CHEESY POTATO RECIPE

Steps:
- Preheat your oven to 350 degrees. Spray a 9 by 13 inch baking dish with cooking spray and set aside.
- In a large bowl mix together the sour cream, cream of chicken soup, and shredded cheddar cheese. Set aside.
- Pour the potatoes into the bottom of the baking dish. Top with the sour cream mixture. Bake uncovered for 30 minutes.
- Pull the casserole out of the oven and top with corn flakes. Pour the melted butter over the top. Bake for another 30 minutes uncovered.
- Serve and enjoy.

- Preheat oven to 325 degrees F.
- Boil potatoes in a large pot of salted water until fork tender.
- Allow potatoes to cool in large bowl. Stir in sour cream, salt, pepper, and cheese.
- Pour mixture out into a greased 9x13-inch baking dish, spread evenly. Top with fried onions.
- Bake, uncovered, for about 30 minutes, until bubbly and top is golden brown.

- Preheat oven to 350.
- In a large bowl, stir together butter, soup, sour cream salt and pepper.
- stir in cheese. I add the cheese little by little so that it all gets mixed in evenly and doesn't end up all over the counter.
- stir in potatoes, again little by little.
- Place mixture into a 9x13 baking pan.
- Bake for 60 to 90 minutes or until hot all the way through and a little brown around the edges.

CHEESY POTATOES W/ CORN FLAKES
This is a staple at our summer grill-outs. It's easy and can be prepared the day before, then baked when you need it. I use reduced fat cheddar cheese, light sour cream and 98% fat-free cream of chicken soup.

Steps:
- Take hash browns out of freezer, keep in bag, set aside.
- In microwave, melt 1 stick of butter in large bowl; mix in sour cream, cheese and cream of chicken soup.
- In 9x13 pan (sprayed with Pam), spread hash browns. Spread sour cream, cheese, and soup mixture on top.
- Melt 1/2 stick of butter on stovetop, mix in corn flakes, stir (smash them a little too) until butter is absorbed. You may need/want to add more corn flakes.
- Sprinkle corn flakes on top of sour cream, cheese and soup mixture.
- Bake 1 hour at 350.
