The absence of white sugar in these bars appealed to me when I found the recipe. I played with it a bit to reduce the fat content and make them more healthful but just as tender and delicious as the original. The mix of dried fruits gives these a natural sweetness that is just wonderful. You can replace the cinnamon and nutmeg with an equivalent amount of Recipe #145505. Noe that the preparation time includes time to cool the dried fruit mix after simmering, so it is not as labor intensive as the times imply.)

1 cup water
1/2 cup chopped dates (or other dried fruit)
1/2 cup chopped prune (or other dried fruit)
1/2 cup raisins (use golden or dark)
1/4 cup butter
1/3 cup apple butter or 1/3 cup unsweetened applesauce
1 egg
2 egg whites
1 teaspoon vanilla (if you are using almonds as your nuts, almond extract would work well here)
1 cup whole wheat flour (a combination would also work) or 1 cup all-purpose flour (a combination would also work)
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/3-1/2 cup chopped nuts

Steps:

  • Bring 1 cup water to boil in a medium suacepan along with the butter and dried fruit . Reduce to a simmer and cook for 5 minutes. Mix in the apple butter or apple sauce. Allow the fruit combination to cool 10-20 minutes. (Tip: Dried fruit can be quite sticky when chopping. Lightly spray your knife with cooking spray first and the task will go more quickly.).
  • Mix together the flour, baking soda, spices and nuts in a bowl. Beat together the egg and egg whites. Add beaten eggs, vanilla, and fruit slurry to the bowl with the flour mix and stir until combined.
  • Bake in 9 inch pan square pan at 350 degrees for 25 to 30 minutes.
  • Allow to fully cool before trying to cut and serve.

A real standout at the pot-luck dessert table amid the brownies and chocolate chip cookies. Very easy to make, but do it the night before to give them time to cool ALL the way. They're better the next day anyway. If you need to leave out the nuts just up the amount of fruit.

1 cup dried fruit, chopped
4 eggs, beaten
1 lb brown sugar
1/4 teaspoon salt
1 teaspoon vanilla
2 cups flour
2 cups nuts, chopped

Steps:

  • prepare cookie sheet or jelly-roll pan by lining with foil and spraying with cooking spray; they'll never come out of the pan otherwise!
  • preheat oven to 400°F.
  • steam dried fruit for about 15 minutes (I like to use Sun Maid Fruit Bits to get a variety and avoid the chopping).
  • beat eggs.
  • heat eggs and sugar in saucepan until sugar is melted.
  • remove from heat and add salt and vanilla.
  • add flour 1/2 cup at a time and stir until combined.
  • stir in nuts (any kind, I like pecans).
  • pour into prepared pan, taking care to fill the corners, the mixture is very sticky.
  • bake 15-16 minutes.
  • let cool completely.
  • turn tray upside down onto cutting board, gently peel foil, then cut into bars.

Yield Makes 12 bars

Number Of Ingredients 7

1/2 cup whole flaxseed (or 2/3 cup ground flax)
1/2 cup peanut butter
1/3 cup honey
Pinch salt (two pinches if peanut butter is unsalted)
1/3 cup water
2/3 cup dried fruits (raisins, cranberries, chopped apricots, etc.)
2/3 cup nuts or seeds (sunflower, pumpkin, chopped almonds, etc.)

Steps:

  • 1. Preheat oven to 325.
  • 2. Grind whole flaxseed in a coffee or spice grinder. Combine with peanut butter, honey, salt, and water in large bowl and stir to combine.
  • 3. Add dried fruits, nuts and seeds in whatever combination you like. Batter will be very stiff.
  • 4. Spray 12 cup muffin tin with nonstick spray and divide batter evenly into cups. Use damp fingers to press batter into cups and flatten tops.
  • 5. Bake 25 to 30 minutes until tops are dry and edges are a deep, toasty brown (bars will not rise). Cool completely and store in air-tight container for up to two weeks.

I really wanted to come up with my own granola bar recipe, so I got some ideas from other recipes and came up with my own. I don't like super sweet granola bars, so these are not particularly sweet, but they can be made sweeter with more sugar, or different dried fruits! If you don't have walnuts, sunflower seeds, cranberries, or raisins, any sort of nuts or dried fruits will work. Experiment! These bars are delicious! They are a little crisp on the outside, and chewy on the inside, and just a little sweet and a little tart. They're certainly healthier (and cheaper) than most store-bought granola bars!

parchment paper, for lining
2 cups quick-cooking oats
1 cup cereal
1 cup whole wheat flour
1 cup raw unsalted walnuts
1 cup unsalted sunflower seeds
1/4 cup raisins
1 cup cranberries, boiled and mashed
2 egg whites
2 eggs
2 tablespoons vegetable oil
2 tablespoons maple syrup
2 tablespoons honey
1/2 cup light brown sugar
1 1/2 teaspoons cinnamon
1 1/2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350*F. Line a 9x13" baking pan with parchment paper.
  • Mix dry ingredients in a large bowl (oats, flour, cereal, walnuts, sunflower seeds, and raisins). By "cereal", I mean the kind of cereal you eat cold with milk (or soy milk, etc.). Any kind will work!
  • In a separate bowl, mix egg whites, eggs, and vegetable oil together. Add maple syrup and honey. If you don't have/don't want to use maple syrup and honey (or have another sweetener you want to use), just use 1/4 cup of that sweetener.
  • Add bananas and boiled cranberries to the bowl of wet ingredients and mix well.
  • Add wet ingredients to dry ingredients and mix thoroughly.
  • Stir in brown sugar, cinnamon, and vanilla extract. Depending on how sweet you want the bars to be, you may want adjust the amount of brown sugar. 1/2 cup of brown sugar does not make the bars particularly sweet because of the boiled cranberries, so you might want to add more if you like very sweet bars.
  • Put granola bar mixture into lined 9x13" pan, and press firmly. Pack this very tightly, as this will help them hold together!
  • Place pan in the oven and bake for 25-35 minutes, or until golden brown.
  • Remove pan from oven and let cool completely (it could take up to an hour).
  • Once the pan has cooled, lift the granola bars out of the pan by grabbing the parchment paper. Place it on a cutting board/cutting surface.
  • Cut the bars into whatever size you like, and enjoy!

2 1/2 cups rolled oats
1 cup chopped nuts (I use walnuts, almonds and a small handful of sunflower seeds)
1 cup chopped dried fruit (I use dried apricots and dried cherries)
1/2 cup honey
3 tablespoons brown sugar
2 tablespoons butter (optional)
2 teaspoons vanilla
2 teaspoons cinnamon
1 teaspoon salt

Steps:

  • Preheat the oven to 350 degrees.
  • Grease an 8x8 glass pan.
  • Place nuts and oats on a baking sheet, and bake for about 12 minutes or until lightly toasted.
  • While oats and nuts are toasting, place in a saucepan over medium heat the honey, brown sugar, butter, vanilla, cinnamon and salt.
  • Stir until the mixture bubbles, and keep it boiling and stirring for about 2 minutes.
  • When oats and nuts come out of the oven, turn it down to 325.
  • Take the pan off the heat, and when the oats are finished, pour them right into the saucepan and mix to combine honey mixture evenly.
  • Stir in the chopped dried fruit.
  • Press mixture into the glass pan with the back of a spoon - it will be pretty sticky.
  • Bake at 325 for 20 minutes, and let cool completely before cutting.
  • Wrapped in saran wrap, these will keep for at least a couple of weeks!
