This recipe of my mom's is a colorful make-ahead dish that makes brunch a breeze! Substitute the asparagus with other veggies such as broccoli or zucchini, or add a cup of cooked diced ham or sausage for a non-vegetarian twist.

2 teaspoons butter, or as needed
1 ¾ cups sliced crimini mushrooms
5 English muffins, split and toasted
1 cup shredded Colby-Monterey Jack cheese
1 pound fresh asparagus, trimmed and cut into 1-inch pieces
½ cup chopped red bell pepper
½ onion, finely chopped
8 eggs
2 cups milk
1 teaspoon salt
1 teaspoon dry mustard powder
¼ teaspoon ground black pepper
1 cup shredded Colby-Monterey Jack cheese

Steps:

  • Melt the butter in a skillet over medium heat, and cook and stir the mushrooms until their liquid has mostly evaporated and the mushrooms are beginning to brown, about 10 minutes. Set the mushrooms aside.
  • Grease a 9x13 inch baking dish, and arrange 8 muffin halves, cut sides up, in the bottom of the dish. Stuff pieces of remaining muffins into the spaces between the halves. Spread 1 cup of Colby-Monterey Jack cheese over the muffins in a layer, and distribute the asparagus pieces, mushrooms, red pepper, and onion over the cheese.
  • Whisk together eggs, milk, salt, dry mustard, and black pepper in a bowl, and pour the egg mixture over the muffins and vegetables. Cover the dish, and refrigerate overnight.
  • The next day, preheat oven to 375 degrees F (190 degrees C).
  • Remove the casserole from the refrigerator and let stand for 30 minutes. Spread 1 cup of Colby-Monterey Jack cheese in a layer over the casserole.
  • Bake in the preheated oven until a knife inserted near the edge comes out clean, 40 to 45 minutes. Let stand 5 to 10 minutes before cutting into squares.

Steps:

  • Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In 1-quart saucepan, heat 1 inch water to boiling. Add asparagus; cook uncovered 2 minutes. Drain thoroughly.
  • In baking dish, mix asparagus, bell pepper and onions. In medium bowl, stir 1 1/2 cups of the cheese and the remaining ingredients until blended; pour into baking dish.
  • Bake uncovered 35 to 40 minutes, sprinkling with remaining 1/2 cup cheese for last 5 minutes of baking, until knife inserted between center and edge comes out clean.

2 bunches asparagus (about 2 pounds), cut into 2-inch pieces (about 6 cups)
4 thick-slices bacon (about 4 ounces), chopped (about 1 cup)
2 tablespoons unsalted butter
1/4 cup finely chopped onion (from 1/2 a small onion)
Pinch of freshly grated nutmeg
1/8 teaspoon cayenne pepper
Coarse salt and freshly ground black pepper
3 tablespoons all-purpose flour
2 teaspoons Dijon mustard
2 cups whole milk
4 large hard-boiled eggs, halved lengthwise
1 cup butter crackers (such as Ritz), coarsely crushed (about 2 ounces)
1 cup shredded gruyere cheese (about 2 1/2 ounces)

Steps:

  • Preheat oven to 350 degrees with rack in the upper third. Bring a pot of salted water to a boil; prepare an ice bath. Add asparagus and cook until just tender and bright green, 2 to 3 minutes. Transfer to ice bath; drain.
  • Return pot to medium heat. Add bacon and cook, stirring occasionally, until crisp, about 10 minutes; remove bacon with a slotted spoon to a paper towel-lined plate. Discard rendered fat or reserve for another use. Add butter to same pot and heat over medium until foamy. Add onion, nutmeg, cayenne and 1 teaspoon salt. Cook, stirring occasionally, until onion is translucent, about 3 minutes. Stir in flour and cook, stirring occasionally, until toasted and fragrant, about 1 minute. Stir in mustard, then gradually whisk in milk and bring to a boil, whisking often. Reduce to a simmer and cook until thickened slightly, about 5 minutes. (You should have about 2 cups bechamel.) If not using right away, press a sheet of plastic wrap directly onto the surface of the sauce to keep a film from forming.
  • Spread 1 cup bechamel evenly across the bottom of a 9-inch-square baking dish. Reserving 1 cup for topping, sprinkle remaining asparagus over bechamel. Arrange reserved bacon in an even layer on top, followed by the sliced eggs, cracker crumbs and remaining bechamel. Sprinkle the reserved 1 cup asparagus down the center of the casserole, then sprinkle the cheese evenly on top and season with black pepper. Bake until sauce is bubbling, about 25 minutes. Turn oven to broil setting and continue to cook until golden-brown on top, 3 to 4 minutes more. Let cool 15 minutes on a wire rack before serving.

