Canola oil

1 large avocado, halved and pitted, skin left on
2 scallions
1 jalapeno pepper
2 tablespoons lime juice (1 to 2 limes)
1 tablespoon honey
1/2 teaspoon smoked paprika
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1 cup Greek yogurt
1/4 cup fresh cilantro leaves, plus more for garnish
Canola oil
Kosher salt
8 ounces pencil asparagus, trimmed
8 ounces mini sweet peppers (about 8 peppers)
8 ounces cherry tomatoes
1 bunch radishes, greens removed, halved lengthwise
2 small yellow squash, cut lengthwise into four 1/4-inch planks
2 small zucchini, cut lengthwise into four 1/4-inch planks
1 small Italian eggplant (about 8 ounces), cut in half lengthwise and sliced into 1/4-inch half-moons
1 large red onion, cut into eight wedges, root end intact
4 pita rounds
Za'atar, for sprinkling

Steps:

  • For the dip: Preheat the oven to 400 degrees F.
  • Trim the top third off the garlic head to expose the cloves. Drizzle with canola oil and sprinkle with salt. Wrap in foil and roast until the bulbs are soft and light golden brown, about 40 minutes.
  • Preheat a grill to medium high.
  • Brush the avocado, jalapeno and scallions lightly with canola oil and place on the grill (the avocado should be flesh-side down). Grill the scallions until charred, 1 to 2 minutes; the avocado until grill-marked and slightly softened, 3 to 4 minutes; and the jalapeno until charred on all sides, 6 to 7 minutes, rotating every 2 minutes. Allow all three to cool slightly.
  • Scoop the avocado flesh into a food processor. Roughly chop the scallions and transfer to the food processor. Halve the jalapeno, scoop out the seeds, and roughly chop. Add half of the jalapeno to the food processor along with 4 cloves of roasted garlic. Add the lime juice, honey, paprika, coriander, cumin, yogurt, cilantro and a pinch of salt. Process until completely smooth. Season with salt to taste. Transfer the dip to a bowl and refrigerate until ready to serve.
  • For the vegetables: Turn all burners on your grill to medium-high.
  • Spread asparagus, peppers, tomatoes, and radishes on one baking sheet. Spread the squash, zucchini and eggplant and red onion on a second baking sheet. Drizzle both with oil, season with salt and toss to coat. Place a grill basket on half of the grill and add the vegetables from the first baking sheet. Cook until charred, 2 to 3 minutes per side for the tomatoes and asparagus (don't let the tomatoes burst), 4 to 5 minutes per side for the peppers and radishes. On the other side of the grill, place the vegetables from the second baking sheet (squash, zucchini, eggplant and red onion). Cook until charred and softened, 2 to 3 minutes per side, plus an extra minute or two per side for the onion.
  • Lightly brush the pita on both sides with canola oil, and sprinkle with za'atar. Grill the pita until charred, 1 to 2 minutes per side. Cool slightly before cutting into 6 wedges each.
  • Arrange the grilled vegetables and pita on a serving platter. Serve with the avocado-yogurt dip garnished with cilantro.

3 tablespoons unsalted butter
1/4 cup chopped walnuts
1 garlic clove, minced

Steps:

  • Steam the asparagus until just tender, about 5 minutes.
  • Meanwhile, melt the butter in a large skillet over medium heat. Cook until the foam has subsided and the butter turns a deep golden brown, about 4 minutes. (Take care that it doesn't burn.) Steps:

  • Bring a large pot of lightly salted water to a boil. When the water is boiling hard, add the asparagus and cook until tender but still crisp, about 4 minutes. Quickly drain the asparagus and plunge into a bowl of ice water to stop the cooking and maintain the bright green color. Drain again and pat dry with paper towels.

  • Trim 3 bunches asparagus; peel the bottoms. Boil until tender, 4 to 5 minutes; drain and cool. Peel the cloves from 4 heads garlic and cook in 1/2 cup olive oil over low heat until soft, 30 minutes. Drain, reserving the oil. 1 cup fresh flat-leafed parsley leaves
1 tablespoon chopped fresh tarragon leaves
1/2 teaspoon minced garlic
2 tablespoons fresh lemon juice
1 pound thin asparagus
1/2 pound sugar snap peas
3 Kirby cucumbers
1 tablespoon extra-virgin olive oil

Steps:

  • Make dip
  • In a cheesecloth-lined sieve or colander set over a bowl drain yogurt, covered and chilled, at least 8 hours and up to 1 day. Discard liquid in bowl and in a food processor pulse yogurt with remaining dip ingredients and salt and pepper to taste until herbs are finely chopped and yogurt is pale green. Dip may be made 1 day ahead and chilled, covered.
  • Have ready a bowl of ice and cold water. Trim asparagus and peas. In a large saucepan of boiling salted water blanch asparagus 1 minute and transfer with tongs to ice water to stop cooking. Drain asparagus well in a colander and pat dry. Return water in saucepan to a boil and blanch peas 30 seconds. Drain peas in a sieve and plunge into ice water to stop cooking. Drain peas well and pat dry. Asparagus and peas may be blanched 1 day ahead and chilled in a sealable plastic bag. Cut cucumbers lengthwise into spears.
  • Drizzle oil over dip and serve with vegetables.

juice 1 lemon
85g butter , cut into small chunks
25g parmesan (or vegetarian alternative), finely grated
½ red chilli
1 tsp brown sugar
juice 1 lime
1 tbsp soy sauce
2 tbsp sesame oil
2 garlic cloves , crushed
5 tbsp good-quality mayonnaise
1 tbsp olive oil

Steps:

  • To make the Parmesan butter, tip the lemon juice into a small saucepan and, over a very low heat, add the butter. Melt and stir the butter into the lemon juice until you have a smooth sauce, add the Parmesan and season to taste, then set aside.
  • To make the Asian dressing, using a pestle and mortar, crush the chilli with the brown sugar, then stir in the lime juice until the sugar has dissolved. Stir through the soy sauce and sesame oil, then set aside.
  • For the garlic mayonnaise, mix all the ingredients together. Decant the sauces into 3 serving dishes.
  • Bring a large pan of water to the boil and cook the asparagus for 2-3 mins until just tender. Drain well and serve steaming hot in a pile for everyone to help themselves and dip into the sauce of their choice.
