CHILLED AVOCADO SOUP WITH ROASTED POBLANO CREAM

Chilled Avocado Soup with Roasted Poblano Cream image

Provided by Cynthia Nims

Yield Makes 14 mini soups

Number Of Ingredients 14

Soup
2 small ripe avocados
2 cups vegetable or chicken broth
1/3 cup thinly sliced green onion, white and pale green portions
1/4 cup freshly squeezed lime juice
2 tablespoons tequila
Few dashes Tabasco
Salt
Slivered green onion tops, for garnish (optional)
Roasted Poblano Cream
1 poblano chile
3 tablespoons sour cream
1/4 teaspoon ground cumin
Salt

Steps:

  • To make the soup, peel, pit, and coarsely chop the avocados. Purée them in a food processor with 1/2 cup of the broth, the green onion, lime juice, and tequila, scraping down the sides as needed. With the motor running, add the remaining broth. Season to taste with Tabasco and salt. Transfer the soup to a large lipped measuring cup or bowl and refrigerate for at least 2 hours.
  • To make the roasted poblano cream, roast the chile under the broiler until the skin blackens, turning occasionally to roast evenly, 10 to 15 minutes total. Put the chile in a plastic bag, securely seal it, and set aside to cool. When the chile is cool enough to handle, peel away and discard the skin. Remove the core and seeds and chop the chile.
  • Put the chopped poblano in the food processor with the sour cream, cumin, and a pinch of salt. Process until very smooth, scraping the sides once or twice. Transfer to a small bowl and refrigerate until you are ready to serve.
  • To serve, pour the avocado soup into tall shot glasses or espresso cups of about 1/4-cup capacity and top each with a small spoonful of the poblano cream. Top the cream with a pinch of green onion slivers and arrange on a tray to serve.

ULTRAFAST AVOCADO SOUP

Ultrafast Avocado Soup image

Little or no cooking is one way to keep the kitchen cool in the summer, but if the food you produce is cool (and delicious, of course), that's a real plus. Cold soups are a common solution. It's difficult to imagine one simpler than this one, and impossible to imagine one richer and creamier.

Provided by Mark Bittman

Categories     soups and stews, main course, side dish

Time 10m

Yield 4 servings

Number Of Ingredients 6

About 2 cups chopped ripe avocado flesh (3 or 4 small avocados)
3 cups milk, preferably whole
Salt and cayenne pepper to taste
2 tablespoons freshly squeezed lime juice, or to taste
A handful or more of small cooked shrimp
Chopped fresh cilantro or parsley leaves

Steps:

  • Put chopped avocado in a blender. Add half the milk, a large pinch of salt and a small pinch of cayenne; process to a purée. Add remaining milk and purée, then chill for up to 6 hours if you have time (press a piece of plastic wrap to surface of soup so it does not discolor).
  • Add lime juice, taste, then adjust seasoning, if necessary. Garnish with shrimp and parsley or cilantro, and serve.

SIMPLE AVOCADO SOUP

Simple Avocado Soup image

Provided by Linda West Eckhardt

Categories     easy, lunch, quick, soups and stews, appetizer

Time 10m

Yield 4 servings

Number Of Ingredients 5

1 very ripe avocado, peeled and seeded
1/2 pint whipping cream
2 cups hot chicken broth
Salt and white pepper to taste
4 tablespoons dry sherry

Steps:

  • In a food processor or blender, puree an extreme ripe avocado - one to the point of being dark and squishy soft all over.)
  • Add cream slowly, then pour in hot broth. Mix just until blended. And salt and white pepper to taste.
  • Into the bottom of each soup bowl place one tablespoon of dry sherry, then ladle soup over and serve. This takes about two minutes from the time you first notice that the avocado is going to go bad if you don't use it immediately. It is also delicious cold, but it doesn't work out to add cold chicken broth because the chicken fat will not blend properly; it is necessary to heat the broth, then cool the soup.
