- Mix well and store in an air tight container.
- Add salt to cold water and stir very well until all the salt is completely dissolved. Then add the brown sugar, dry rub, and bay leaves and stir well to combine.
- Rinse the pork shoulder and place in a large container, pour in the brine solution until the shoulder is completely covered. Cover the container and place in the refrigerator for at least 12 hours.
- Remove pork shoulder from brine solution, pat dry with paper towels, place in baking pan that is bigger than the shoulder by at least a inch in length and width and at least 3 inches deep. Sprinkle dry rub onto the surface of the shoulder and massage in such that it adheres to the surface. Coat all sides. Make sure the fat layer on the shoulder is facing up before cooking! Place baking pan uncovered in a 225 degree F oven on the middle rack. Insert a probe thermometer into the center or thickest part of the shoulder, but not touching the bone. Monitor the temperature throughout cooking (a digital thermometer with an alarm function is the easiest way to do this). Do not remove from the oven until the center of the shoulder reaches 200 degrees.
- When the shoulder has reached 200 degrees, shut off the oven and let the roast cool for a couple of hours before removing from the oven. If the bottom of the pan is dry (or crusted with dried spices) then cover the pan with foil to retain internal moisture of the meat during the cooling period. When the temperature drops to 170 degrees or slightly lower, remove from oven. Place on a large, clean work surface such as a cutting board, and remove the large sheet of crusted fat on the top. Pull apart with two forks, it will pull apart very easily. Serve for friends and family!

- Place pork in a slow cooker and season to taste with garlic powder, poultry seasoning, salt, and pepper. Add quartered onion, apple, and 3 celery stalks. Pour chicken broth into slow cooker.
- Cook on Low until very tender, about 8 hours. Transfer pork to a large platter and discard juice and vegetables. Shred pork with a fork and return to the slow cooker.
- Prepare barbecue sauce while pork is cooking. Melt butter in a large saucepan or small Dutch oven over medium heat; cook and stir 2 cups celery and 1 1/2 cups onion until onion is translucent, about 5 minutes. Add ketchup, water, vinegar, brown sugar, Worcestershire sauce, mustard, liquid smoke, and 1 tablespoon garlic powder; mix. Reduce heat to low and simmer, stirring occasionally, until sauce is thickened, about 10 minutes. Pour barbecue sauce over shredded pork.
- Continue cooking pork on Low heat until flavors combine, about 2 hours.

ULTIMATE SLOW COOKER PULLED PORK
Pulled pork is perfect for the slow cooker. Cooking the pork low and very slow is the secret to the juiciest and most tender pulled pork. Serve the pork as is or feel free to stir in your favorite barbecue or other sauces at the end of cooking.

- Rub the pork with salt and pepper, and then set aside while you prepare the remaining ingredients. (See notes below if you plan to sear the pork first).
- Heat oil in a wide skillet over medium heat. Add the onions and garlic then cook, occasionally stirring, until they are sweet and browned around the edges. Stir in the tomato paste, chili powder, and cumin. Cook, stirring until the tomato paste turns from bright red to orange in color; about 3 minutes. Add the water, apple cider vinegar, and fish sauce and cook for about 1 minute, scraping up the browned bits on the bottom of the pan.
- Rest the seasoned pork in the bottom of a slow cooker then pour the onion and spice mixture on top. Wiggle the pork around the bottom of the slow cooker so that some of the onion and spice mixture slides underneath. Cover with lid and cook until the pork can be easily shredded; LOW for 6 to 8 hours or HIGH for 4 to 6.
- Turn off the slow cooker and transfer the pork to a cutting board. If the pork has a bone in it, remove and discard it. Use two forks to shred the meat, discarding any connective tissue, and large clumps of fat.
- Remove the cooking liquid and skim most of the fat from its surface. Discard the fat then set the cooking liquid aside.
- If using barbecue sauce, add it to the slow cooker and stir in the shredded pork. For even more flavor, add back some of the reserved cooking liquid. If you're not using barbecue sauce, add the shredded pork and the cooking liquid back to the slow cooker. Taste and season with salt, additional vinegar, or hot sauce as needed.

Best pulled pork recipe I've ever tried. I like to serve this on yeast rolls topped with coleslaw.

- 1. For rub: Mix all ingredients in a bowl. (Except for the optional liquid smoke)
- 2. For sauce: Combine in nonreactive saucepan, bring all ingredients to boil and simmer until it reduces to 1 1/2 cups.
- 3. For pork: Score the fat side of the pork butt with a knife, and you can also poke holes in the pork to get the rub throughout the meat. Thoroughly rub pork with enough rub to fully coat it.
- 4. Place in Plastic bag and refrigerate overnight
- 5. Take out pork and re-rub. You will probably not use all the rub, just add enough to coat it again, and rub it in well. And if you prefer, you can also pour on some liquid smoke at this point. I prefer hickory but you can use whatever you'd like.
- 6. Let the pork sit at room temperature for 2 hours
- 7. Roast on rack uncovered in oven at 250-275 degrees until falling apart tender. I like to use a broil pan so the fat can run under the roast and it's not sitting in a lot of fat. You can also cook this for 10 hours on low in a crock pot. just placing aluminum foil balls in the bottom to keep the pork from sitting in the grease, and this would also be fabulous cooked in a smoker.
- 8. It will take 7-8 hours, the internal temperature of the pork when done should be between 195 and 200 degrees.
- 9. Pull pork into pieces, toss with sauce
'PRETTY FREAKING AWESOME' PULLED PORK (CROCK POT)
In the search for the best pulled pork recipe there were several that I found that were appealing. I combined a couple recipes and added my own flare to make this delicious dish. The recipe is easy enough to include my kids. My 3 year old really enjoyed asking the butcher for some pork butt, while my 4 year old enjoyed applying the rub.

