Asparagus Salad With Shrimp image

Simple Asparagus and Shrimp Salad with thinly sliced asparagus, shrimp, garlic, parsley, and dressed with olive oil and lemon juice.

1 pound asparagus, woody stem ends removed
1/2 pound pink salad shrimp, cooked, shelled
1/4 cup extra-virgin olive oil
1 garlic clove, minced (1/2 teaspoon to 1 1/2 teaspoons, depending on how much you like fresh garlic)
1 Tbsp lemon juice (more to taste)
1 Tbsp minced fresh parsley
Salt and black pepper to taste

Steps:

  • Boil the asparagus: Bring a medium pot of water to a boil and salt it well. Add the asparagus to the boiling water and boil for 3 minutes. Use a slotted spoon to remove the asparagus to a bowl of ice water to cool.
  • Add the shrimp: to the pot of boiling water. If they are pre-cooked, remove after 30 seconds-this is just to warm them. If the shrimp are uncooked, boil them for 2-3 minutes, until cooked through. Remove the shrimp and add them to a large bowl.
  • Slice the asparagus spears thinly on the diagonal: until you get close to the tip. Cut the asparagus tips off in one piece. (They look prettier that way.)
  • Toss everything to combine: Put the asparagus in the bowl with the shrimp. Add the remaining ingredients and toss to combine. Add salt and black pepper to taste. Full-flavored savory garlic and olives and aromatic basil brighten the crisp asparagus. Cutting the asparagus into short pieces allows them to cook quickly.

2 tablespoons extra-virgin olive oil
2 to 3 cloves garlic, finely chopped
2 pounds medium asparagus, trimmed and cut into 2-inch pieces at an angle
Kosher salt and freshly ground black pepper
3 tablespoons pitted kalamata olives, slivered
2 tablespoons chopped fresh basil

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the garlic and cook, stirring, until fragrant, about 30 seconds. Add the asparagus, 1/4 teaspoon salt and some pepper and cook, stirring, until the asparagus is bright green and crisp-tender, 5 to 7 minutes. Add the olives, basil and 1/4 teaspoon salt and toss well. Serve.

Recipe found at lifestylefood.com.au There is a video there of Neil Perry making this dish. This was easy and tasty. Posting it here for safe keeping. I made it with hoki fillets but any mild white boneless fish pieces would be good. The stock is not essential - water is fine.

3/4 cup olive oil
1 large onion, sliced
1 tablespoon minced ginger
2 garlic cloves, finely sliced
2 teaspoons sea salt
1 1/2 teaspoons garam masala
2 teaspoons paprika
1 1/2 teaspoons turmeric
1/2 cup chicken stock
400 g boneless skinless cod, cut into 4cm pieces
3/4 cup plain thick yogurt
20 ml lime juice

Steps:

  • Heat olive oil in a small frying pan, add onion, ginger, garlic and salt and sweat over low-medium heat for 10 - 15 minutes, stirring occasionally, or until onion is soft and starting to caramelize.
  • Add spices and cook, stirring constantly for 1-2 minutes or until aromatic.
  • Add stock or water and simmer for 5-10 minutes.
  • Add fish to pan and stir gently to cover fish with sauce and simmer for 2 minutes.
  • Add yoghurt and lime juice, remove from heat and stir gently.
  • Serve with steamed rice.

GRIDDLED ASPARAGUS WITH PRAWNS & ROUILLE



Griddled asparagus with prawns & rouille image

A light shellfish salad that's packed with flavour and dressed with Dijon mustard, saffron and garlic mayonnaise

350g asparagus , or 40 spears
4 tbsp olive oil , plus extra for brushing
800g large raw prawn , thawed if frozen
zest and juice 1 lemon
small handful basil leaves , torn
3 handfuls young salad leaves , to serve
1 egg
2 tsp white wine vinegar
½ tsp Dijon mustard
100ml each olive and sunflower oil
1 garlic clove
½ tsp cayenne pepper
pinch saffron

Steps:

  • Snap the asparagus to remove woody ends, then trim. Arrange 4-5 spears in a row and thread onto 2 short skewers (if using wooden skewers, pre-soak for 10 mins). Brush lightly with olive oil, and season. Peel the prawns, leaving the tails on. Cut down the backs to remove the black intestines. Rinse and pat dry with kitchen paper.
  • To make the rouille, put the egg, vinegar, mustard and seasoning in the bowl of a stick blender. Add all the oil. Put the blender in the base of the bowl and turn it on. Slowly lift the blender through the mixture until it has thickened to mayonnaise. Put the garlic, pepper, saffron and a little salt in a mortar and grind with the pestle to make a smooth paste. Add to the mayo and mix well.
  • Barbecue or grill the asparagus for 3-4 mins, turning once, until tender. Heat half the oil in a pan (over the barbecue if possible), stir in the prawns and cook for a few mins until the prawns are evenly pink. Add the lemon zest and juice, and the remaining oil. Season and heat through until bubbling.
  • Place a raft of asparagus on each plate and divide the basil and salad leaves between each. Spoon some prawns over the leaves with some of the pan juices. Serve with the rouille on the side.

1 bunch asparagus, ends trimmed,halved
1 lebanese cucumber
500 g medium king prawns, peeled,deveined and cooked
60 ml olive oil
1/4 cup chopped fresh dill leaves
40 ml lemon juice
1 teaspoon coarse grain mustard
salt & fresh ground pepper

Steps:

  • Cook the asparagus in a small pan of boiling salted water for 1-2 minutes or until bright green and just tender.
  • Drain and refresh under running cold water.
  • Drain well and place in a large bowl.
  • Run a peeler down the length of the cucumber to form long ribbons.
  • Add to the asparagus.
  • Add prawns and dill dressing to asparagus and cucumber and toss to combine.
  • Serve immediately.
  • DRESSING: Place all the ingredients in a small screw-top jar and shake to combine.

Entered for ZWT. By Neil Perry, "Fresh and Fast". King Prawns are 15 count and under; equivalent in size to Colossal Shrimp. Taggiasca olives are small and deep red, tasting sweet and mild, grown in Liguria. I don't know your family, but mine would lynch me if they only got one prawn; for them, I would do better with more of the 30-count shrimp. But this salad is technically a side dish, not an entree. Preserved lemons require at least 5 days if you don't already have some on hand.

10 large green king prawns, peeled and deveined
3 bunches green asparagus, trimmed
2 preserved lemons, finely chopped (Simple Preserved Lemons #16603 can be ready in 5 days)
2 tablespoons salty baby capers, soaked and drained
1/2 cup large green olives
1/2 cup ligurian olives or 1/2 cup taggiasca olive
2 lemons, juiced
extra virgin olive oil, to taste
sea salt, to taste
fresh ground white pepper, to taste

Steps:

  • Blanch the asparagus in plenty of boiling salted water, drain and refresh.
  • Heat the BBQ to medium-high and grill the prawns till golden.
  • Toss the asparagus spears with the preserved lemon, capers, olives, lemon juice, olive oil and seasoning.
  • Arrange the asparagus in a large bowl and serve with the prawns.
