½ pound ground beef
½ medium yellow onion, finely chopped
¼ cup Goya Tomato Sauce
6 Goya Spanish Olives Stuffed with Minced Pimientos, thinly sliced

1 packet Sazon Goya with Coriander and Annatto
1 teaspoon Goya Minced Garlic
½ teaspoon Goya Dried Oregano

1 (14 ounce) package Goya Discos (yellow or white), thawed
Goya Corn Oil, for frying

Steps:

  • Heat oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking up meat with a wooden spoon, about 10 minutes. Add onions and cook until soft, about 5 minutes more. Stir in tomato sauce, olives, Sofrito, Sazon, garlic, oregano and black pepper. Lower heat to medium-low and simmer until mixture thickens, about 15 minutes.
  • On a lightly floured work surface, using a rolling pin, roll out discos until 1/2-inch larger in diameter. Spoon about 1 tbsp. meat mixture into middle, fold in half to form a half moon; moisten edges with water and pinch to seal closed, or seal with a fork.
  • Fill a deep saucepan with oil to a depth of 2 1/2-inches. Heat oil over medium-high heat until hot but not smoking (350 degrees F on deep-fry thermometer). Cook Empanadas in batches until crisp and golden brown, flipping once, 4 - 6 minutes. Transfer to paper towels to drain.

Empanadas are very popular as a street food in South America. Essentially, it is a crescent-shaped pastry with a filling, which may vary greatly by region or preference. Empanadas can be fried or baked, and may use a variety of fillings from meat or seafood to fruit or cheese. While this recipe uses the filling most popular in Buenos Aires, you can fill an empanada with virtually anything you please, so experiment! Tip: A recipe for empanada dough is given here, but they can be found in the frozen pastry section of many specialty or Hispanic groceries. If you are in a rush or just feeling lazy, frozen puff pastry can serve as an adequate substitute. Note: To the reviewer who said the flavor did not seem authentic, you probably haven't had meat empanadas from Argentina then! I am Argentine, and the ground beef empanadas you find there *always* have cumin. Other cultures may have different fillings.

2 cups all-purpose flour
1 -2 teaspoon salt
3/4 cup cold margarine or 3/4 cup butter, cut into small cubes
2 eggs
2/3 cup cold water
2 tablespoons white vinegar
1 lb ground beef (or turkey or chicken for a lower-fat variation)
4 hard-boiled eggs
1 cup stuffed green olive
handful raisins (optional. This is supposedly a common ingredient, but I have never used them)
1 large onion
3 garlic cloves
2 -3 tablespoons ground cumin powder
1 teaspoon chili pepper flakes
salt and pepper

Steps:

  • Sift the flour, mix the sifted flour and salt in a large bowl.
  • Mix in the solid margarine or butter with your fingers, (best to cross cut with two knives). The flour should have an even, coarse texture, with the margarine lumps no larger than a pea.
  • Beat together the water, eggs, and vinegar in a bowl. Slowly mix into the flour mixture, until you have the desired consistency (it should not be too sticky, but still malleable).
  • Place the mixture on a floured surface. Knead with the heel of your hand to bring the dough together.
  • Cover the dough and allow to sit in a cool place for at least an hour.
  • Roll out the dough until it is about 1/8 of an inch (0.3 cm) thick. Cut into circles about 4-6 inches (10 - 15 cm) in diameter and lightly flour them.
  • Heat some oil in a large saucepan. Mince the onions and garlic, and add to the pan. Cook until the onions become translucent.
  • Add the ground meat. Break it up with with a spoon and cook, stirring until lightly browned. Drain off fat.
  • Mix in the cumin, pepper flakes, and sugar. Adjust to taste.
  • Chop the hard boiled eggs and halve the stuffed olives. Carefully mix into the meat mixture. Add salt and pepper to taste.
  • Preheat the oven to 375ºF/200ºC.
  • Stuff the empanada dough wrappers. Place 2-3 tablespoons of the filling in the center of each wrapper. Dampen the outer perimeter of the dough.
  • Fold over, forming a semicircle. Pinch a corner of the dough, and then fold that section onto itself. Pinch and pull out another 1/2-inch (1.2 cm) section and fold over, so that it slightly overlaps the first piece. Repeat along the length of the folded side, until you create a braided or twisted seal.
  • If desired, brush the tops of the empanadas with beaten egg yolk for a nice golden color.
  • Place the folded empanadas on a greased cookie sheet. Bake 15-20 minutes, or until golden brown.

