AUNTIE'S CAST-IRON CORNBREAD
In our house growing up, my mother and aunt were two peas in a pod. Truth be told, they still are. So, when it came to whipping up meals for the family, they often worked in tandem. If it was a night for Mommy's chili--that meant Auntie's cornbread was also coming to the party. My aunt adds a touch more sugar to her batter. It gives the perfect touch of sweetness to balance out the spice of my mom's chili. Adding butter to the bottom of the pan before pouring in the batter also creates a crust that helps it stand up to the heartiness of the chili. Crispy. Sweet. And buttery. Nothing could be better.

Steps:
- Preheat the oven to 425 degrees F.
- In a 12-inch cast-iron skillet, add 1 tablespoon of butter and place the skillet in the oven.
- In a small bowl, whisk together the oil, buttermilk and eggs. In a large bowl, mix together the cornmeal, all-purpose flour, cake flour, baking powder and sugar. Whisk the egg mixture into the dry mixture until combined. Do not overmix!
- Carefully remove the cast-iron skillet from the oven and pour the batter into the hot skillet. Bake until golden brown and a toothpick comes out clean, 20 to 25 minutes. When done, rub the top with butter and add more for each slice when cut, if desired. Bon appetit!
AUNT BERNICE'S CORNBREAD
I received this recipe from my cousin Leslie when putting together our family cookbook. The recipe belonged to her grandmother, Bernice Peters Chastain (my grandpa's sister). She said that she originally used white cornmeal, but her family always thought it looked "anemic" so they used yellow cornmeal. I believe this is the perfect southern cornbread recipe! It's actually the only cornbread that my step-son will eat!

Steps:
- Preheat oven to 400°F.
- Combine all ingredients except for 2 tablespoons of shortening; Mix well.
- In an iron skillet, place 2 tablespoons shortening.
- Place skillet in oven for a few minutes, until shortening is melted.
- Remove skillet from oven and pour cornbread batter on top of melted shortening.
- (Don't mix) Bake for 25 minutes, or until top is golden brown.
- ~NOTE~If you don't have an iron skillet, you may use a 8-inch round cake pan, using the same directions.

AUNT MARY'S SHORTBREAD
My Great-Aunt Mary makes this shortbread by hand every christmas, and it is the lightest, butteriest, most delicious tasting shortbread I have ever had. Use berry sugar to gain the right cookie texture.

- Beat the sugar and butter with a spoon until creamy. In three batches, sift and mix the flour into the sugar-butter mixture. Mix well, until fluffy. (my Aunt Mary uses a wooden spoon for mixing, but you can use electric beaters).
- Pat the dough flat onto a greased cookie sheet, covering about 3/4 of the pan (I pat the dough into neatly formed rectangular shape). Puncture the dough at regular intervals with a fork. Refrigerate for at least 2 hours.
- Cut into 15 pieces per pan (1 inch wide). Bake 1/2 hour at 300-325°F Let cool.

Steps:
- combined dry ingredients in a large bowl.
- combined wet ingredients in a small bowl.
- pour wet ingredients into dry and mix.
- melt butter in the oven in the 8x8" pan first and coat the pan. Then add once ingredients are mixed, stir and pour into pan. Bake at 425 until lightly golden. About 20-25 minute.
- Optional - Pour 1/2 the batter into the pan, lay the cheddar cheese slices on it, carefully spread the salsa over that, then pour in the rest of the batter. Bake the same as above.

- Heat oven to 400 degrees.
- Lightly grease 10 inch pie plate.
- Cook and stir ground beef and onion in 10 inch skillet until brown; drain.
- Stir in seasoning mix.
- Spread beef mixture in pie plate.

- Beat remaining ingredients until smooth.
- Pour in pie shell.

AUNT CLAIRE'S CORNBREAD
A great corn bread recipe, sweet and moist. For a less "granule" texture, let the corn meal soak in the milk for about 15 minutes before mixing everything together.

- Preheat oven to 375 degrees.
- Mix flour, baking powder, salt, and corn meal together; set aside.
- In a second bowl, mix together the oil, sugar, eggs and milk.
- Pour the liquid mixture into the dry mixture and beat together.
- You may need to add a bit more milk - it should be the consistency of cake batter.
- Pour into a greased and floured 9 inch square pan.
- Bake for 35 to 40 minutes.
- If you would like to add chopped jalapenos or cheese, I would suggest decreasing the amount of sugar, as this does make a pretty sweet bread, and I don't think it would be suitable flavour with heat!
