AVOCADO, CREAM CHEESE, AND ALFALFA SPROUT SANDWICH



Avocado, Cream Cheese, and Alfalfa Sprout Sandwich image

This sandwich is modeled after a cafeteria sandwich I had years ago, made with whole wheat bread, cream cheese, avocados, cayenne, and alfalfa sprouts. I've added the crusty bread, olives and onion. I like that it is layered so you get lots of different flavors and textures from top to bottom, and it holds together best if you use thick-sliced, hefty bread and let it rest and chill a while. The variations are endless -- add garlic or chives or herbs to the cream cheese; mirror-image the ingredients for a fatter sandwich; add bacon or cheese; for a spicier bite substitute radish sprouts for some of the alfalfa sprouts, etc.

2 slices whole wheat bread (do not use soft bread, lightly toasted if desired or needed to give it a bit of "substance")
4 -8 tablespoons cream cheese (sliced or brought to room temp until spreadable)
1/2 avocado, sliced lengthwise in 1/4 inch slices
1 -2 teaspoon lemon juice
1 pinch coarse salt
1 pinch lemon pepper (substitute coarse black pepper and a pinch of fine lemon zest)
6 black olives, sliced (optional)
1/2 cup alfalfa sprout (approximately one handful)
1 pinch cayenne
1 slice onion (optional)

Steps:

  • Spread both slices of bread with cream cheese or cover with cream cheese slices.
  • Slice the avocado in the half shell, lengthwise, and sprinkle with lemon juice.
  • Fan the avocado slices onto one slice of bread, and sprinkle with salt, lemon pepper, and (optional) black olive slices.
  • Top with alfalfa sprouts, press down slightly, sprinkle with cayenne, and (optional) onion slice.
  • Top with remaining bread slice and press down slightly, then wrap tightly and keep chilled.

9 grain bread with sprouts, tomato and red onion
2 Avocados, diced
2 scallions, diced
1 cucumber, diced
4 radishes, diced fine
2 tablespoons tamari
2 teaspoons sesame oil
1/4 teaspoon garlic, minced
2 tablespoons nutritional yeast
1/2 cup bean or radish sprouts
1/2 teaspoon sesame meal

Steps:

  • In a blender place peeled avocado, add a pinch of chile powder, juice of one lime, salt and pepper, and add some nonfat yogurt. Thin with ice water if necessary. Blend to a pouring consistency. Serve over mesclun, pink grapefruit segments and diced red pepper.
  • Cut avocados in half; remove pits and gently scoop out insides, leaving shell intact. Combine the avocados, scallions, cucumbers, radishes, tamari, oil, garlic, and add to shells. Top with yeast, sprouts and sesame meal.
  • Oxygen, or exposure to air is what causes your guacamole to turn brown. Making guacamole, or any avocado dish in advance make certain that you block out the air by making sure the surface of your dip is in contact with the plastic wrap.

This is one of my favorite sandwiches! I usually use a wonderful white horseradish cheddar cheese rather than provolone, but it's kind of hard to find and the provolone is tasty, too. :) I've tried it on a lot of different breads, but I think that Oroweat's Carb Counting Multigrain Bread (when I'm being good) and Poulsbo Bread (when I'm bad) are my favorites for this sandwich.

Number Of Ingredients 10

2 slices potato bread or 2 slices whole grain bread (what-have-you)
1/2 teaspoon mayonnaise (Best Foods, Hellmann's, or Vegenaise)
1/2 teaspoon Dijon mustard
2 -3 drops balsamic vinegar, to taste
1 slice provolone cheese
1 slice prosciutto or 1 slice ham (an extremely thin slice) (optional)
1/2 ripe avocado, pitted,peeled,and in slices
4 slices ripe tomatoes (thin slices)
salt & freshly ground black pepper, to taste (I like a tri-color pepper mix)
1 leaf romaine lettuce or 1/4 cup alfalfa sprout (I often leave this off)

Steps:

  • If you like your sandwiches toasted, go ahead and toast your bread.
  • Mix the mayonnaise, mustard, and balsamic together, then spread it thinly on one side of each slice of bread.
  • Place cheese on a mayo/mustard side of a piece of bread; if including proscuitto, place it on the provolone.
  • Spread the slices of avocado next, then the tomato, and season to taste with salt and pepper; then top with lettuce and the other slice of bread with the mayo/mustard side facing the lettuce.
  • Note: using a fully ripe avocado is very important.