This authentic recipe was given to me by a visiting Argentinean professor while I was studying Spanish in college. They have become a staple food in my household as they are both simple to make, and delicious.

1 tablespoon extra-virgin olive oil
1 pound yellow onions, chopped
6 scallions, chopped
1 green bell pepper, chopped
2 pounds ground beef
2 tablespoons dried oregano
1 ½ tablespoons salt

1 ½ teaspoons ground cumin
1 tablespoon butter, or as needed
36 empanada pastry discs
1 egg white, beaten

Steps:

  • Heat oil in a large Dutch oven over medium heat. Add onions, scallions, and bell pepper. Cover and cook, stirring occasionally, until onions are translucent, 10 to 15 minutes.
  • Add ground beef, oregano, salt, cayenne pepper, and cumin to the onion mixture. Cook and stir beef until no longer pink, 8 to 10 minutes. Remove from the heat and allow to cool slightly, then cover and place in the refrigerator until meat is completely cooled, about 1 hour.
  • Remove filling from the refrigerator and transfer into a colander to drain. Return filling to the Dutch oven.
  • Preheat the oven to 400 degrees F (200 degrees C). Liberally grease a baking sheet with butter.
  • Place about 2 tablespoons filling into the center of an empanada disc. Fold empanada in half into a crescent shape, press the edges of the dough together with a fork or your fingers to seal, and place onto the prepared baking sheet. Repeat with remaining empanadas and filling. Brush tops with egg white.

This authentic Argentine Empanadas recipe is so approachable, anyone can make them! The filling ingredients include ground beef, onion, spices, green olives and hard boiled eggs in an easy homemade empanada dough.

2 Tablespoons olive oil
2 white onions (, chopped (about 4 cups))
3 cloves garlic (, minced)
½ of a red bell pepper (, diced)
1 1/2 teaspoons chili powder
1 Tablespoon cumin
2 Tablespoons sweet paprika
1 teaspoon oregano
1 teaspoon beef boullion
1 lb lean ground beef
Salt and pepper to taste
1 bunch green onions (, just the green part, finely chopped)
½ cup chopped green olives
½ cup fresh chopped parsley
3 hard boiled eggs (, peeled and finely chopped)
4 cups flour
2 teaspoons salt
½ cup unsalted butter (, room temperature)
1 egg (, beaten)
2 Tablespoons oil
¾ - 1 cup warm water
Egg wash (( 1 egg mixed with 1 Tbsp water))

Steps:

  • Heat olive oil over medium-low heat. Add onion and cook for 10 minutes, stirring often.
  • Add garlic and diced red pepper. Cook for another 10 minutes, stirring often. Add chili powder, cumin, sweet paprika, and oregano. Cook for 2 minutes.
  • Increase heat to medium and add the ground beef. Season with salt and pepper and cook, crumbling into small pieces, until browned. Stir in beef boullion.
  • Remove from heat and transfer mixture to a bowl to cool for 10 minutes. Then, stir in green onion, olives, parsley, and hard-boiled eggs.
  • Cover and chill mixture for at least 1 hour or up to 3 days (depending on freshness of ingredients). It's important that the mixture is chilled before filling the empanadas.
  • Add flour and salt to a large bowl and stir to combine. Add egg and butter and stir well to combine. Add oil and warm water and stir until the mixture starts to come together into a dough ball. Add more water if it's too dry.
  • Place dough in clean greased bowl and cover tightly. Allow to rest at room temperature for 1 hour. (Or, refrigerate for up to 1 day, removing from the fridge 20 minutes before using.)
  • Divide the dough into two pieces. On a greased countertop roll each piece into a very large circle, about 1/8in thick (not so thin that it might break when filling or baking).
  • Use a small bowl or round cookie cutters to cut the dough into circles about 6in in diameter for regular size empanadas or 3 inch for mini empanadas (empanaditas).
  • Remove the excess dough from around the cut circles and keep the circles where they are for filling them (so they hold their perfect circle shape). Leftover scraps can be re-rolled to make more dough to cut out.
  • Place about 2 tablespoons of filling (for regular size empanadas) in the center of each circle, leaving plenty of space around the border. Moisten the edges of the circle with water, then fold the dough over and match the ends together to form a semi-circle.
  • Pinch the edges together and then seal the ends by crimping them with a fork or pinching and twisting/folding it over.
  • Baked Empanadas: Place empanadas on a baking sheet lined with parchment paper. Brush with a little bit of egg wash and bake at 375° For 25-30 minutes until golden brown and fully cooked.
  • Fried Empanadas: (I've found it best to refrigerate the empanadas for 20 minutes before frying to help the dough firm up and hold its shape before placing in the hot oil). Add several inches of hot oil to a pot and heat to about 365° F. Fry one or two empanadas at a time, flipping once, until golden on both sides (1-2 minutes per side). Place on a paper-towel lined plate.

