Crisco® Original No-Stick Cooking Spray
1 (14 oz.) pkg. Pillsbury® Pumpkin Quick Bread & Muffin Mix
1 cup water
3 tbsps. Crisco® Pure Vegetable Oil
1 large egg
3 cups milk
2 (3.4 oz.) pkgs. instant cheesecake pudding and pie filling
1 (8 oz.) container frozen extra creamy whipped topping, thawed
1/2 cup Smucker's® Caramel Flavored Topping
1/2 tsp. ground cinnamon
6 tbsps. chopped pecans

Steps:

  • HEAT oven to 375 degrees F. Coat 13x9-inch baking pan with no-stick spray.
  • PREPARE quick bread mix according to package directions using water, oil and egg. Pour into prepared pan. Bake 18 to 20 minutes or until toothpick inserted in center comes out clean. Cool completely.
  • CUT quick bread into 1-inch cubes. Whisk milk and pudding mix in medium bowl for 2 minutes. Stir caramel topping with cinnamon in small bowl.
  • LAYER 1/3 of cubes in a 2 1/2-quart trifle dish or large glass serving bowl. Top with 1/3 of pudding, 1 cup whipped topping, 2 tablespoons caramel topping and 2 tablespoons pecans. Repeat twice to make 3 layers.
  • SPREAD remaining whipped topping over top. Drizzle remaining caramel topping over top of trifle and sprinkle with pecans. Chill 30 minutes before serving.

4 cups chopped peeled tart apples (about 5 medium)
1 cup chopped walnuts
1/2 cup packed brown sugar
1 teaspoon apple pie spice, divided
1 package (8 ounces) cream cheese, softened
1 jar (12-1/4 ounces) caramel ice cream topping, divided
1 carton (12 ounces) frozen whipped topping, thawed, divided
2 loaves (10-3/4 ounces each) frozen pound cake, thawed and cut into 1-inch cubes
Additional apple pie spice, optional

Steps:

  • In a large skillet, melt butter over medium heat. Stir in the apples, walnuts, brown sugar and 1/2 teaspoon apple pie spice. Cook and stir for 8-10 minutes or until apples are tender. , In a large bowl, beat cream cheese until smooth. Beat in 1/2 cup caramel topping and remaining apple pie spice. Fold in 2 cups whipped topping. , In a 3-1/2-qt. trifle bowl or glass serving bowl, layer a third of the cake cubes, cream cheese mixture and apple mixture. Repeat layers twice. Garnish with remaining whipped topping and drizzle with remaining caramel topping. Sprinkle with additional apple pie spice if desired. Cover and refrigerate for at least 1 hour before serving.

2 teaspoons vanilla extract

1/2 cup sugar
1 cup heavy whipping cream
1/2 cup canned pumpkin puree
3 large fuji apples, peeled, cored, cut into 1/2-inch cubes (about 4 cups)
3 bosc pears, peeled, cored, cut into 1/2-inch cubes (about 3 cups)
2 tablespoons fresh lemon juice
2 tablespoons unsalted butter, cut into 1/2-inch cubes
3 1/2 dozen ladyfingers
1/3 cup dry sherry
2 cups whipping cream
2 tablespoons sugar
1 teaspoon vanilla extract
8 slices bosc pears (1/8-inch-thick)
1 tablespoon fresh lemon juice

Steps:

  • For cinnamon pastry cream: Whisk yolks and 1/2 cup milk in large bowl. Add sugar, flour, vanilla, and cinnamon. Whisk until sugar dissolves. Bring 1 1/2 cups milk to simmer in heavy medium saucepan over medium heat. Gradually whisk milk into yolk mixture. Return mixture to same saucepan. Cook until custard thickens and boils, stirring constantly, about 2 minutes. Transfer to medium bowl. Add butter and stir until melted. Press plastic wrap directly onto surface. Chill until cold, about 2 hours. (Can be made 2 days ahead. Keep chilled.).
  • For pumpkin-caramel sauce: Melt butter in heavy small saucepan over medium heat. Add sugar and cook until mixture is deep amber, stirring constantly, about 8 minutes (mixture will be grainy). Reduce heat to medium-low. Add cream (mixture will bubble). Stir until caramel bits dissolve, about 2 minutes. Add pumpkin; stir until heated. Refrigerate until cold, about 2 hours. (Can be made 2 days ahead. Cover and keep refrigerated.).
  • For roasted fruit: Preheat oven to 400°F Mix apples, pears, and lemon juice in large bowl. Place butter on rimmed baking sheet. Heat in oven until butter melts and begins to brown, about 5 minutes. Add fruit to baking sheet and toss with butter. Roast until fruit is soft and golden, turning with metal spatula every 15 minutes, about 1 hour. Cool fruit on sheet.

3/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup pure pumpkin puree

1/2 cup vegetable oil

1/2 cup lightly packed brown sugar
2 large eggs
2 teaspoons pure vanilla extract
2 teaspoons pumpkin pie spice
3 large apples, peeled and finely diced
1/2 cup lightly packed brown sugar
1 teaspoon ground cinnamon
Pinch of kosher salt
6 tablespoons unsalted butter, melted
3/4 cup all-purpose flour
3/4 cup lightly packed brown sugar
3/4 cup rolled oats
1/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 350˚ F. Butter a 9-inch square (or other 2 1/2-quart) baking dish.
  • Make the pumpkin cake layer: In a large bowl, whisk together the flour, baking soda and salt. Add the pumpkin puree, heavy cream, vegetable oil, both sugars, eggs, vanilla and pumpkin pie spice, then whisk to combine. Spread the batter evenly in the baking dish.
  • Make the apple layer: In the same bowl, toss the apples, brown sugar, cinnamon and salt. Scatter the apples evenly over the pumpkin batter.
  • Make the topping: Using the same bowl again, combine the melted butter, flour, brown sugar, oats and salt until small clumps form. Spread the topping evenly over the apples.
  • Place the baking dish on a baking sheet to insulate the bottom while it bakes and to catch any drips. Bake until the cake is slightly domed and the edges are set and gently bubbling and a toothpick comes out with moist crumbs but is not wet, 60 to 75 minutes. Serve hot or at room temperature.

1 cup packed dark brown sugar
4 pears, halved and cored
1/2 cup sour cream (optional)
1/4 cup coarsely chopped roasted pistachios (or any other nut) (optional)

Steps:

  • Heat oven to 400 degrees.
  • Place butter in a baking pan large enough to hold the pears in a single layer.
  • Set baking pan with butter in the heating oven until the butter melts.
  • Sprinkle sugar over melted butter.
  • Place pears, cut side down, on top.
  • Bake until tender, about 30 minutes.
  • Remove from oven.
  • Turn over pears and baste with pan sauce.
  • Return to oven.
  • Bake until golden and glossy, about 10 minutes.
  • Let cool slightly.
  • Transfer pears to dessert plates or bowls.
  • Top each with a dollop of sour cream, drizzle with caramel pan sauce, sprinkle with nuts.

Steps:

  • be sure to have all ingredients ready from start because as soon as the sugar melts, it is quick to burn so be careful and work fast.
  • in a heavy bottom sauce pan, on medium/high heat; melt down the cup of sugar, stirring constantly. this might take a while but once it is melted, the sugar will look a bit amber or brownish in color.
  • then add the butter while still stirring. when you add the butter, the sauce will begin to bubble but it's okay.
  • then add the 1/2 cup of whipping cream and as you are still stirring, the sauce will start to come together. you can then turn down the heat and serve.
  • to re-heat the sauce i usually put my sauce in a tupperware container, heat some water in a pan and place the container in the water.
