AVOCADO AND SWEET POTATO "HASH"



Avocado and Sweet Potato

Each and every ingredient's flavor comes through every bite. When I planted my avocado trees I went on a search for new recipes. This is one of them.

Number Of Ingredients 8

2 sweet potatoes, cooked and diced
1 avocado, peeled pitted and diced
4 pieces bacon, cooked and chopped
1 tablespoon whole grain mustard
1/4 cup red onion, diced
2 tablespoons pecans, chopped
kosher salt (it called for 1 tablespoon, I can't use that much)
1 teaspoon black pepper

Steps:

  • Cool sweet potatoes in an ice bath.
  • Having cooked bacon in medium skillet, remove and set aside. Add sweet potatoes and caramelize on each side. Remove from heat.
  • Add red onion, mustard, salt and pepper and toss.
  • Chop bacon to 1/4 inch strips and mix into hash.
  • Fold in parsley, pecans and avocado.
  • Season to taste.
  • Serve warm to room temperature.

In this hash variation, the combination of caramelized sweet potatoes, avocado, and crisp bacon makes a delicious side dish or light main dish.

2 medium sweet potatoes, diced
1 fresh, ripe Hass avocado halved, pitted, peeled and diced
4 slices double smoked bacon
5 sprigs parsley
1 tablespoon whole grain mustard
¼ red onion, diced
2 tablespoons toasted pecans, lightly chopped
1 tablespoon Kosher salt (or to taste)
1 teaspoon cracked black pepper (or to taste)

Steps:

  • Place sweet potatoes in medium pot of cold water seasoned with salt and pepper; bring to boil over medium heat; remove sweet potatoes; cool in ice bath.
  • In medium skillet, render bacon over low heat; remove when crisp; add cooled and dried sweet potatoes to skillet. Caramelize sweet potatoes on each side, remove from heat.
  • Add red onion, mustard, season with salt and pepper; toss lightly to coat. Chop bacon crosswise into 1/4 inch strips; mix into 'hash'. Fold in parsley, pecans and avocado. Season to taste with salt and pepper. Serve warm to room temperature.

This simple quick-fix supper is a great way to use your spiralizer. Sweet potato, avocado, a runny egg and a drizzle of spicy sriracha make a delectable dinner

1 large ripe avocado
1 lime , juiced
1 tbsp olive oil
1 red onion , ends trimmed and spiralized on a flat blade
2 medium sweet potatoes , ends trimmed and spiralized into thin noodles
2 large eggs
sriracha , for drizzling

Steps:

  • Smash up the avocado with a fork, leaving some pieces chunky, then add the lime juice and season to taste.
  • Heat the oil in a large, non-stick frying pan over a medium heat. Add the onion and cook for 2 mins, then stir in the sweet potato. Season and press the potato into the pan with the back of a wooden spoon. Cook for 10-15 mins, stirring occasionally, until the potato is softened and crisping at the edges.
  • Make two spaces in the pan, crack in the eggs and cook for 2-3 mins until the whites are just set and the yolks runny. Dollop on the avocado and drizzle with sriracha to serve.
