1 cup chili sauce
2 tablespoons minced garlic

Steps:

  • Place onion, red bell pepper, green bell pepper, and chicken tenders in the bottom of the crock pot.
  • Pour barbeque sauce and chili sauce over the vegetables and chicken.
  • Stir garlic and pineapple chunks through the barbeque sauce.
  • Cook on High 4 to 5 hours.

3 slices bacon, cooked and crumbled
4 red potatoes, peeled and cut into 1/2 inch chunks
¼ cup butter
½ onion, chopped
3 cloves garlic, coarsely chopped
½ cup milk
¼ cup all-purpose flour
3 cups milk
1 cup sour cream
¼ cup shredded Cheddar cheese
¼ cup grated Parmesan cheese
2 tablespoons seasoned salt
1 tablespoon chopped fresh parsley
1 tablespoon crushed red pepper flakes
½ teaspoon celery salt
½ teaspoon dried basil
1 tablespoon chives for garnish

Steps:

  • Preheat a large slow cooker by turning it to the High setting and covering with the lid.
  • Place the cut-up potatoes in a microwave safe bowl, and microwave on High for about 8 minutes, until the potatoes are cooked and steaming hot.
  • While the potatoes are cooking, place the butter in the preheated slow cooker, and cook and stir the onions and garlic for about 5 minutes, until the onions turn golden. Stir in 1/2 cup of milk, and whisk in the flour until smooth. Gradually whisk in the remaining 3 cups of milk, and let the mixture come to a simmer in the slow cooker. Simmer for about 10 minutes, until the soup begins to thicken.
  • Stir in the hot cooked potatoes, crumbled bacon, sour cream, Cheddar cheese, Parmesan cheese, seasoned salt, parsley, red pepper flakes, celery salt, and dried basil. Stir to mix the soup well, reduce the slow cooker setting to Low, cover, and cook for 3 hours, stirring occasionally. Sprinkle with chives and serve.

8 oz bamboo shoots
1/4 cup rice vinegar (or more to taste)
1/4 cup soy sauce (reduced-sodium)
2 teaspoons dark soy sauce
4 cloves garlic cloves (minced)
1 tablespoon fresh ginger (minced)
1 teaspoon red chili sauce
8 ounces firm tofu (pressed and cut into 1/2-inch cubes)
4 green onions (thinly sliced)
1 teaspoon sesame oil
1 teaspoon sugar
1/2 teaspoon ground white pepper (or to taste)
2 large eggs (well whisked - but not foamy)
1 cup chicken broth (or veggie broth)
1/4 cup cornstarch

Steps:

  • Add all the ingredients from the "Slow Cook" section to the crockpot, except the eggs.
  • Cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  • In a measuring cup combine cornstarch with broth and whisk until fully dissolved.
  • Next, 30 minutes towards the end of the cooking, stir in the cornstarch slurry, stir to combine.
  • Drizzle the beaten egg and stir to form egg ribbons.
  • Garnish with green onions and serve.

7-8 cups of vegetable broth (I used 7 tsp of Vegetable Better Than Bouillon + 7 cups of water; NOTE: using 7 cups vs. 8 creates an even more intense hot & sour flavor of the soup)
1 tbsp of canola oil
3 tbsp of rice vinegar
1 tbsp of red wine vinegar
1/4 cup of reduced-sodium soy sauce
2 tsp of chili garlic sauce (or Sriracha will work fine too!)
1 tsp of sesame oil
1.5 tsp of granulated sugar
2 tsp of ground ginger
1 tsp of white pepper
1.5 tsp of Kosher salt
1 bunch (or about 5 strands) of scallions, sliced
16oz of Baby Bella (Crimini) mushrooms, sliced (you can also use Shiitake mushrooms, just remove the stems)
16oz can of bamboo shoots, drained
8-10oz bag of baby spinach
8-14oz of firm or extra firm tofu, cut into small cubes
1/4 cup of cornstarch + 1/4 cup water, for a slurry
2 large eggs, whisked

Steps:

  • Add ALL the ingredients to the Instant Pot with the spinach added last EXCEPT for the egg, tofu and cornstarch slurry (those three come later). The pot will be filled to the brim once the spinach is added, so give everything a very good stir and make sure the spinach is mixed in with the broth and everything else
  • Secure the lid, hit "Manual" or "Pressure Cook" High Pressure for 5 minutes (it will take about 10 minutes to come to pressure due to everything in this loaded pot!) Quick release when done
  • Once the lid is removed, hit "Sauté" and Adjust so it's on the "More" or "High" setting. Once it begins to bubble, add the cornstarch slurry, stir well for about 2 minutes and then turn the Instant Pot to "Keep Warm"
  • Lastly, add in the tofu and stir followed by the egg mixture and stir for about a minute until egg ribbons form
  • Ladle into bowls and enjoy this INCREDIBLE soup!