1 pound fresh asparagus, trimmed and cut into 1 1/2-inch pieces
1 tablespoon olive oil
1 (8 ounce) package sliced fresh mushrooms
¼ onion, thinly sliced
1 (4 ounce) packet saltine crackers, crushed
1 cup shredded sharp Cheddar cheese
¼ teaspoon ground black pepper
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup milk
½ cup coarsely chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 1 1/2-quart baking dish.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Cover pan and bring the water to a boil. Add asparagus, cover, and steam until just tender, 5 to 8 minutes.
  • Heat olive oil in a large skillet; cook and stir mushrooms and onion until the mushrooms have given off their liquid, 5 to 8 minutes. Stir in the asparagus, tossing vegetables just until hot. Remove from heat.
  • Mix saltine cracker crumbs, sharp Cheddar cheese, and black pepper together in a bowl; spread half the mixture into the bottom of the prepared baking dish.
  • Spoon the asparagus mixture over the crumb mixture.
  • Whisk the cream of mushroom soup and milk together in a bowl until smooth, and pour the soup mixture over the asparagus mixture.
  • Spread the remaining crumb-cheese mixture over the casserole and sprinkle with pecans.

3 T. unsalted butter
1/2 lb. fresh asparagus
1 red bell pepper, chopped
1 medium-sized onion, sliced thinly in slivers
1 (13 oz.) loaf Italian bread, cubed (about 8 c. cubes)
2 c. shredded Swiss cheese, divided
1 c. fully cooked ham, chopped
8 eggs, beaten
2 1/2 c. milk
1/2 tsp. dried basil
1/2 tsp. salt
1/8 tsp. pepper

Steps:

  • Rinse asparagus and snap off woody ends of the stems. Cut spears into 1-inch pieces.
  • Melt butter in a skillet over medium heat. Add asparagus; cover and cook for 4 minutes, stirring frequently.
  • Add onion and red pepper. Cook uncovered for 3-5 minutes, stirring frequently. Remove from heat and set aside.
  • Place bread cubes in a 9x13-inch baking dish coated with non-stick cooking spray. Sprinkle evenly with chopped ham, spoon on the cooked vegetables, and top with 1 cup shredded Swiss cheese.
  • In a large bowl, whisk together eggs, milk, basil, salt, and pepper. Pour evenly over bread mixture in baking dish.
  • Cover and refrigerate 12-24 hours.
  • Bake uncovered at 350℉ for 45-55 minutes, until set and golden brown.
  • Sprinkle with remaining 1 cup shredded Swiss cheese. Bake for 5-10 minutes more, until cheese is melted.
  • Allow to stand 10 minutes before serving.
  • To break off the woody bottoms of the asparagus stems, just hold onto a spear of asparagus toward the bottom with both your hands. Bend the asparagus spear gently until it snaps. It will naturally snap apart at the best place to separate the woody end and tender tip. Or, just cut the spears with a knife, cutting where the green color fades if you'd prefer.
  • If the asparagus is young and thin, you just need to trim off the very bottom of the spears -- no need to snap the spears because there's really no thick, woody part to them yet.
  • I sometimes use a mixture of Swiss and Monterey Jack cheese, or a mixture of Swiss and mozzarella.
  • It's important for this casserole to sit refrigerated for at least 12 hours. This allows the bread cubes to absorb the egg/milk mixture, and creates the casserole's fluffy texture when baked. I don't recommend short-cutting this step.

