AUNT TC'S POTATO SALAD



Aunt TC's Potato Salad image

Number Of Ingredients 11

Kosher salt and freshly ground black pepper
10 pounds red potatoes
2/3 cup sweet pickle relish
1/2 cup yellow mustard
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika, plus additional for sprinkling
12 large hard-boiled eggs, quartered
1/2 red onion, diced
1/2 green bell pepper, diced
3 to 4 cups mayonnaise

Steps:

  • Fill a large stockpot with heavily salted water and the potatoes and bring to a boil. Cook until tender, 20 to 25 minutes. Drain the potatoes and quarter when cool enough to handle.
  • Mix together the relish, mustard, garlic powder, onion powder, smoked paprika, eggs, onion, bell pepper, 3 cups mayo and a pinch of salt and pepper in a large bowl. Add the potatoes and toss until combined. Add additional mayo if the salad looks dry. Sprinkle with smoked paprika. Serve immediately or cover and refrigerate until ready to eat.

Because it seems to appeal to so many, this creamy salad is one of my favorite crowd-size recipes. I've taken it to potlucks and picnics...and it's always a hit.

5 pounds red potatoes
4 celery ribs, sliced
1 bunch green onions, sliced
2 tablespoons dill weed
2 teaspoons salt
2 cups mayonnaise
1 bottle (16 ounces) cucumber ranch salad dressing

Steps:

  • Place potatoes in a large kettle; cover with water. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until tender. Drain and cool. Cut potatoes into small cubes. , In a large serving bowl, combine the potatoes, celery, onions, dill and salt. In a small bowl, whisk mayonnaise and salad dressing until blended. Pour over potato mixture and stir gently to coat. Cover and refrigerate for at least 6 hours before serving.

1/2 cup cucumber (diced-drained)
1/2 cup onion (chopped)
2 tablespoons chives (chopped)
2/3 cup mayonnaise
1 tablespoon basil (fresh)
1/3 cup yogurt
2 tablespoons wine vinegar
1 tablespoon mustard
1 1/2 teaspoons salt
1/4 teaspoon black pepper
1/8 teaspoon paprika

Steps:

  • Combine potatoes, cucumber, onion & chives in a large bowl.
  • Blend mayonnaise,yogurt,vinegar,mustard,salt and pepper in a small bowl.
  • Pour over potato mixture and blend thoroughly.
  • Refrigerate several hours.
  • Sprinkle with paprika before serving.

You can't have summer without potato salad! Am I not wrong? And this Potato & Cucumber Salad is as refreshing as it is satisfying. Don't miss out for your next summer pot luck or barbecue.

Number Of Ingredients 8

2 lb potatoes (small new potatoes, cut into halves or quarters)
1 Cucumber (peeled, sliced length ways and cut into quarters)
2 garlic cloves (crushed)
2/3 Cup Greek yoghurt
1 tsp white wine vinegar
3 spring onions (finely sliced)
Juice and zest of one lemon
large handful mint leaves (roughly torn)

Steps:

  • Boil potatoes until they are just getting soft, about 15 minutes. Remove from heat, drain and cover. Let them sit like this for about 30 minutes.
  • In a medium sized bowl, combine the yoghurt, garlic, vinegar, lemon juice, zest and spring onions. Stir well to combine. Reserve a few spring onions and a little lemon zest for garnish.
  • When the potatoes have cooled, transfer them to a large serving bowl, add the cucumber and pour over your yogurt mixture. Gently stir in the mixture, careful not to tear apart the potatoes. Once the mixture is completely stirred in, top with a few more spring onions, lemon zest and the mint leaves.
  • Cover and refrigerate for several hours before serving.

1 tablespoon Dijon mustard

1/4 teaspoon pepper
2 -3 cups cucumbers, cubed

Steps:

  • In a medium pot, boil the cubed potatoes in water until they can be pierced easily with a fork.
  • In a small bowl, whisk together the chosen herb, mustard, vinegar, horseradish, oil, salt and pepper.

1/4 cup white vinegar
1 dash garlic powder
1/2 cup water
sweet paprika

Steps:

  • Peel the cucumbers and slice them very thin.
  • Sprinkle the cucumbers with salt and let stand for 30-60 minutes with a plate and a 5 lb weight on top.
  • Squeeze out the water on a paper towel.
  • Combine the sugar, vinegar, garlic powder, and water.
  • Add the cucumbers and marinate for a few hours.
  • To serve, sprinkle paprika on half of the salad and black pepper on the other half.
