aside to cool to lukewarm.
- Add beaten egg yolks.
- Mix throughly.
- Fold in stiffly beaten egg whites.
- Mix gently but throughly.
- Pour into greased and floured 2-quart baking dish.
- Bake 1 hour or until top is golden brown.
- Serve immediately.

- Cook corn meal with 2 cups of the milk until thickened.

The B & O says some passengers have missed their stops in order to have second helpings of this dish. The B & O says one of their most popular dishes with both men and women.

- Brown the beef and onion in a skillet. Add the soup, water, seasonings, corn, and green pepper. Mix well and allow to simmer for 15 minutes. Then fill either a greased large pie pan or a greased casserole dish 3/4 full, leaving room for the topping. Now prepare the topping. Sift together all of the topping ingredients except the egg, then add the egg and the milk. Cover the meat mixture with the topping mixture and bake in a preheated 350 degree F oven for 18 to 20 minutes. Don't be surprised when the topping disappears into the meat mixture; it will rise during the baking and form a good layer of corn bread.

Steps:
- Put yeast in 1/2 cup warm water to which 1 teaspoons sugar is added. leave 10 minutes.
- Pour 1 1/2 cups boiling water over oatmeal. Add 3 tablespoons butter, 2 tablespoons brown sugar, 1/2 cup molasses and 1 teaspoons salt. Mix and leave until lukewarm.
- Add yeast mixture. Put some flour in before yeast and 1/4 cup warm water. Add remainder of flour; mix with a spoon.
- Spoon into cans. Let rise 1 1/2 hours or until double in bulk.
- Bake at 350F for 50-6- minutes.
