12 ounces fresh mozzarella cheese, cut into 1/4-inch dice
1 1/3 lbs avocados, cut into 1/4-inch dice
1 lb tomatoes, cut into 1/4-inch dice
salt, as needed
balsamic vinegar, as needed
baby greens, as needed
hot chili oil, as needed

Steps:

  • In a 3-inch ring mold, layer 1/4 cup mozzarella, 1/3 cup avocado and 1/4 cup tomato.
  • Repeat in remaining ring molds.
  • Using a spatula, slide each mold onto a rack over a sheet pan to drain; refrigerate until serving.
  • Place baby greens on plates, invert ring mold onto salads.
  • Place balsamic vinegar and chili oil on table to pass around. Enjoy!

Best when using fresh and ripe ingredients, for instance your own garden or a farmer's market. Ratio of the ingredients is hard to mess up, very flexible recipe with room for personal taste variations.

4 ripe tomatoes, cubed
3 (4 ounce) balls of fresh mozzarella cheese, cubed
2 avocados - peeled, pitted, and cubed
3 tablespoons balsamic vinegar
3 tablespoons red wine vinegar
½ teaspoon dried basil
1 teaspoon white sugar
salt and ground black pepper to taste

Steps:

  • Lightly toss tomato, mozzarella cheese, and avocado cubes in a salad bowl. Mix balsamic vinegar, red wine vinegar, dried basil, sugar, salt, and black pepper in a separate bowl. Pour dressing over salad and mix again to coat.

4 tablespoons olive oil
ground black pepper to taste
10 ounces mozzarella cheese, thickly sliced
8 leaves fresh basil, torn into strips

Steps:

  • Chop tomatoes in half, then slice finely; arrange on four plates. Trickle a tablespoon of olive oil over each serving, and sprinkle with black pepper. Lay slices of cheese over tomatoes, and strips of basil over cheese. Cover with plastic wrap, and refrigerate for 30 minutes before serving.

I enjoyed this recipe at a picnic 2 years ago, and finally asked my friend for the recipe. After craving it for so long, I was surprised at how easy it is to make. I hope you enjoy it as much as I do. Cooking time is chill time.

3 avocados, ripe
3 tomatoes, vine ripened
8 ounces lowfat mozzarella cheese (block)
1 bunch fresh basil
salt
pepper

Steps:

  • Slice avocado in half lengthwise, around the pit. Twist and separate halves. Whack pit with knife and twist to remove. Holding one of the halves in the palm of your hand, slice the avocado lengthwise, being careful not to slice through the skin. Slice crosswise to make a nice dice. Using a spoon, scoop the diced avocado into a medium size bowl. Repeat with 2nd half of avocado.
  • Dice tomato and mozzarella, mix with avocado.
  • Separate basil leaves from stalk and stack on top of each other. Roll them up lengthwise and slice thin. Separate and sprinkle into avocado mixture and toss. Toss with salt and pepper to taste. Chill for about an hour and serve.
