AUTUMN PUMPKIN SPICE 4 LAYER BARS
I really love recipes like this.Autumn is my favorite season.It is just so pretty out,and magickal! I love the smell of baking with pumpkin,and this is a great treat,perfect for the season! 8)

Steps:
- Heat oven to 435.
- Combine the sugars,flour,then butter.
- Combine until it is crumbly.
- Stir in the nuts,and set aside 1 1/2 cups of mixture.
- Press the remaining mixture into a 13x9 baking dish,including half up sides of dish.
- Pour the mincemeat over crust.
- Combine the remaining ingredients,except crumb mix,and mix well.
- Pour over the mincemeat layer.
- Spread the remaining crumb mixture over that.
- Bake for 15 minutes,and reduce the heat to 350.
- Bake 40 minutes,or until golden brown on edges.
- Let cool,cut into bars.

PUMPKIN SPICE CHEESECAKE

Steps:
- Use pulsing action of food processor to process gingersnaps and nuts until finely crushed. Press onto bottom of 9-inch springform pan.
- Beat cream cheese and sugar in large bowl with mixer until blended. Add pumpkin, spice and vanilla; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
- Bake 1 hour 20 min. to 1 hour 30 min. or until center is almost set. Loosen cake from rim of pan; cool before removing rim. Refrigerate cheesecake 4 hours.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Butter and flour a 10x15 inch jellyroll pan.
- In a large bowl, cream together 3/4 cup butter and white sugar until light and fluffy. Beat in the eggs one at a time, then stir in the pumpkin. Combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg; stir into the pumpkin mixture. Mix in walnuts. Spread evenly into the prepared pan.
- Bake for 30 to 35 minutes in the preheated oven, or until toothpick inserted near the center comes out clean. Cool completely before frosting.
- In a medium bowl, mix together the cream cheese, 1/3 cup butter, and vanilla until smooth. Gradually blend in sugar, then beat until smooth. Spread over cooled pumpkin bars. Cut into squares.