1 (12-ounce) package uncooked egg noodles
1 (10 3/4-ounce) can cream of chicken and mushroom soup (i was going to use cream of mushroom but our grocery store was out, this was a new campbells soup and it worked great)
1 (8-ounce) pkg cream cheese, room temp
2 Tbsp chives, dried (can use fresh)
2/3 c milk (i used 2%)
1/3 c white wine, dry
3 c cooked ham, chopped (reserve 1 cup for top of casserole)
2 c fresh broccoli flowerets
10 spears fresh asparagus cut in thirds (steam about 2 minutes to start cooking process)
1 c carrots
1 (8-ounce) pkg mozzarella cheese, shredded
1 (4-ounce) pkg sharp chedder cheese, shredded
6 to 8 slice baby swiss cheese
salt and pepper to taste

Steps:

  • 1. THINGS TO DO BEFORE YOU GET STARTED: Grease large casserole dish; set aside. I used PAM spray. Cook egg noodles according to directions on package. Cut asparagus in thirds; steam asparagus for about 2 to 3 minutes to start cooking process, remove from heat; set aside. Combine Mozzerella and Cheddar cheese, set aside. Preheat oven to 350 degrees.
  • 2. In a large bowl; whisk the soup, cream cheese, milk and wine together. Add chives, broccoli, asparagus, carrots and 2 cups of ham; stir to combine. Add salt and pepper to taste. Add 1/2 of the mozzearella and cheddar cheese and noodles. Toss to combine.
  • 3. Pour mixture into prepared casserole dish; bake for 25 minutes, uncovered; remove from oven, add remaining 1 cup of ham over top of casserole and top with swiss cheese slices; sprinkle remaining shredded cheese over swiss cheese. Cover and bake an additional 5 to minutes until cheese is melted.
  • 4. Remove from over; cool for 5 to 10 minutes and serve.

1 c cooked, diced, country ham
2 c cooked rice, i like to cook the rice in chicken, or vegetable broth to add flavor
1/2 lb asparagus, cut into 1 inch pieces
8 oz sliced mushrooms, i used baby crimini, white mushrooms can be substituted
3 clove garlic, minced
1/2 small onion, diced
2 can(s) cream of chicken soup, mushroom may be substituted
2 c colby jack cheese, shredded, swiss may be substituted if using mushroom soup
fresh ground pepper to taste

Steps:

  • 1. Preheat oven to 350 degrees if baking now. In a medium skillet on medium heat add 1 tablespoon vegetable oil and onion and asparagus pieces except tips. Cook for 1 minute.
  • 2. Add mushrooms, garlic, and asparagus tips. Season with pepper to taste. Cook for another 2 to 3 minutes until just tender. I add the asparagus tips last, because they cook quicker and I don't like the tips to fall apart.
  • 3. Turn off heat and add the cream soups and half of the cheese to rice. Stir gently to combine. Add ham and veggies. Stir until everything is incorporated.
  • 4. Pour casserole into a greased 2 quart casserole dish. You can either refrigerate or freeze casserole at this point. Bring to room temperature before baking. Bake for 30 to 45 minutes until casserole is hot and bubbling. Remove from oven, top with remaining cheese and let stand 5 minutes before serving.

4 cloves garlic, minced
1 cup thinly sliced baby bella or crimini mushrooms
1 1/2 cups roughly chopped asparagus
Sea salt and black pepper to taste
10 ounces gluten-free penne*
2 Tbsp olive oil
6 cloves garlic, minced ((divided))
8 ounces vegan cream cheese*
3/4 cup unsweetened plain almond milk
1/4 cup vegan parmesan cheese
1 Tbsp nutritional yeast
1-2 Tbsp lemon juice
1/4 tsp red pepper flake

Steps:

