- In a 6-qt. stockpot, bring stock, garlic and 3/4 teaspoon salt to a boil. Meanwhile, in a large bowl, mix egg, bread crumbs, milk, ketchup, Worcestershire sauce, onion powder, pepper and remaining salt. Add beef; mix lightly but thoroughly. Shape into 1-in. balls., Add carrots, pasta and meatballs to boiling stock. Reduce heat; simmer, uncovered, 10-12 minutes or until meatballs are cooked through and pasta is tender, stirring occasionally. Stir in spinach until wilted. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

- In a large pot or Dutch oven, bring chicken broth, water and marinara sauce to a simmer. Stir in garlic and Italian seasoning.
- Add meatballs and return to a simmer. Stir in spaghetti and simmer for an additional 10-12 minutes, or until spaghetti is tender.
- Stir in fresh basil and Parmesan cheese. Season with salt and pepper to taste. Serve with additional basil and Parmesan cheese for garnish, if desired.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- In a large skillet over medium heat, saute the ground beef for 5 minutes. Add the onion and saute for 5 to 10 more minutes. Season with garlic powder, salt and pepper to taste. Add the tomato sauce, stewed OR diced tomatoes, corn and cooked macaroni. Stir well and allow to heat through, about 5 to 7 minutes.

I have no idea who Aunt Fanny is, but this recipe was passed down by my grandmother. This squash casserole has always been a family favorite, and it's not too heavy.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart microwave-safe baking dish with a cover.
- Spread the squash and onion slices in the baking dish, dot with 1/4 cup of butter cut into chunks, cover the dish, and microwave on High 5 to 7 minutes, or until the vegetables are steaming hot and tender.
- In a bowl, whisk together milk and cornstarch until smooth, and stir in the beaten eggs, salt, and pepper. Pour the milk mixture over the squash and onions.

- Place the marinara in a large, wide stew pot over medium heat. Bring to a gentle simmer, reduce heat to low, and then cover with a lid.
- In a large cast iron or nonstick skillet, heat 2 tablespoons olive oil over medium heat. Add onions and garlic, season with a pinch of salt, pepper, and red chili flakes, and cook until translucent, 2-3 minutes.
- Add the tomato paste and whisk to combine. Cook for an additional minute, then transfer to a small plate to cool to room temperature.
- Add the ground beef, cooled onion mixture, breadcrumbs, parsley, eggs, 1/4 cup Pecorino, 1 1/2 teaspoons salt, and 1 1/2 teaspoons black pepper to a large mixing bowl. Gently fold together. Using about 2 tablespoons as your size guideline, form the mixture into 20-24 equally-sized meatballs.
- In the same pan used to cook the onions, heat 2 tablespoons oil over medium-high heat. Add as many meatballs as you can without crowding the pan. Working in batches, sear the tops and bottoms until a golden-brown crust forms, 30-45 seconds per side. Add more oil to the pan for each batch as needed.
- Place the browned meatballs in the marinara and cover with the sauce so they are completely immersed. Cover the pot and simmer over low heat until the meatballs are cooked through, 25-30 minutes.
- While the meatballs are simmering, preheat the oven to 425°F.
- On two large baking sheets, toss zucchini, yellow squash, eggplant, and red onion with the remaining 2 tablespoons oil, and season with 1/2 teaspoon each of salt and pepper. Place in the oven and roast, tossing once halfway through, until lightly charred and tender, about 15 minutes.
- Divide the roasted vegetables among four dishes and top with equal portions of the meatballs and marinara. Garnish with the remaining Pecorino and serve immediately.

- 1. FOR THE MEATBALLS: Mash the bread and milk together in a large bowl. Stir in the cheese,garlic, thyme,egg, salt, and pepper. Add the meat and mix with your hands until well combined. With wet hands, form the mixture into 1-inch meatballs. 2. FOR THE SOUP: Meanwhile, bring 4 quarts water to a boil in a Dutch oven. Add the macaroni and 1 tbsp. salt and cook, stirring often, until al dente. Drain the macaroni and rinse under cold water, and set aside. Wipe the pot dry with paper towels. 3. Heat the oil in the pot over medium heat until shimmering. Add the onion and cook, stirring occasionally, until softened, 5-7 minutes. Stir in the tomato paste, garlic, and thyme and cook until fragrant, about 30 seconds. Stir in the tomatoes and broth and, using a potato masher, mash the tomatoes until broken into bite-sized pieces. Add the meatballs to the soup (do not stir), bring to a simmer, and cook until the meatballs are tender, 10-15 minutes. 4. Stir the pasta into soup and season with salt and pepper. Sprinkle with cheese and basil before serving.