Flaky, tender dough make these empanadas a recipe worth repeating. We're using a delicious spicy beef mixture to kick them up a notch. So good!

3 1/4 cups all purpose flour
6 oz. butter (1.5 sticks)
1.5 teaspoons salt
2 small eggs
1/2 cup ice cold water
1.5 tablespoon apple cider vinegar (or white vinegar)
1 cup Monterey Jack cheese (or Mozzarella)
1 egg (for the eggwash)
1 lb. ground beef
1/2 onion
2 cloves garlic
2-3 chipotles in adobo
1 tablespoon adobo sauce
1-2 tablespoons chili powder
1/2 teaspoon cumin
1/2 teaspoon salt
freshly cracked black pepper
splash of water

Steps:

  • Start by mixing 1.5 teaspoons of salt into 3 1/4 cups of flour. Dice up 6 oz. of butter (1.5 sticks) into small 1/2" chunks and plop them into the flour. Use your fingers to disintegrate some of the butter into the mixture but don't worry about getting all of the butter dissolved. Mix it in just enough to make the mixture crumbly with a few chunks of butter laying about.
  • In a bowl, combine 2 small eggs, 1.5 tablespoons vinegar, and 1/2 cup ice cold water. Add this mixture to the flour and use a fork or spatula to roughly combine.
  • Dump onto a work surface but resist the temptation to knead! Just combine it enough to form a cohesive ball. Cover with plastic wrap and chill in the refrigerator for at least two hours.
  • For the beef mixture, saute 1/2 onion in a dollop of oil over medium-high heat for a few minutes. Add ground beef and cook until browned. Drain any fat if you want. Add 2 cloves minced garlic and saute briefly. Add 2-3 minced chipotles, 1 Tablespoon adobo sauce, 1-2 Tablespoons chili powder (I used New Mexican), 1/2 teaspoon cumin, 1/2 teaspoon salt, and freshly cracked pepper. Add a splash of water and let simmer over medium heat, stirring well.
  • Once the dough has been chilled you can roll it out. If using a cutting board roll out 1/4 of the dough at a time. Sprinkle your work surface and rolling pin with flour before starting. Roll the dough down to 1/4" thickness or less.
  • Use a biscuit cutter or bowl to cut out circles of empanada dough. Fill each round with 1-2 Tablespoons of beef mixture and plenty of cheese chunks. Lift both edges of the round and seal the edges using your fingers. Use a fork to seal the edges further.
  • For the eggwash, crack an egg in a bowl, add a splash of water and whisk. Brush the empanadas with the eggwash.
  • Bake at 400F for 20-25 minutes or until golden brown. Let cool for a few minutes before serving.

• 1 cup beef broth
• 3 large or 4 medium onions chopped into small cubes

• 1/2 teaspoon ground cumin

• 4 tablespoons vegetable oil

For the dough,
• 1 cup whole milk
• 1 cup of warm water
• 1 tablespoon salt
• 1 kilo or 2 pounds of all-purpose flour
• 2 eggs
• 180 grams/ 6,5 oz of melted shortening, warm