  • Heat a large skillet over medium-high heat. Once hot, add olive oil (1 Tbsp as original recipe is written), garlic (4 cloves as original recipe is written), mushrooms, and asparagus. Season with a healthy pinch each salt and pepper and stir.
  • Sauté for 3-4 minutes, stirring frequently, until the mushrooms are slightly browned and the asparagus is tender. Remove from skillet and set aside. (If you prefer more tender asparagus, cook longer. If you prefer it with more bite, cook 2-3 minutes.)
  • At this time, bring a large pot of water to a boil and season generously with sea salt. Add pasta and cook according to package instructions, then drain and set aside.
  • Lower heat on the skillet to low and add olive oil (2 Tbsp as original recipe is written) and minced garlic (4 cloves as original recipe is written). Sauté for 2-3 minutes, then remove from heat and set aside.
  • To a blender add remaining raw minced garlic (2 cloves as original recipe is written), sautéed garlic (4 cloves as original recipe is written), vegan cream cheese, almond milk, vegan parmesan cheese, nutritional yeast, lemon juice, red pepper flake, and another healthy pinch sea salt and black pepper.
  • Blend until creamy and smooth, scraping down sides as needed. Taste and adjust flavor as needed, adding more vegan parmesan cheese or nutritional yeast for cheesiness, raw garlic for zing, red pepper flake for heat, lemon juice for acidity/brightness, or salt for saltiness. Mix once more and add back to skillet.
  • Heat the sauce over medium heat to warm until slightly bubbly, then reduce heat to low to keep warm. Stir occasionally.
  • Add cooked drained pasta directly to the sauce along with sautéed asparagus and mushrooms. Toss to coat and enjoy immediately with additional vegan parmesan cheese. Fresh parsley would also make a fresh, colorful garnish.
  • Best when fresh, though leftovers keep in the refrigerator up to 3 days. Reheat in the microwave or on the stovetop, adding a bit of almond milk if it's dried out.

1 (20 ounce) package simply potatoes brand shredded hash browns
2 cups shredded swiss cheese

1/2 cup milk
1/2 lb asparagus, washed, cut and blanched slightly
1 -2 small roma tomato, cleaned, seeds removed, diced

8 -12 drops hot pepper sauce

  • Add canola oil to bottom of skillet; heat to medium-high; add hasbrowns, onion and garlic. Spread them out and fry without disturbing for about 5 minutes, then turn them and fry for another 5 minutes until brown.

8- oz fresh sliced mushrooms
1 Tbsp butter or oil
¼ cup butter
¼ cup all-purpose flour
2 cups milk
2 Tbsp sherry
1 cup shredded mozzarella cheese
salt and pepper, (to taste)

Steps:

  • Preheat oven to 350ºF. Spray a 9x13x2-inch baking dish with cooking spray.
  • Trim any tough ends from asparagus and cut spears into 1-inch pieces. Place in prepared baking dish.
  • In a skillet over medium heat, melt 1 Tbsp butter. Add mushrooms and saute for about 5 minutes. Spread over asparagus in baking dish.
  • In a medium saucepan, melt 1/4 cup of butter. Stir in flour until smooth. Gradually whisk in milk and sherry. Cook over medium heat just until the sauce thickens, about 3 minutes. Remove from heat and stir in mozzarella cheese, salt and pepper. Pour sauce evenly over asparagus and mushrooms.

1 1/4 cup milk
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup shredded cheddar cheese
1/2 cup shredded swiss cheese
1/2 teaspoon salt
1/2 teaspoon lemon pepper
1/4 teaspoon paprika
1 (6-ounce) can french-fried onions.

Steps:

  • Grease a casserole dish and preheat oven to 350 degrees.
  • Melt butter in a large pan over medium heat. Add asparagus, mushrooms, and onions and cook, stirring occasionally, for about 6 minutes.
  • Sprinkle flour over vegetables and cook, stirring continuously, for 1 to 2 minutes.
  • Gradually stir in milk. Cook until thickened.
  • Reduce heat to low and mix in mayonnaise, sour cream, both cheeses, salt, lemon pepper, and paprika. Remove from heat.
  • Crush about 1/3 of the can of french-fried onions and mix them into the asparagus mixture.
  • Transfer mixture to prepared casserole dish.

