Are you craving that great Mexican rice from your favorite taco stand? Here it is. This is just like a good Mexican restaurant rice. Many recipes taste good... but the texture just isn't right. You know how it is... you have prepared scores of Mexican rice recipes but always have been disappointed. It may be delicious but kinda "gloopy and wet." Try this. Everything is pureed and cooked in. There are no chunks of anything... just dry fluffy rice with all the seasonings and just the tiniest hint of a tomato flavor. I will throw away all of my Mexican rice recipes- this is the one I have been looking for for years! I don't own a rice cooker but some people have had disappointing results using one. You will also need to adjust your cooking time if you want to use brown rice. I recommend following the cooking instructions as directed. Proceed at your own peril if you stray. Enjoy.

12 ounces tomatoes, very ripe and cored
1 medium white onion
3 medium jalapenos
2 cups long grain white rice
1/3 cup canola oil
4 minced garlic cloves
2 cups chicken broth
1 tablespoon tomato paste (may omit if using canned tomatoes)
1 1/2 teaspoons salt
1/2 cup fresh cilantro, minced
1 lime

Steps:

  • Adjust rack to middle position and preheat oven to 350.
  • Process tomato and onion in processor or blender until pureed and thoroughly smooth. Transfer mixture to measuring cup and reserve exactly 2 cups. Discard excess.
  • Remove ribs and seeds from 2 jalapenos and discard. Mince flesh and set aside. Mince remaining jalapeno. Set aside.
  • Place rice in a fine mesh strainer and rinse under cold running water until water runs clear- about 1 1/2 minutes.Shake rice vigorously to remove excess water.This step removes the starch from the rice so it will not stick. IF YOU OMIT THIS STEP YOUR RICE WILL NOT BE DRY AND FLUFFY.
  • Heat oil in heavy bottomed ovensafe 12 inch straight sided sautee pan or Dutch oven with tight fitting lid over low-medium heat about 2 minutes. (The recipe is very specific about this but I used a 10 inch dutch oven and it worked out fine.) Drop a few rice grains in and if they sizzle then it is ready. Add rice and fry stirring until rice is light golden and translucent, about 6-8 minutes. Be careful that the oil doesn't get too hot too fast or the oil will splatter.
  • Reduce heat to medium, add garlic and 2 minced jalapenos and cook , stirring constantly until fragrant, about 1 1/2 minutes.
  • Stir in broth, pureed mixture,tomato paste, and salt. Increase heat to medium high, and bring to a boil.
  • Cover pan and transfer pan to oven to bake until liquid is absorbed and rice is tender, 30-35 minutes.Stir well after 15 minutes.
  • Stir in cilantro, minced jalapeno to taste, and pass lime wedges separately.
  • Edited to add 6-15-05: If you can't get good fresh tomatoes you are better off using canned tomatoes. Don't use those awful hard and underipe tomatoes that are at most supermarket chains. Just be sure that the processed tomatoes and the one onion equals 2 cups. One the other hand- if you find that after processing your tomatoes and onions that you have less than 2 cups- simply add enough bottled salsa to make up the difference.
  • Edited 8-21-06: Do not skip any of the steps. It may seem stupid- but rinsing the rice to remove the starch is very important if you want fluffy rice. It will only take two minutes of your time but it makes the difference.
  • Edited 8-15-08: Leftovers are just as delicious the next day so this is a perfect dish to make ahead time for potlucks. This rice also freezes well. For Freezing Ahead: Cool, portion and freeze in a ziploc bag. To reheat from frozen: Place in a pyrex dish and warm in the microwave, stirring every 2-3 minutes until heated through.

2 tablespoons vegetable oil
1 cup minced onion
2 cloves garlic, minced
1 cup uncooked long-grain white rice
1 ¾ cups low-sodium chicken broth
¼ cup canned tomato sauce
1 jalapeno pepper, chopped
2 sprigs fresh cilantro
salt to taste

Steps:

  • Grate tomatoes into a bowl using a box grater; discard tomato skins.
  • Heat vegetable oil in a heavy skillet over medium-high heat and cook onion until translucent, stirring often, about 5 minutes. Stir garlic into onion and cook until fragrant, about 1 minute.
  • Stir rice into onion mixture and cook, stirring often, until rice is lightly toasted, about 3 more minutes. Stir grated tomato, chicken broth, and tomato sauce into the rice. Bring mixture to a boil.
  • Mix in jalapeno pepper, cilantro, and salt; reduce heat to low. Cover skillet and simmer until rice has absorbed the liquid, about 15 minutes. Do not lift the cover while the rice is cooking.
  • Turn off heat and let rice stand covered for 8 minutes. Fluff with a fork before transferring rice to a serving dish.