  • For the Pino, always prepare it the day before, In a large saucepan, heat the oil and fry the meat until lightly browned about 8 minutes. Add the paprika, salt, pepper, and cumin, and saute for a few minutes. Add the broth and simmer for 30 minutes over low heat. 14 oz. empanada-dough leaves, frozen package
1 1/2 lb. ground beef
1 onion, chopped
1 red pepper, chopped
1 habanero pepper, chopped (optional)
1 cup parsley, fresh, chopped
1 cup green onions or scallions, chopped
6 oz. tomato paste
2 cloves garlic, minced
1 cup water
1 Tbsp. olive oil
1 Tbsp. Worcestershire sauce
1 Tbsp. red wine vinegar
1 tsp. oregano, dried
1 tsp. thyme
1/2 tsp. paprika
1/4 tsp. annatto, ground
1/4 tsp. cumin, ground
1 packet sazón
1/4 cup green olives, chopped
1 egg, lightly beaten
1/2 tsp. salt, or to taste
1/8 tsp. pepper, or to taste

Steps:

  • Add olive oil in a large pan or caserola. Start browning the ground beef on medium high heat.
  • Once the ground beef is broken down and browned, add the chopped onion and peppers. When the onions are cooked, add garlic. Stir and saute for 1 or 2 minutes.
  • Add tomato paste and stir. Brown the beef into the tomato paste for about 3 minutes on medium heat. Make sure to keep stirring so it doesn't stick.
  • Add the green onions and chopped olives. Stir together.
  • Add all of the spices: oregano, thyme, paprika, ground annatto, ground cumin and sazón. Stir and cook for 2 minutes.
  • Slowly add the water, vinegar, Worcestershire sauce, and salt and pepper to taste, stirring gently.
  • Cook on low for about 5 minutes, until the water evaporates into the beef mixture.
  • Take the pan off the heat and let cool for about a hour.
  • Preheat oven to 375°.
  • Lay all the dough leaves on your work surface, two or three inches apart. Scoop a heaping tablespoon of the ground beef filling in the middle of each leaf. Fold each in half and press the sides down with a fork, leaving the indentation marks. Then, with your fork, puncture one set of 4 little holes on the top so the empanadas can air out while baking.
  • Line up the stuffed empanadas on your baking sheet or baking pan. Brush each lightly with egg so they don't dry up.
  • Place the empanadas in an oven preheated to 375° for 18 to 20 minutes. They will emerge golden-brown and steaming hot. Enjoy!

There are times when you are in a hurry and you don't have much time to eat but you still want to enjoy a delicious meal. Beef empanadas are here to save you. Empanadas are a dish that consists of a thin and flaky dough stuffed with ground beef in the classic version.

4 onions, (chopped)
1 tablespoon of olive oil
1 garlic clove
2 tablespoons oregano
1 kg ground beef
2 tablespoons raisin
2 tablespoons olives (chopped)
1 can (8oz or 240ml) tomato sauce
2 cups (450g) flour
1 tablespoon salt
1/2 stick (60g) unsalted butter
1 egg
6 tablespoons water
1 tablespoon vinegar
Vegetable oil for frying (if you chose that method)

Steps:

  • For the dough, mix the flour, salt, and butter in a bowl with your hands until you get a homogeneous dough.
  • In a different large bowl, beat the egg, water, and vinegar with a fork and add to the flour dough.
  • Knead the mixture on a clean surface covered with a little bit of flour until you get a rustic dough and set aside covered in the fridge for one hour.
  • For the filling, start by cutting the hard-boiled eggs into thin slices. In a saucepan over low heat cook the onion in the oil and until golden brown, then add the garlic and oregano, mix it for 1 minute.
  • Then add the ground beef and cook for 5-10 minutes until the meat is cooked. Add the raisins, olives, hard-boiled eggs, and tomato sauce.
  • Preheat the oven to 200°C or 390°F and spread some oil on a large baking sheet to prevent the empanadas from sticking. If you are frying them then put oil in a large frying pan at medium heat.
  • Take the dough from the empanadas and roll it with the help of a rolling pin to form a rectangular sheet type of shape. Then using a cookie cutter or a cup cut circles to make the empanadas.
  • Take the circle and fill with 2 tablespoons of the ground beef filling, then fold the dough over and mark the edges with a fork to close the empanadas.
  • Bake the empanadas in the oven for 20 minutes or until the dough is golden brown. If you are going to fry them, place them in the pan with hot oil (don't overcrowd it) and cook for about 4 minutes each.
