Nothing says good morning on a crisp fall day like these pumpkin spice waffles. Chopped pecans and a drizzle of pure maple syrup are the perfect topping, but truth be told, I've been known to devour them plain, straight from the waffle iron.

1 1/4 cups milk
3/4 cup 100 percent pumpkin puree (not pumpkin pie filling)
3 tablespoons canola oil
2 tablespoons 100 percent pure maple syrup, plus additional for topping
2 large eggs, separated
1 cup all-purpose flour
1/2 cup whole-wheat flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons pumpkin pie spice
1/4 teaspoon baking soda
1/8 teaspoon salt
Nonstick cooking spray
Chopped pecans, for topping

Steps:

  • Preheat a waffle maker.
  • Whisk together the milk, pumpkin puree, oil, maple syrup and egg yolks. In a separate bowl, whisk together the flours, baking powder, pumpkin pie spice, baking soda and salt.
  • Slowly mix the flour mixture into the pumpkin mixture and stir until smooth, taking care not to overmix.
  • In a separate large bowl, add the egg whites and beat with an electric mixer (or whisk vigorously by hand) until stiff peaks form, 3 to 4 minutes. Gently fold the egg whites into the batter until just combined.
  • Lightly spray your waffle iron with cooking spray or oil, then ladle the waffle mixture in. Cook per the manufacturer's instructions and repeat with the remaining batter. Serve with maple syrup and chopped pecans.

2 cups all-purpose flour
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pinch of ground clove
1/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon coarse salt
3 eggs
1 3/4 cups whole milk
1/2 cup pumpkin puree
1/2 cup (1 stick) unsalted butter, melted and cooled; plus more, softened, for serving
Nonstick cooking spray
Pure maple syrup and toasted pumpkin seeds, for serving

Steps:

  • Preheat oven to 275 degrees. Set a rack on a rimmed baking sheet and place in oven. Preheat waffle iron according to manufacturer's instructions.
  • In a medium bowl, whisk together flour, spices, sugar, baking powder, baking soda, and salt. In a large bowl, whisk together, eggs, milk, pumpkin and melted butter; add flour mixture and mix just until batter is combined.
  • Lightly coat waffle iron with cooking spray. Pour about 1 cup batter into center of iron (amount may vary depending on size of iron), spreading evenly with a spatula. Cook until waffles are golden brown and crisp, 7 to 8 minutes. Remove from iron and quickly toss back and forth from hand to hand to cool slightly and allow waffles to crisp up. Transfer to rack in oven; repeat with remaining batter. Serve with butter, syrup and pumpkin seeds.

12 ounces raspberries
Kosher salt
1 cup pumpkin puree
3 tablespoons virgin coconut oil, melted and cooled slightly, plus more for the waffle iron
1 1/2 teaspoons pure vanilla extract
6 large eggs, beaten
6 tablespoons coconut flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda

Steps:

  • Put half of the raspberries in a small saucepan with a pinch of salt and 2 tablespoons water. Heat over medium-high heat, stirring occasionally, until the raspberries break down and the mixture comes to a boil and thickens to a jamlike consistency, 6 to 8 minutes. Stir in the remaining raspberries off heat. Let stand until ready to serve.
  • Whisk the pumpkin, coconut oil, vanilla and eggs in a medium bowl until completely combined. Vigorously whisk in the coconut flour, cream of tartar, baking soda and 1/4 teaspoon salt until no lumps of dry flour remain.
  • Prepare a waffle iron for medium-high heat and brush both sides with coconut oil. Fill each section of the iron about three-quarters of the way full (there should still be some waffle iron showing). Cook until the waffles are golden brown and slightly crisp, 6 to 10 minutes. Keep the waffles warm in a 200-degree F oven or covered with foil on a plate; repeat with the remaining batter. Serve with the raspberry compote.