3 Cups Chicken Stock
1 Roma Tomato

salt (to taste)
1 Tbsp Olive Oil

Steps:

  • Add the rice to a pot with the olive oil and cook over medium-high heat for about 5 minutes, moving constantly until the rice is slightly browned.
  • Add salt to taste and cook for about 1 more minute.
  • Add the tomato, garlic, onion and oregano to a blender and blend together.
  • Add the above mixture to the rice and stir well. Let cook over medium-high heat for 2-3 minutes, moving the rice constantly.
  • Add the Chicken Stock and reduce the temperature to medium-low. Cover and let cook until the water evaporates (about 15-20 minutes). If the rice is not soft, add an additional cup of chicken stock or water and continue cooking until the rice is soft.

1 teaspoon minced garlic
1/2 teaspoon kosher salt

Steps:

  • Heat oil in a large sauce pan over medium heat. Add the rice and gently stir until rice begins to lightly brown. Add the garlic, salt, and cumin and stir the rice til it looks golden.

2 tomatoes
2 -4 garlic cloves
1/2 cup onion, divided in half
1/2 cup rice
1 tablespoon oil
1 cup chicken broth
1/4 cup cilantro

Steps:

  • Boil tomatoes in water until skin bursts.
  • In blender, puree tomatoes, and half of the garlic and onion.
  • Brown rice in oil.
  • Add the rest of the garlic and onion to rice.
  • Pour tomato sauce over rice.
  • Do not stir mixture.
  • Simmer for 5 minute.
  • Add broth and cilantro.
  • Let simmer for 30 minutes (until rice is soft) without stirring.

Steps:

  • Check for a date on the beans; freshness matters. Dried beans last up to two years, but are best cooked within a year of harvest.
  • Always rinse beans before cooking, and check for stray rocks, twigs and leaves.
  • Wash them well and place them in a pot with clean water to soak over night. Next day, drain the water and put fresh water over them, then continue with the recipe.
  • If you do not want to let them soak overnight, place the chopped onions, salt and garlic together in the pot, cover it with a lid and bring it to a boil.
  • When the beans start boiling, reduce the heat and let them simmer for about 90 minutes to 2 hours until the beans are soft. The time varies based on the type of beans or how dry they are.
  • Make sure that there is enough water during the cooking process. There should always be liquid covering your beans as they cook.
  • To make sure your beans are cooked thoroughly, scoop up a couple of beans and blow on them. The skin should curl and wrinkle. Then taste. They are done when they're tender and cooked through to the center (but not mushy). Let them cool in their cooking liquid.
  • Before removing the beans from the heat, add the epazote.
  • Serve them with salads, rice, warm corn tortillas, grilled meats etc.

Steps:

  • Rinse the rice in a fine mesh strainer until the water runs clear. Set aside.
  • In a large saucepan over medium-high heat, add the oil. Once hot, add the rice and stir to combine. Cook over medium heat, stirring frequently, until the rice is lightly golden brown all over (about 10 minutes).
  • Add tomato sauce, garlic, and diced onion to the pan. Stir. Add tomato bullion, salt, carrots, peas, and water (and serrano peppers, if using. They add a little flavor, but not spice.).
  • Bring to a boil, then cover, reduce heat to low and cook for about 20 minutes or until the water is completely absorbed. Remove from heat and allow to rest for 5 minutes before fluffing with a fork.

