- In a small bowl, combine the butter, chives, parsley, freshly ground pepper, and salt; mix well. Transfer the herb butter to a 12-inch-long piece of plastic wrap and roll it into a log. Twist the ends of the plastic wrap to seal. Refrigerate the herb butter until firm, at least 1 hour or up to 2 days.
- In a large sauté pan over medium-high heat, heat the olive oil. Add the asparagus and sauté for 5 minutes. Add the peas and garlic, and sauté until the asparagus and peas are just tender, about 8 minutes. Add the tomatoes, and red pepper flakes to taste, and sauté for 2 minutes. Transfer the mixture to a large platter.

- Preheat oven at 450 degrees Fahrenheit. Line a large rimmed baking sheet with aluminum foil. Set aside.
- Make Garlic Herb Butter - In a small bowl, add all ingredients of garlic butter - room temperature butter, minced garlic, herbs, chili flakes, 1 tsp lemon juice, salt, and black pepper. Mix with back of fork until everything is well mixed into the butter. Set aside.
- Prepare Asparagus: Remove hard stems of asparagus (about 2 inch from the bottom). Place asparagus on baking sheet. Drizzle 1 tbsp olive oil on top. Sprinkle 1/4 tsp of salt and 1/4 tsp of black pepper. Massage to coat asparagus in oil and seasoning. Spread evenly on the baking sheet. Set aside.
- Prepare Salmon - Pat it dry salmon fillets with clean paper towel. Sprinkle with 1/4 teaspoon of each salt and pepper on both sides. Spread herb butter on both sides of salmon. Start from bottom side, then on top side run fingers on salmon fillets to evenly cover with herb butter. Place salmon on the sheet pan between the asparagus.
- Roast Salmon and Asparagus: Roast in 450 degrees preheated oven for 8 minutes or until just cooked through. Take out, let rest for 5 minutes. Divide into plates. Serve with lemon wedges on the side. Enjoy!

- In a small bowl or jar, mix all ingredients using a small spatula or butter knife.
- Mix until well combined.
- Use right away, keep in fridge for 7 days or freeze for several months.
- To freeze, place butter on a large piece of parchment or wax paper or plastic wrap. Roll and shape into a log shape. Secure ends, place in freezer bag and freeze.

- Place asparagus spears into a large skillet, and pour in enough water to cover the bottom of the skillet about 1/2 inch deep. Place skillet over medium heat, bring to a boil, and reduce heat to medium-low. Simmer until the water has evaporated, about 5 minutes.
- Stir unsalted butter and pecans into the skillet with asparagus, and let simmer until asparagus are beginning to brown and pecans are fragrant, about 2 more minutes. Remove from heat.
- Season salmon fillets with salt and black pepper and set aside for about 5 minutes; pat off any excess moisture with paper towels.
- Heat olive oil in a skillet over medium-high heat, and pan-fry the salmon fillets in the hot oil until browned and the flesh flakes easily and is nearly opaque in the center, 4 to 5 minutes per side. Squeeze half a lemon over the salmon fillets as they cook.
- Fill a large pot with lightly salted water and bring to a boil; stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until cooked through but still slightly firm, 4 to 5 minutes. Drain well and return to saucepan.
- Stir 2 tablespoons butter, parsley, and basil into the cooked pasta until coated; sprinkle with salt and black pepper to taste.
- To make sauce, melt 2 more tablespoons of butter in a small saucepan over low heat until melted; stir in Dijon mustard, and squeeze remaining lemon half into the sauce. Allow to simmer for about 3 minutes to blend flavors.
- To serve, divide angel hair pasta between two plates, top each serving of pasta with half the asparagus and pecans, and arrange a fillet over the asparagus. Spoon Dijon dressing over fillets to serve.

- Preheat oven to 450˚F with oven rack in top third of oven. Line a large rimmed baking sheet with parchment paper and trim paper so edges to fit the pan, otherwise it can char in the oven, especially when broiling.
- In a small bowl, mash together all flavored butter ingredients, mashing and stirring until lemon juice is incorporated into butter then set aside. It takes a couple minutes but it will come together.