2 tablespoons thinly sliced scallion greens
6 eggs
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 pinch freshly ground nutmeg
1 cup shredded Swiss cheese

Vegetable oil spray, as needed
Equipment: 9 by 5-inch loaf pan and parchment paper

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the vegetable oil in a large skillet over medium-high heat. Add the onion, squash, and asparagus and cook, stirring, until crisp-tender, about 3 minutes. Remove from heat and stir in the pepper strips and scallions. Transfer to a bowl and let cool.
  • In a large bowl, whisk together the eggs, salt, pepper, and nutmeg. Stir in the cheeses and the cooled vegetables.

Risotto is typically made on the stove top with a fair amount of stirring to release the starch from the grains of rice. It can also be baked in a casserole, though it will be less creamy because less starch is released. Cooking it in a wood-fired oven adds a smoky flavor. The asparagus and Swiss chard are perfect additions in spring. You can use any of your favorite seasonal greens in their place. Diced butternut squash or yellow beets are terrific here too, as are the traditional mushrooms.

Yield serves 6 as a side dish

Number Of Ingredients 10

2 tablespoons olive oil
1 onion, finely chopped
Pinch of kosher salt, plus 1 1/2 teaspoons
1 1/2 cups arborio rice
2 1/2 cups vegetable or chicken stock
1/2 cup dry white wine
1 large bunch chard leaves, chopped, stems cut out and reserved (about 4 cups)
1 pound thin asparagus spears, trimmed and cut into 2-inch diagonal slices
1/4 teaspoon freshly grated nutmeg
1 1/2 cups grated Parmesan cheese

Steps:

  • Prepare a medium heat fire (375°F) in a wood-fired oven or cooker.
  • Heat the olive oil over medium heat in a 6-quart Dutch oven or casserole dish. Add the onion and a pinch of salt and sauté until the onion is translucent, about 3 minutes. Add the rice, stirring to coat with the oil. Stir in the stock, wine, chard leaves and stems, asparagus, nutmeg, and 1 1/2 teaspoons salt. Place in the oven, uncovered, and bring to a simmer. Cook for 5 minutes, then stir in half of the cheese and smooth the top. Sprinkle with the rest of the cheese and cover tightly with aluminum foil.
  • Place the baking dish back on the floor of the oven near the center. Bake until the rice is cooked through and has absorbed most of the liquid, about 20 minutes. The rice should be moist but not soupy. Remove the foil for the last 10 minutes of baking to create a beautiful golden crust and to add smoky flavor.
  • Serve immediately.

One half pound of finlandia swiss cheese.

Steps:

  • Cut off large ends of asparagus. Cook 4 to 5 minutes in boiling water. Add a little salt to water. Drain water and set aside. Cover bottom of casserole dish with asparagus. Using fresh sliced mushrooms cover asparagus completely. Add three or four pats of butter. Lay swiss cheese on top of mushrooms and butter and repeat all layers until you get to the top of the casserole dish. Cover Bake at 400 degrees for 1/2 hour. Let cool for 5 minutes before serving.

1 (8.8 ounce) pouch precooked microwaveable whole-grain brown rice or 1 1/2 cups cooked brown rice
2 cups chopped cooked chicken breast
¼ cup whole-wheat panko breadcrumbs

Steps:

  • Preheat oven to 375 degrees F. Heat 1 1/2 tablespoons oil in a large cast-iron skillet over medium-high heat. Add mushrooms and onion; cook, stirring often, until the moisture released from the vegetables evaporates and the mushrooms are lightly browned, 9 to 10 minutes. Stir in flour; cook, stirring constantly, for 1 minute. Gradually add milk; cook, stirring constantly, until the liquid thickens, about 2 minutes. Stir in tarragon, salt and 1/4 cup Parmesan until melted. Stir in asparagus, rice and chicken. Remove from heat.
  • Toss panko with the remaining 1 1/2 teaspoons oil and 1/4 cup Parmesan in a small bowl; sprinkle over the chicken mixture. Bake until the mixture is bubbly and the topping is golden, about 15 minutes.