3 tablespoons olive oil
1/2 medium onion (chopped)
2 cups basmati rice ( well rinsed and drained*)
3 garlic cloves (minced)
1-3 jalapeno peppers (seeded, deveined, minced)
2 3/4 cups low sodium chicken broth
1 cup (8 oz.) tomato sauce
1 14 oz. can fire-roasted tomatoes (well drained)
2 teaspoons (or 2 chopped cubes) TOMATO bouillon with chicken flavor (see notes**)
3 tablespoons mild chopped green chiles
1/2 tsp EACH ground cumin, chili powder, dried oregano
1/4 tsp EACH ground coriander, smoked paprika, salt

Steps:

  • Heat oil in a Dutch oven or large heavy pot over medium-high heat. Once hot, add onions and rice and sauté for 3 minutes then add jalapenos and sauté until rice is toasted, approximately 2-3 more minutes. Add garlic and sauté 30 seconds.
  • Stir in all remaining Rice ingredients (except for cilantro and lime juice garnish). Bring to a boil, cover, and reduce heat to LOW. Simmer 12-15 minutes, or until water is evaporated and rice is tender, stirring once at 8 minutes and replacing lid.
  • Once water is evaporated, remove from heat, stir, cover and let sit undisturbed for 10 minutes.
  • Add cilantro and lime juice if desired and fluff with a fork. Taste and season with additional salt or lime juice if desired.

2 tablespoons vegetable oil
1/4 medium onion (diced)
1 1/2 cups uncooked long-grain white rice
3 cloves garlic (finely chopped)
2 1/2 cups chicken broth ( homemade , canned, or made from bouillon cubes/powder)
1 cup tomato puree
Optional: 4 heaping tablespoons fresh parsley (finely chopped)
Optional: 1/2 cup chopped vegetables (carrots, green beans, bell pepper, peas, etc.)

Steps:

  • Gather the ingredients.
  • In a medium-sized saucepan, heat the oil over medium heat. Add the onion and sauté for 1 or 2 minutes until softened and translucent.
  • Add the rice and continue sautéing, stirring frequently, for about 5 minutes or until the rice becomes a golden brown color. Do not allow the rice to burn.
  • Add the garlic and sauté for 1 more minute.
  • Take the pan off the heat; add the chicken broth and tomato puree, plus the parsley and vegetables if using. Stir, return the pan to the heat, and bring to a boil. Turn the heat to low and cover.
  • Let simmer for 20 minutes without taking off the lid. After 20 minutes, remove the lid and carefully insert a spoon into the cooked rice. If the bottom of the pan is dry, your rice is done; if there is still some broth visible, allow it to cook for a few more minutes.
  • Once the rice is done cooking, remove it from the heat and let it sit, covered and undisturbed, for another 10 minutes or so.
  • Fluff the rice with a fork before serving.
  • Serve with almost any savory Mexican dish and enjoy.

1/4 cup oil ((vegetable or canola oil))

1/4 cup tomato sauce (, or 2 pureed tomatoes)
2 tomato bouillon cubes (,finely chopped*, or 2 teaspoons granulated)
1/4 teaspoon salt
1 carrot (, diced)
1 1/2 cups water
1/3 cup frozen peas

Steps:

  • Rinse the rice until the water runs clear. Drain well.
  • Turn Instant Pot to saute. Once hot, add oil to the bottom of the pot.
  • Add rice and saute, stirring often, until lightly golden, about 5 minutes.
  • Add garlic, onion, tomato sauce, salt, tomato bullion and carrots and stir to combine.
  • Add water and stir well, making sure the bullion cubes are dissolved.
  • Turn instant pot off. Secure lid and turn valve to sealed position.
  • Turn on to Manual or High Pressure, and cook for 3-4 minutes (3 minutes for tender to the bite, or 4 minutes for softer rice).
  • When timer beeps, allow pressure to naturally release for 10 minutes.
  • Remove lid and add peas. Gently fluff the rice with a fork (don't stir it).
  • Place IP lid over the bowl and allow rice to rest for a few more minutes before serving.

1/3 cup finely chopped white onion
1 clove garlic, minced
2 1/4 cups chicken broth
3 tablespoons tomato paste

1 serrano chile
1 fresh cilantro sprig

Steps:

  • In a large heavy saucepan, heat the vegetable oil on medium-high heat. Add the rice, onions and garlic. Saute until the rice has an opaque color and is fragrant, about 2 minutes. Add the chicken broth, tomato paste and salt. Mix well to incorporate evenly. Then add in the chile and cilantro sprig.
