This recipe is about chicken on the bone marinated with dry spices, the authentic ayam goreng (fried chicken) served in the Indian Muslim restaurants in Malaysia. If you expect it tastes closely to KFC or other fried chicken coated with batter, you will be surprised by the different flavors offered by the Malaysian ayam goreng.

1kg chicken on the bone
1 tbsp minced garlic
1 tbsp minced ginger
1 tbsp Malaysian curry powder
1 tbsp chili powder
1 tbsp coriander powder
1/2 tsp turmeric powder
1/2 tsp cumin powder
2 tbsp plain yogurt
1/2 tsp white pepper powder
2 tsp salt
2 stalks curry leaves
3 tbsp all-purpose flour
4 tbsp cornstarch starch
1 egg
1/2 tsp baking powder

Steps:

  • Make some deep cuts at the thickest part of the chicken drumsticks.
  • Mix the marinade A with the chicken, especially rub it into the deep cuts.
  • Marinate overnight.
  • Remove the chicken from the refrigerator and wait until it returns to room temperature.
  • Coat the chicken drumsticks with beaten egg and a mixture of all-purpose flour, cornstarch, and baking powder right before frying.
  • Deep-fry over medium heat for six minutes undisturbed.
  • After six minutes, flip the chicken over and deep fry for another six minutes. Turn them occasionally to ensure even cooking.
  • Check the doneness by inserting a kitchen thermometer into the thickest part of the meat. The temperature should be at least 65°C/150°F.
  • Remove the chicken and drain it on a paper towel.

1.25 kg / 2.5 lb chichen thighs ad drumsticks, bone in skin on ( (I use 4 thighs, 3 drumsticks, Note 1))
2 tsp coriander seeds
2 tsp cumin seeds
1 tsp fennel seeds
3 garlic cloves (, roughly chopped)
1 tbsp ginger (, roughly chopped)
1 tbsp galangal (, roughly chopped (Note 2))
1 1/2 tsp curry powder ((any type fine, mild or spicy - your choice))
1 lemongrass (, white part only roughly chopped (Note 3))
1 tsp turmeric powder
2 small eshalots ((French onions, US: shallots), peeled and roughly chopped (Note 4))
1 1/2 tsp cooking/kosher salt ((or 1 tsp table salt))
1/2 tsp chilli powder (, adjust to taste (Note 5))
2 tsp brown sugar
7 tbsp coconut milk ((full fat best!))
1/2 cup cornflour / cornstarch
1.75 litres / quarts vegetable or canola oil
1 tbsp garlic (,minced (not too small, else it burns))
1 tbsp large red chilli ((cayenne pepper), deseeded and minced)
1 tbsp green onion (, minced)
Pinch of salt
Coriander/cilantro leaves

Steps:

  • Toast spices: Toast spices in a small skillet over medium heat (no oil) for 2 minutes or until the spices smell fragrant. Transfer seeds into Nutribullet, small food processor OR into a tall jug that fits a stick blender.
  • Curry paste: Add remaining Curry Paste ingredients and blend until smooth.
  • Marinate: Pour Curry Paste over chicken in a ziplock bag (or bowl, Note 6). Toss to coat, then marinate for 24 hours in the fridge, up to 48 hours.

I love my chicken and I especially love the different ways the Indonesians cook it. When I was over there last time I asked for the recipe. Bear in mind they get the spices from the market and use a mortar & pestle to crush them, but I just use store bought and crushed! - I cook the chicken in a frypan with olive oil to seal the seasoned chicken and then pop it in the oven for about 20 - 30 minutes (depending on the thickness) to cook it through. However the quicker option would be to deep fry it (if you can afford the calories!!!). Chicken done this way is great served with Nasi Goreng (Indonesian Fried Rice). I hope you enjoy.

4 -8 chicken pieces
1 cup tamarind juice
2 tablespoons clear soya sauce
1/4 teaspoon chili powder
2 teaspoons ground ginger
2 teaspoons ground coriander
2 garlic cloves, crushed
1/4 teaspoon turmeric

Steps:

  • Marinate the pieces of chicken in this mixture for 2 hours, turning them from time to time.
  • Strain the chicken, so that the marinade drips away from it.
  • Deep fry chicken OR pan fry the portions until sealed and cooked on the outside and then cook in oven at 180 degrees for 30 minutes.

1/2 inch turmeric
1/2 inch gingerroot
1 teaspoon coriander powder
10 slices galangal
3 red chilies
15 small onions
15 garlic cloves
4 stalks lemongrass
8 chicken thighs
12 chicken wings
1/2 tablespoon tamarind paste (mix with 1/2 cup water)

Steps:

  • Fry ingredients with oil over slow fire for 15 minutes.
  • Add chicken and a bit of tamarind infused water. Fry for 15 minutes.
  • Add salt to taste.
  • Chicken will be slightly uncooked.
  • Heat frying pan with a lot of oil. When it's hot, put in chicken and fry to a brown colour.
