Number Of Ingredients 12

2 bacon strips, diced
1/4 cup chopped onion
1 medium red potato, cubed
1 small carrot, halved lengthwise and thinly sliced
1/2 cup water
3/4 teaspoon chicken bouillon granules
1 cup milk
2/3 cup frozen corn
1/8 teaspoon pepper
2-1/2 teaspoons all-purpose flour
2 tablespoons cold water
3/4 cup shredded cheddar cheese

Steps:

  • In a large saucepan, cook bacon over medium heat until crisp; remove to paper towels. Drain, reserving 1 teaspoon drippings. In the drippings, saute onion until tender. Add the potato, carrot, water and bouillon. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until the vegetables are almost tender., Stir in the milk, corn and pepper. Cook 5 minutes longer. Combine the flour and cold water until smooth; gradually whisk into soup. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat; stir in cheese until melted. Sprinkle with bacon.

1/2 lb bacon
1 cup onion, chopped
1 cup celery, chopped
1 cup carrot, chopped
1/2 cup mushroom, roughly chopped
2 small zucchini, chopped
2 cups water
1 (15 ounce) can corn, drained
1 (15 ounce) can creamed corn
1/2 cup frozen peas
3 -4 cups mashed potatoes (See Note *)
2 cups milk
3 cups shredded cheddar cheese
1 teaspoon salt
1/2 teaspoon white pepper

Steps:

  • Fry bacon in heavy stock-pot; remove, drain, crumble, then set bacon aside.
  • Saute onion, celery, and carrots in stockpot in a small amount of reserved bacon fat; add mushrooms and zucchini and continue sauteeing for 2 minutes.
  • Add water; cover stock pot and simmer until vegetables are tender.
  • Add corn, peas, mashed potatoes, and milk and heat through.
  • Add cheese and stir until melted; season, and serve hot.
  • *Note:For this recipe I like to use mashed potato flakes prepared according to package directions using 2 2/3 c water, 1/4 c margarine, 1 tsp salt, 1 c milk, and 2 2/3 c potato flakes to make 3 1/3 cups/8 servings.

Turnip, Potatoes, Asparagus, Bacon & Corn. This is so yummy!! (if I do say so myself.) I didn't have the ingredients to make my Corn Chowder, so I threw a bunch of things in a pot and came up with this. *pls note* the auto-converter for metric to Imperial adds an extra 1/8 of everything, ignore the 1/8.

250 ml cooked crumbled bacon
1 7/8 liters prepared low sodium chicken broth (2 Campbell's Tetra Packs)
500 ml water
750 ml diced turnips or 750 ml rutabagas
250 ml diced onions
500 ml asparagus, cut in 1 inch pieces
10 ml chili powder
10 ml cajun seasoning
2 ml basil
2 ml marjoram
250 ml frozen corn
500 ml table cream
2 (420 g) packages dry unprepared roasted garlic mashed potatoes

Steps:

  • Cut bacon into 3cm or 1/2 inch pieces, cook and drain.
  • In a large pot add Chicken Stock, Water, Bacon, Onion and Turnip.
  • Bring to boil, then cook at medium heat for 20 minutes Stirring occassionally.
  • Add Asparagus and seasonings and cook for another 20 minutes Stirring occassionally.
  • Add Corn, Cream and Potatoes and cook another 10 mins stirring often.
  • Let stand away from heat for 5 minutes and serve.

I started developing this soup for a RecipeZaar cooking contest. Finally finished it, a bit too late for the contest! A hearty soup, add bread and you have dinner.

