AUTHENTIC VEAL MILANESE RECIPE (COTOLETTE ALLA MILANESE)

Veal Milanese, which in Italian is Cotoletta alla Milanese, is probably one of my favorite recipes to make. It's easy and your family will love it!

4 bone-in veal cutlets
2 eggs (medium )
2 cups breadcrumbs
1 cup clarified butter (instructions below)
1 cup all-purpose flour
salt and pepper to taste
1 lemon (quartered)

Steps:

  • Make two or three cuts on the edges of each cutlet to keep them from curling up as they cook.
  • Heat the clarified butter over medium-high heat to about 375*F. The secret to cooking the meat is to cook it quickly at a very high temperature to seal the outside and create a crunchy breading while keeping the inside moist and juicy. Clarified butter has a much higher smoke point (485*F) than regular butter, which begins to burn at about 325*F.
  • Whisk the eggs and place them in a shallow pan or pie plate.
  • Place each cutlet first into the flour, then the egg bath and then finally the breadcrumbs, pressing down on the crumbs as you go to ensure that they don't fall off.
  • Fry each individual cutlet for about 3-4 minutes on each side, then remove to a plate lined with paper towels and allow the extra butter to drain off.
  • Season with salt and pepper to taste, then place on a baking sheet and put them in a 175*F oven to keep warm.
  • Serve with a salad and a cherry tomato side for true authentic Veal Milanese. Place a lemon wedge on each plate, for drizzling over the meat just before you serve it.

Meatball recipes are often challenged by chefs who claim, "Mine are the best!" Even though my meatballs ARE the best, I will make no such claim. Try them for yourself! This meatball recipe was given to me by my father who got it from a little old lady from Italy that he knew. It's amazing that she gave up her recipe to him, but I sure am glad she did!

1 lb ground beef
2 eggs
1/4 cup milk
1/2 cup breadcrumbs
1/2 teaspoon salt
1 tablespoon fresh parsley
1 teaspoon garlic powder
1/2 teaspoon fresh ground pepper
1/2 cup grated locatelli cheese

Steps:

  • Mix all ingredients in a large bowl by hand.
  • Use your bare hands for best results.
  • Roll meatballs to about the size of a golf ball. (wet your hands to prevent the meat from sticking to them while rolling the meat balls).
  • Drop raw meatballs into large (I use a stock pot) pot of sauce.
  • (I have an incredible sauce recipe {#92096} I use for my meatballs).
  • Simmer for about 3 hours.

2 pounds veal shanks, cut into short lengths
¼ cup all-purpose flour
¼ cup Butter
2 cloves garlic, crushed
1 large onion, chopped
1 large carrot, chopped
⅔ cup dry white wine
⅔ cup beef stock
1 (14.5 ounce) can diced tomatoes
salt and pepper to taste
½ cup chopped fresh flat leaf parsley
1 clove garlic, minced
2 teaspoons grated lemon zest

Steps:

  • Dust the veal shanks lightly with flour. Melt the butter in a large skillet over medium to medium-high heat. Add the veal, and cook until browned on the outside. Remove to a bowl, and keep warm. Add two cloves of crushed garlic and onion to the skillet; cook and stir until onion is tender. Return the veal to the pan and mix in the carrot and wine. Simmer for 10 minutes.
  • Pour in the tomatoes and beef stock, and season with salt and pepper. Cover, and simmer over low heat for 1 1/2 hours, basting the veal every 15 minutes or so. The meat should be tender, but not falling off the bone.
  • In a small bowl, mix together the parsley, 1 clove of garlic and lemon zest. Sprinkle the gremolata over the veal just before serving.

3 tablespoons olive oil
1 large onion, finely diced (about 2 cups)
2 teaspoons salt
2 pounds ground veal
3 large eggs
2/3 cup bread crumbs
1/4 cup grated Parmesan cheese
1 carrot, finely diced (about 1 cup)
1 celery stalk, finely diced
1/4 cup chopped fresh parsley
1 tablespoon chopped fresh oregano or 1 teaspoon dried
1/2 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 450°F. Drizzle 2 tablespoons of the olive oil into a 9 × 13-inch baking dish and use your hand to evenly coat the entire surface. Set aside.
  • Heat the remaining 1 tablespoon olive oil in a large frying pan over high heat. Add the onions and salt. Cook, stirring frequently until the onions just start to turn translucent and begin to brown, about 3 minutes. Using a slotted spoon, transfer them to a plate and place in the refrigerator to cool.
  • Combine the cooled onions with the ground veal, eggs, bread crumbs, Parmesan, carrots, celery, parsley, oregano, and pepper in a large mixing bowl and mix by hand until thoroughly incorporated.
  • Roll the mixture into round, golf ball-size meatballs (about 1 1/2 inches), making sure to pack the meat firmly. Place the balls in the prepared baking dish, being careful to line them up snugly and in even rows vertically and horizontally to form a grid. The meatballs should be touching one another.
  • Roast for 20 minutes, or until the meatballs are firm and cooked through. A meat thermometer inserted into the center of a meatball should read 165°F.
  • Allow the meatballs to cool for 5 minutes in the baking dish before serving.

1/2 cup grated parmesan cheese
1 large egg, beaten
3 slices day old bread soaked in 1/2 cup milk
3 garlic cloves, finely minced
2 teaspoons salt
1 teaspoon black pepper
1/2 teaspoon dried oregano leaves
1/4 cup fresh parsley, finely chopped
basil, tomato sauce Basil Tomato Sauce

Steps:

  • Prepare the Basil Tomato Sauce #447975 and have it cooking prior to preparing the meatballs.
  • In a large bowl, combine all of the meatball ingredients just until mixed, do not overwork the meat.
  • Using a small cookie scoop, scoop out the portions onto a tray, then roll the portions into even sized meatballs.
  • Have your tomato sauce simmering on the stove, then drop in the prepared meatballs. Cook the meatballs for 20 minutes without stirring, making sure they are covered with tomato sauce. After 20 minutes, gently move the meatballs around and continue to simmer for a further 20 minutes, or until they are fully cooked.