- For the popover: Preheat the oven to 425 degrees F. Place a 10-inch cast-iron skillet in the oven to heat. Prepare an ice bath in a large bowl and line a plate with paper towels.
- Bring a pan of salted water to a boil, add the asparagus and cook until just tender, 1 to 2 minutes, depending on size. Drain, drop into the ice bath and dry on the prepared plate.
- Whisk together the eggs and milk until smooth. Slowly whisk in the flour and whisk until smooth. Sprinkle the egg mixture with some salt and pepper. Add 1/2 cup of the fontina cheese.
- Using pot holders, carefully remove the pan from the oven. Add the butter to the hot pan and stir until melted. Arrange the asparagus in the bottom of the pan and then season with salt and pepper. Pour the egg mixture over the top. Bake until puffed and golden brown, about 15 minutes.
- Remove the pan from the oven. Sprinkle the remaining fontina and the Parmesan on top, and put it back in the oven until the cheese is melted, 2 to 3 minutes. Remove from the oven and drizzle with some of the herb oil. Serve immediately.

- Preheat oven to 350 F
- Pat meat dry and season with salt and pepper.
- Heat oil in a cast iron frying pan over medium high heat. When pan is hot, add meat and sear 2 minutes per side, or until golden brown
- Transfer pan to preheated oven and cook 3-4 minutes more, or until medium rare
- Let meat rest 2-3 minutes and serve with Herbed Butter
- In a medium saucepan, melt butter over medium heat. Let cool slightly.
- In a blender, mix herbs, worcestershire sauce, hot sauce, and lemon juice. Slowly add melted butter, and blend until incorporated. Do not over mix, or herbs will bruise. Transfer mixture to a metal bowl, and place bowl in an ice bath. Whisk until cool, and mixture has emulsified. Place mixture in freezer for 5 minutes. Remove from freezer and continue mixing until butter is thick and reconstituted.
- Divide mixture in 2. Place half of butter on a large piece of plastic wrap. Roll tightly into log. Repeat with other half.
- Store in refrigerator until use.
- Preheat oven to 400 F.
- Place asparagus in oven proof ceramic dish.
- Top with Herbed Butter. Sprinkle with breadcrumbs and Parmesan cheese. Drizzle with 1 tbsp olive oil and salt and pepper.
- Bake in preheated oven for 10-12 minutes, or until crust is golden brown and crispy.
- Meanwhile, in a medium bowl mix tomatoes, shallot, remaining 1 tsp olive oil, red wine vinegar and salt and pepper.
- Remove asparagus from oven and serve with marinated tomatoes.
- Preheat oven to 400 F. Butter the inside of an 8 x 8 baking dish with 1 tbsp butter.
- In a large pot set over medium heat, melt remaining butter with half and half, garlic, nutmeg and rosemary. Season with salt and pepper.
- Add potatoes, and bring to a boil. Cook for 8-10 minutes or until potatoes are slightly tender.
- Transfer mixture to prepared baking dish, smoothing as much as possible. Cover potatoes with cheddar cheese and bake for 20-30 minutes or until golden brown.
- Let potatoes cool slightly before serving.

- Heat 1 tablespoon oil in medium nonstick skillet over medium heat. Add 1 cup green onions, shallots and sugar. Sauté until onions and shallots are tender, about 5 minutes. Add garlic; sauté 2 minutes. Stir in reserved 1 cup broth, 1 tablespoon oil, mustard, lemon juice, thyme and lemon peel. Simmer until slightly thickened and liquid is reduced to 1 1/4 cups, about 5 minutes. Season with salt and pepper. Cool to room temperature.
- Arrange asparagus on platter. Spoon sauce over. Sprinkle with remaining 1/4 cup green onions and bell peppers.

- 1. Wash and trim asparagus, set aside. Very finely chop the shallots,thyme and parsley. Melt butter in microwave safe casserole long enough to hold the asparagus, saute shallots on high for 30-45 seconds until translucent and softened. Add juice of half a lemon, salt, pepper, 1/2 c broth, stir and place prepared asparagus in the casserole. Cook covered on high in the microwave for 2 minutes. Uncover and stir, recover and microwave for another 1 or 2 minutes. (These times are variable, depending how large the asparagus stalks, and how soft or firm you like your dish.)
- 2. Mix cornstarch into remaining broth Check firmness of asparagus and if done to your taste, remove from casserole and place on a shallow dish, If it needs a bit more cooking, leave in casserole. Add broth with cornstarch, lemon thyme and parsley, cook 1 to 2 more minutes until thickened. Replace asparagus in casserole if it was set aside to prevent overcooking. Stir gently to coat stalks, and add salt and pepper to taste. Squeeze on a little more lemon juice if desired. You can also sprinkle a bit of lemon zest over it if you like.
- 3. Wonderful to serve with rice to catch the juices.
