- Cut roast in half. Place in a 5-qt. slow cooker. In a small bowl, combine the ketchup, onion, brown sugar, vinegar, mustard, Worcestershire sauce, garlic, salt, celery seed, paprika and pepper; pour over roast. Cover and cook on low for 8-10 hours or until meat is tender., Remove meat. Skim fat from cooking juices; transfer to a large saucepan. Bring to a boil. Combine cornstarch and water until smooth; gradually stir into juices. Return to a boil; cook and stir for 2 minutes or until thickened., When meat is cool enough to handle, shred with two forks. Return to slow cooker and stir in sauce mixture; heat through. Serve on rolls with pickle slices if desired.

- Cut roast in half and place in a 3- or 4-qt. slow cooker. In a small bowl, combine the ketchup, brown sugar, barbecue sauce, Worcestershire sauce, mustard, liquid smoke if desired and seasonings. AUNT COOKIE'S SECRET BARBEQUE BEEF SANDWICHES
Posting here for posterity, my dear sisters recipe for barbeques. She used to make these for every family picnic. Very easy to make, and serves a crowd! You can easily adapt this to cook in a crock pot as you don't have to brown the meat.

Steps:
- Place peppers, onions and meats into a large pot. Stir vigorously to mix together. Do NOT brown the meat!
- Add the sauces.
- Turn the stove on at this point to medium heat. Cook the raw meats and veggies in the sauces for about 15 minutes until the meats begin to break up and cook.
- Reduce the heat to medium/low, cover, and continue cooking for about an hour, stirring frequently to break up the meats.
- Taste for seasoning and add the brown sugar if you like your barbeque sweeter. Continue cooking and stirring for another hour, until flavors are melded.
- Leave cover off for the last 15 minutes to thicken the bbq. Serve on hamburger buns.

- Cook roast until tender (3 hours or so).
- Let cool and shred meat.
- Mix sauce ingredients and pour over meat.
- Cook in oven at 350 degrees for 1 hour.
- Best when roast is cooked, shredded, and mixed with sauce the day before so flavors blend.
- Store in refrigerator, then bake before serving.
- Serve with large, crusty italian rolls.
