CORN AND AVOCADO SALAD

Kosher salt
4 ears of corn, shucked
4 ripe Hass avocados, seeded, peeled, and 1/2-inch diced
Juice of 1 lemon
2 pints grape tomatoes, sliced in half lengthwise
2 red bell peppers, seeded and 1/2-inch diced
1 cup chopped red onion
1/4 cup seeded and minced jalapeno peppers, seeded
1 lime, zested
1/2 cup freshly squeezed lime juice
1/4 cup good olive oil
1 teaspoon freshly ground black pepper
1 teaspoon minced garlic
1/2 teaspoon ground cayenne pepper

Steps:

  • In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone. Drain and immerse the corn in ice water to stop the cooking and to set the color. When the corn is cool, cut the kernels off the cob, cutting close to the cob, and place them in a large bowl.
  • Toss the avocados with the lemon juice and add them to the bowl with the corn. Add the tomatoes, red peppers, onion, jalapeno peppers and lime zest to the bowl.
  • Whisk the lime juice, olive oil, 2 teaspoons kosher salt, black pepper, garlic, and cayenne pepper together in a small bowl and pour over the vegetables. Toss well. Keep refrigerated until ready to serve.

4 swordfish steaks, about 150g each
1 shallot, chopped
2 ears corn, corn from 2 cobs (can be substituted with canned corn)
1/2 red bell pepper, finely diced
1 large avocado, diced
1/4 cup chopped fresh coriander (cilantro)
1/4 cup white wine
2 tablespoons lemon juice
2 tablespoons red wine vinegar
1 tablespoon olive oil

Steps:

  • Heat a non-stick pan to high, add the oil and sear the swordfish for 1 to 2 minutes or until starting to soften. Remove from pan. Cover with foil and keep warm in a low oven.
  • Add the shallot, corn and red pepper to pan and cook, stirring for 1 to 2 minutes or until starting to soften.
  • Add the avocado, coriander and white wine. Cover and steam for 1 minute until heated through.
  • Place avocado corn mixture on heated plates and top with swordfish.
  • Add lemon and vinegar to the pan and whisk into pan juices. Pour over the fish and serve immediately.

1 cup frozen corn kernels
1 tablespoon vegetable oil
2 tablespoons water
1 teaspoon ground cumin
1 pinch cayenne
1 avocado, peeled and cut into 1/2-inch cubes
2 tablespoons fresh lime juice or 2 tablespoons fresh lemon juice
1/2 medium red bell pepper, chopped
2 tablespoons red onions, minced
salt, to taste
1 dash hot sauce (optional)
chopped cilantro (optional)

Steps:

  • In a skillet or saucepan, combine the corn, oil, water, cumin, and cayenne. Cook, covered, on medium heat for 4 minutes, or until the corn is tender. Uncover and cook for an additional minute or two to evaporate the excess moisture. Set aside to cool.
  • Place avocado in a medium bowl, and coat with lemon or lime juice. Stir in the red onion, bell pepper, and corn mixture. Add salt and optional hot sauce to taste. Garnish with cilantro as desired.
  • Serve immediately, or chill for 30 minutes if desired.

1 cup cut corn, fresh or frozen
1 tablespoon vegetable oil
2 tablespoons water
1 teaspoon ground cumin
1 pinch cayenne or 1 pinch red pepper flakes
1 avocado
2 tablespoons fresh lime juice
1/2 medium red bell pepper
2 tablespoons minced red onions
salt
1 dash hot pepper sauce
chopped fresh cilantro

Steps:

  • In a large skillet, add corn, oil, water, cumin, and cayenne or red pepper flakes.
  • Over medium heat, cook, covered, for 5 minutes or until the corn is tender.
  • Uncover and continue to cook for a few minutes to evaporate the excess moisture.
  • Set skillet aside to cool.
  • Slice the avocado in half lengthwise and remove the pit.
  • Peel the avocado and chop into 1/2 inch pieces and place in a large bowl.
  • Add in the lime juice and stir.
  • Chop the bell pepper into 1/2 inch pieces and add to the bowl.
  • Add the red onion and cooked corn; stir to combine.
  • Add salt and hot pepper sauce to taste.
  • Sprinkle fresh chopped cilantro on top.
  • Serve immediately or chill, then serve.

This recipe comes from the 20th anniversary New Revised Edition of the Moosewood Cookbook, published in 1997. I made it last night & enjoyed it enough to share it, but saw it had already been posted..then apon closer inspection saw that the 2 recipes were quite different, so I AM sharing it after all :) I used 1/2 each of red and green pepper, sub'd red onion for the scallions, added a carrot & left out the cucumber & horsradish. The original recipe called for 1 cup of parsley & 1/4 cup of cider vinegar but I've halved these to suit our taste. Prep time is 45 mins, depending on how much stuff you choose to put in it.

2 hardboiled egg, chopped
1 medium bell pepper, diced (any colour)

1/4 cup fresh dill, minced (packed, or 1 tblsp dried)

1 cup cashews, lightly toasted (optional)

  • In a small- med bowl mix together the mayonnaise, yogurt (or sour cream), parsley, dill, salt, pepper, mustard powder, tarragon and cider vinegar.
  • Combine well with other ingredients in a larger bowl, cover and chill.

1 cup frozen corn
1 tablespoon olive oil
2 tablespoons water
1 teaspoon ground cumin
1 pinch cayenne
1 medium avocado
2 tablespoons fresh lime juice
1/2 medium red bell pepper
2 tablespoons red onions, minced
salt

Steps:

  • Combine the first 5 ingredients in a small saucepan. Cover and cook for 5 minutes on medium. Continue cooking for 2 minutes uncovered to evaporate excess water. Remove from heat and cool.
  • Cut avocado in half and remove pit. Cut avocado into 1/2 inch cubes. (Do this by making 1/2 inch spaced cuts in the avocado crosswise and lengthwise. Be sure not to cut into the skin of the avocado. Then use a spoon to scoop the flesh out.)
  • Put the avocado cubes in a medium bowl. Add lime juice and stir gently. Chop the bell pepper and add to the bowl. Add cooked corn and red onion to the bowl. Gently stir and serve.
  • This salad is best eaten on the day it is made because the avocado tends to darken by the next day.