- 1. 6 hours before cooking, mix all ingredients for the rub and apply the rub liberally onto the butt, cover with plastic, and store in the refrigerator.
- 3. Slice one onion and place in crock pot.
- 4. Put in the butt and cover with the other onion, sliced. Pour in the ginger ale. Cover and cook on LOW for about 12 hours, turning once or twice in the process to ensure more even cooking.
- 5. Remove the meat, strain and save the onion and 1/4-1/2 cup of the liquid.
- 6. With latex gloves, pull the pork apart by hand and add it back to the crockpot, discarding any remaining fat, bones, or skin. Most of the fat will have melted away.
- 7. Depending on how dry the pork is in the crock pot, add 1/4-/12 cup of saved liquid to keep the pork most.
- 8. Chop up the saved onion into tiny pieces and add back to the crock pot.
- 9. Stir in the barbeque sauce.
- 10. Continue to cook with the lid on for another 2-4 hours.
- 11. Serve on hamburger buns, topped with more sauce, coleslaw, and sliced pickles.
AWESOME PORK BUTT
This is a recipe that is cooked in the crockpot and smells wonderful while cooking. A bit different than your usual pot roast. A big hit with my crowd.

- Spread one can of your soup on the bottom of crockpot.
- Rinse off your roast and pat dry.
- Rub Blackened Steak Seasoning into the meat covering all sides and place into the crockpot. (Fat side up).
- Top with onion, mushrooms and the remaining can of soup.
- Cook on low heat for 8 to 10 hours.
- When cook time is complete, drain off the juices and make a gravy on the stove top.
- Serve over steamed rice. ( I like jasmine rice).
- Gravy: Put 2 c of juices in a pot and let it come to a boil over med hi heat. In a small cup, add a 1/4 c cold water and 2 Tbs cornstarch until mixed well. Add to boiling pot and stir with whisk until thick. Remove from heat and serve over meat.

AUTHENTIC CUBAN PORK ROAST
Steps:
- Combine all of the ingredients (except the pork) in a food processor or blender and blend until completely liquified.
- Line a roasting pan with foil and place the roasting rack in the pan. Place the pork, skin side down on the roasting rack. Add 2 cups of water to the bottom of the roasting pan.
- Using a meat injector, inject all of the marinade into the pork.Try not to puncture the skin underneath. I like to go in from the side to make sure I'm not puncturing the skin. Just try to inject as many spots as you can to really get the marinade throughout the entire pork. (If you feel like you've maxed out on the inside of the pork, just take any left over marinade and rub it all over the outside of the pork)
- Cover the pork with foil as tightly as you can to create a seal. Refrigerate overnight or at least for 6 hours. (I prefer overnight but 6 hours will do if you're shorter on time.)
- After marinating, heat your oven to 275. Once heated, add the covered pork and cook for 7 hours.
- After the 7 hours, uncover the pork. It should be falling off the bone easily at this point. You can pull at it with a fork to check.
- Keeping the pork uncovered, set your oven to broil. Broil the top of the pork for about 5 minutes or until it has a nice golden brown color. Using oven mitts and tongs, carefully turn the pork skin side up, and broil the skin side for another 5 minutes or until it's crispy on the top.
- Let the pork rest for 15 minutes before shredding.
AWARD WINNING COMPETITION BARBECUE PORK BUTT RECIPE
Steps:
- Preheat a charcoal grill to 225 degrees F. Carefully edge the coals to 1 side and then add 1/2 cup drained wood chips. Place 1 cup of water in metal drip pan on opposite side.
- Inject the pork butt with brine about every 2-inches and then rub with marinade and dust with Dry Rub. Place the pork on the grill, directly over the drip pan and cook. Be sure to replenish the coals as the temperatures drops, the chips as the smoke dissipates and the water in the drip pan.
- After 6 hours, spray the pork with Cider Mop every half hour. Cook until a thermometer placed into the thickest part of pork reaches 195 degrees F. Transfer to a platter, brush with the sauce and let rest 30 minutes. To serve, slice into 1/2-pound servings, place on plates and serve with extra sauce alongside.
- Combine all ingredients in a bowl until the salt and sugar dissolve and then place into meat syringe for immediate brining or reserve, refrigerated, for later use.
