Here's a wonderful way to top off a great meal-a rich chocolaty cake that's not overly sweet. Mom served it with a scoop of ice cream or cream poured over. I'd always have room for a serving of Hot Fudge Cake. -Vera Reid, Laramie, Wyoming

1 cup all-purpose flour
3/4 cup sugar
6 tablespoons baking cocoa, divided
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup 2% milk
2 tablespoons canola oil
1 teaspoon vanilla extract
1 cup packed brown sugar
1-3/4 cups hot water
Ice cream or whipped cream, optional

Steps:

  • Preheat oven to 350°. In a large bowl, whisk flour, sugar, 2 tablespoons cocoa, baking powder and salt. In another bowl, whisk milk, oil and vanilla until blended. Add to flour mixture; stir just until moistened., Transfer to an ungreased 9-in. square baking pan. In a small bowl, mix brown sugar and remaining cocoa; sprinkle over batter. Pour hot water over all; do not stir. , Bake 35-40 minutes. Serve warm. If desired, top with ice cream.

Ever since my mother-in-law made a white cake with cold water, I've fallen in love with cakes made with that way. What is it about the cold water and cakes? The decandant caramel pecan topping makes this a heavenly delight! Don't know about you, but I just can't resist a great chocolate cake. I tell people the honey makes it healthier for us. Note: Cook time does not include the time to cook the topping or the glaze.

1/2 cup butter, softened
1/4 cup sugar
3/4 cup honey
1/8 teaspoon salt
1/2 cup cocoa
1/3 cup cold water
2 1/2 cups sifted cake flour
1 cup cold water
1 teaspoon baking soda
2 tablespoons boiling water
3 egg whites
2/3 cup brown sugar, packed firmly
1 1/2 teaspoons flour
2 egg yolks
2/3 cup milk
1 tablespoon butter
1/2 cup pecans, chopped
1 (1 ounce) unsweetened chocolate square, chopped
1 cup sugar
1/4 cup butter
1/3 cup milk
1/8 teaspoon salt
1/2 teaspoon vanilla
3/4 cup sugar

Steps:

  • Cake Batter:.
  • In a large bowl, cream together butter, 1/4 cup sugar, honey, and salt until light and fluffy.
  • In a small bowl, combine cocoa and 1/3 cup water. Add to the creamed mixture, blending well. Add cake flour alternately with 1 cup water; beat well after each addition.
  • In a small dish, combine baking soda and 2 tablespoons water. Stir into the batter.
  • In separate bowl, beat egg whites until frothy. Gradually beat in 3/4 cup sugar. Fold gently into cake batter. Pour batter into greased and floured 13 x 9 x 2-inch baking pan.
  • Bake in preheated 350 degree oven about 50 minutes or until cake tests done. Remove and place on wire rack to cool. When completely cool, spread cake with the caramel pecan topping. Then pour hot chocolate glaze over topping. Allow to cool and set before serving.
  • Caramel Pecan Topping:.
  • In a heavy 2-qt. saucepan, combine brown sugar, flour, egg yolks, milk, and butter. Cook over medium heat, stirring occasionally, until thick -- about 15 minutes. Remove from heat and stir in chopped pecans. Cool.
  • Chocolate Glaze:.
  • In heavy 2-qt. saucepan, combine chopped, square unsweetened chocolate with sugar, butter,milk, and salt. Cook over medium heat, stirring contstantly until mixture boils for 1 minute. Remove from heat and stir in vanilla. Immediately pour this glaze evenly over the Caramel Pecan Topping. Work quickly as the glaze hardens rapidly.

125g salted butter, plus extra for the tin
397g can condensed milk
460g light muscovado sugar
150ml whole milk
2 tsp vanilla bean paste

Steps:

  • Butter and line a 20cm square cake tin with baking parchment. Put the butter, condensed milk, sugar and milk in a large saucepan over a low heat. Stir continuously until the sugar dissolves.
  • Increase the heat and bring to the boil. Bubble for 10 mins, stirring all the time until the mixture reaches 115C on a sugar or probe thermometer. Remove from the heat and leave to cool to 110C. Add the vanilla, then beat in a stand mixer or with an electric hand whisk until it cools to 60C. This will help break up any large sugar crystals. The fudge should be thick and matte-looking.
  • Spoon the fudge into the prepared tin and press down with a spoon to smooth the surface. Leave to set, then cut into squares. Will keep for up to three weeks in an airtight container.

150ml sunflower oil, plus extra for the tin
175g self-raising flour
2 tbsp cocoa powder
1 tsp bicarbonate of soda
150g caster sugar
2 tbsp golden syrup
2 large eggs, lightly beaten
150ml semi-skimmed milk
100g unsalted butter
225g icing sugar
40g cocoa powder
2½ tbsp milk (a little more if needed)

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Oil and line the base of two 18cm sandwich tins. Sieve the flour, cocoa powder and bicarbonate of soda into a bowl. Add the caster sugar and mix well.
  • Make a well in the centre and add the golden syrup, eggs, sunflower oil and milk. Beat well with an electric whisk until smooth.
  • Pour the mixture into the two tins and bake for 25-30 mins until risen and firm to the touch. Remove from oven, leave to cool for 10 mins before turning out onto a cooling rack.
  • To make the icing, beat the unsalted butter in a bowl until soft. Gradually sieve and beat in the icing sugar and cocoa powder, then add enough of the milk to make the icing fluffy and spreadable.
  • Sandwich the two cakes together with the butter icing and cover the sides and the top of the cake with more icing.

200g caster sugar
200g softened butter
4 eggs , beaten
200g self-raising flour - swap 2 tbsp of the flour for 2 tbsp sifted cocoa powder (we used Green & Black's)
1 tsp baking powder
2 tbsp milk
200ml double cream
50g butter
3 tbsp clear honey
200g dark chocolate (use 70% cocoa solids if you can), broken into pieces
top with shaved or grated chocolate

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Butter two 20cm sandwich tins and line with non-stick baking paper. In a large bowl, beat all the cake ingredients together until you have a smooth, soft batter.
  • Divide the mixture between the tins, smooth the surface with a spatula or the back of a spoon, then bake for about 20 mins until golden and the cake springs back when pressed. Turn onto a cooling rack and leave to cool completely.
  • For the fudge frosting, heat the cream until it just begins to boil. Take off the heat and add butter, honey and chocolate (broken into pieces).
  • Leave to melt for 5 mins, then stir briefly to combine - don't over-mix or it will lose its shine. Sandwich the cakes with a third of the just-warm frosting and spread the rest over the top and sides. Top with shaved or grated chocolate, if you like.

Having a party and need alot of cake? This is a yummy fudgy cake made with honey for an extra special flavor. You will need to mix this is a bowl that can easily hold a gallon. You can use a big stockpot for this and use a drill with your beater in it for a mixer. Cooking time includes a cool-down time for the cake.

2 lbs flour
2 tablespoons baking soda
1 1/3 tablespoons salt
1 3/4 cups cocoa
2 1/4 cups butter
5 cups honey
6 large eggs
2 3/4 cups cold water
1 1/3 tablespoons vanilla extract

Steps:

  • Sift dry ingredients together. Set aside.
  • Cream butter until light and fluffy. Slowly add honey while continuing to cream.
  • Add eggs one at a time beating well after each addition.
  • Combine water and vanilla and add to creamed mixture alternating with flour mixture.
  • Pour into greased and floured baking pans. This will fit into one 18x26x1 inch pan. You can use smaller pans (four 9x13).
  • Bake at 325 fro 25 minutes.
  • Cool and cut cake into pieces 12 x 8. (or 6 x 4 for the 9x13 pans).