2 cups dry white beans, soaked
2 tablespoons olive oil
8 ounces smoked bacon, cut in half crosswise
2 garlic cloves, chopped
3/4 cup onion, diced
1/2 cup leek, diced
1 cup celery, 1/4-inch diced
2 apples, tart cooking, peeled and cubed
1/2 cup carrot, 1/4-inch diced
2 cups butternut squash, 1/4-inch diced
1 1/2 tablespoons fresh thyme, chopped
1 1/2 tablespoons fresh rosemary, chopped
5 cups vegetable stock
sea salt & white pepper

Steps:

  • Heat olive oil in a heavy bottomed soup pot and saute bacon for 3 minutes.
  • Pour off any excess fat.
  • Add onions and garlic continuing to cook until onions are softened.
  • Add leeks, celery, carrots, butternut squash and soaked white beans along with thyme and rosemary.
  • Saute for 2 more minutes. Pour in chicken stock and bring to a boil.
  • Turn down heat and simmer slowly for 1 1/2 hour or until beans are tender.
  • Adjust final seasoning.

Anyway, this recipe was just sent to me from The Farmer's Almanac - gotta stash & save to make sometime soon 'cause it's got all the right stuff.

3 tablespoons butter
1/2 cup onion, chopped
1/2 cup celery, chopped
1/4 cup green bell pepper, chopped
3 garlic cloves, minced
1 cup potato, peeled and diced
1 cup carrot, diced
2 cups chicken broth (or stock)
1 1/2 teaspoons salt
3/4 teaspoon pepper
1/2 teaspoon dill seed
1/2 cup zucchini, diced
1/2 cup yellow squash, diced
15 ounces salmon, canned
12 ounces evaporated milk
7 ounces creamed corn

Steps:

  • In a large saucepan or stockpot, melt the butter over medium-high heat.
  • Add the onion, celery, green pepper, and garlic and saute until translucent, about 5 minutes.
  • Add the potatoes, carrots, broth, salt, pepper, and dill seed. Cover and simmer for 20 minutes.
  • Add the zucchini and yellow squash and simmer for 5 minutes.
  • Flake the salmon and add to the pot along with its liquid, the milk, and the corn.
  • Heat to boil through before serving.

1 1/2 cups great northern beans
water
meaty ham bone or smoked ham hock
1 medium onion, chopped
1 clove garlic, crushed
1 medium potato, diced
2 carrots, sliced
1 cup chopped celery
1/2 cup chopped green pepper
3 tablespoons flour
3 cups milk
salt and pepper

Steps:

  • Soak beans according to directions, using either method.
  • Drain beans and measure liquid.
  • Add water to make 1 1/2 quarts.
  • Place beans, liquid, ham bone, onion and garlic in large kettle.
  • Simmer 1 1/2 to 2 hours, or until tender.
  • Add potato, carrots, celery and green pepper.
  • Simmer 30 minutes longer.
  • Remove ham bone.
  • Cut up meat and return to soup.
  • Thicken with flour blended with a little cold water.
  • Add milk and heat gently.
  • Season to taste with salt and pepper.

This is a hearty soup recipe that my brother in law introduced me to. It is very easy and I don't think I have met a person who does not like it. It is great served with some crusty bread or some piping hot corn bread.

1 medium onion, chopped
2 (15 ounce) cans Rotel tomatoes & chilies
2 (15 ounce) cans whole kernel corn
2 (16 ounce) cans pinto beans
2 (15 ounce) cans diced tomatoes
2 lbs Velveeta cheese

Steps:

  • Brown ground beef with onions. Add salt and pepper to taste. drain.
  • Mix in remaining ingredients. Do NOT drain the canned good.
  • Heat until cheese is melted and soup is thoroughly heated.

2 small apples, sliced thinly
1 medium onion, chopped
1/2 lb chicken, shredded

1 sprig fresh rosemary
1 sprig fresh sage
1 sprig fresh thyme

2 eggs
½ teaspoon orange extract
½ teaspoon vanilla extract

2 ½ cups rolled oats
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Cream together butter and the brown and white sugars in a bowl until smooth. Beat in the eggs, vanilla and orange extract.
  • In a separate bowl, combine the flour, salt, baking powder and pumpkin pie spice; stir flour mixture into the sugar mixture. Add the rolled oats, walnuts and cranberries and mix thoroughly. Using a small ice cream scoop or teaspoon, drop rounded scoops of dough onto the prepared cookie sheet.
  • Bake in the preheated oven until the edges are golden, 8 to 10 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.