1/4 cup wheat germ
1/3 cup granulated sugar
1 tablespoon baking powder
1 teaspoon pumpkin pie spice

1/2 teaspoon fine salt
3/4 cup milk
1/2 cup pumpkin puree
1/4 cup melted butter
1/4 cup melted shortening (transfat-free)
1 large egg
1 large egg white
2 to 3 tablespoons unsalted butter
2 crisp apples, peeled and sliced thinly
1/4 cup pure maple syrup
1/2 cup toasted walnuts (see Cook's Note)

Steps:

  • For the waffles: Preheat a waffle iron to medium heat.
  • Whisk the flour, wheat germ, sugar, baking powder, spice, nutmeg and salt together in a large bowl.
  • Beat together the milk, pumpkin, melted butter, and melted shortening, egg and egg white, in a large measuring cup. Make a well in the center of the dry ingredients and pour in the wet ingredients. Whisk together to make a slightly lumpy batter.
  • For the topping: Melt the butter in a skillet over medium heat. Add the apples and let cook until slightly browned, but still crisp, about 4 minutes. Add the maple syrup and walnuts and toss to coat.
  • Pour and spread about 1 cup batter into the waffle iron. Cover and cook until crisp and a rich golden brown, about 7 minutes. (Try to resist the temptation to open the waffle iron too soon. Steam will puff out of the iron while the waffles cook, when this stops the waffle is cooked.) Repeat with the remaining batter. Serve hot with the apples.

A friend of mine made these for me after we went on a nice morning walk with our new babies, and then shared the recipe with me. Since then, it has become a favorite (especially with my kiddos!), and I have also changed up the recipe to make them healthier. My husband prefers these served with fresh whipped cream; however, they are pretty good with butter and maple syrup.

2 cups whole wheat pastry flour
1/4 cup sugar (I typically substitute 1/4 c. honey)
1 tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon ginger
1/8-1/4 teaspoon ground cloves
1/8-1/4 teaspoon ground allspice
ground nutmeg, to taste
1/2 teaspoon salt
2 eggs
3/4 cup buttermilk
3/4 cup milk
4 tablespoons butter, melted
1/2 cup canned pumpkin

Steps:

  • Sift all dry ingredients into mixing bowl. In a separate bowl, combine remaining ingredients. Pour the wet ingredients over dry ingredients and stir just until combined.
  • Pour waffle batter on preheated waffle iron and cook until the waffles are a deep golden brown, approximately 4-5 minutes (the cooking time may vary depending upon your waffle iron). Serve with butter, maple syrup and whipped cream, if desired.
  • Freeze any leftover waffles and reheat in the toaster for a quick breakfast on another morning.

1 cup sugar
1/2 cup vegetable oil or 1/2 cup canola oil
1/2 cup maple syrup
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 (15 ounce) can pumpkin puree (about 2 cups)
1 teaspoon maple flavoring
1/2 teaspoon salt
1/8 cup maple syrup
1/8 cup powdered sugar
2 tablespoons nonfat milk or 2 tablespoons soymilk

Steps:

  • Preheat oven to 375°F.
  • Mix together dry ingredients for cake in bowl and set aside.
  • Mix together oil, 1/2 cup maple syrup, and 1 cup sugar until well mixed.
  • Add pumpkin and dry ingredients a little at a time, alternating each, but beginning and ending with the dry ingredients.
  • Add maple flavoring while mixing.
  • Pour batter into greased 8x8 or 9x11 pan. Make note that times given are for 8x8 so watch your cake closely.
  • Bake at 375F for 25 minutes.
  • For glaze, mix together all three ingredients until well mixed. If you have some powdered sugar lumps, pass the glaze through a small strainer.
  • When 25 miutes is up for cake, drizzle glaze over top while it is still in the oven. Cook for five more mintes.
  • Remove from oven and sprinkle lightly with powdered sugar. Cool on rack.

Steps:

This recipe was given to me by a friend and I made one change to the type of fat used. It takes some prep time so I like to combine the dry ingredients the night before or make several batches of dry ingredients and store in quart zip type bags in the pantry. It's good to label these and attach a copy of the recipe. I most recently tried mixing the wet ingredients, except the egg whites and melted butter, the night before and refrigerated it until morning. This also worked well and really cut down on the morning prep time. Just add the melted butter to the pumpkin mixture. Beat the egg whites and combine as stated. Freeze any leftover waffles and put them in the toaster for a quick breakfast.
