BACON WRAPPED ASPARAGUS BUNDLES
These bundles can be easily prepared on an outdoor grill or in a hot oven.

Steps:
- Preheat oven, if using, to 400 degrees F.
- Lightly coat asparagus spears in extra-virgin olive oil. Season the asparagus with black pepper. Take a quick count of the spear tips. Divide the total number by four. Gather that number of spears and use a slice of bacon to wrap the bundle and secure the spears together. Repeat with remaining ingredients.
- To grill, place bundles on hot grill and cover. Cook 10 to 12 minutes until bacon is crisp and asparagus bundles are tender.
- For oven preparation, place bundles on slotted broiler pan. Bake 12 minutes.

- In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry. Set aside., Flatten bread with a rolling pin. Combine the cream cheese, bacon and chives; spread 1 tablespoonful on each slice of bread. Top with an asparagus spear. Roll up tightly; place seam side down on a greased baking sheet. Brush with butter and sprinkle with Parmesan cheese. , Cut roll-ups in half. Bake at 400° for 10-12 minutes or until lightly browned.

- Cook and stir bacon in a skillet over medium heat until crisp, about 5 minutes. Discard grease.
- Melt butter in the same skillet.

- Wrap a strip of bacon around each piece of asparagus. Skewer these rolled pieces (about 4 per skewer) so they cover about 4 inches of skewer.
- Preheat a grill to medium-hot. Grill for about 6 minutes, turning the skewers about every 2 minutes as they brown. Don't hesitate to shift skewers as you grill, especially if you notice some skewers browning too fast over a hot spot; trade them with skewers grilling over a less hot part. The bacon will crisp up and sizzle when the skewers are ready. Squeeze lemon juice on the skewers, and serve immediately.

ASPARAGUS-BACON ROLLUPS
This recipe is from a cookbook that I received many years ago. I love it because I can sneak in a vegetable that I really like, but my husband hates! I don't even go by the recipe anymore because I have to add more bacon to satisfy his food weakness and "hide" the asparagus!

- Cook the asparagus spears, drain and cool (I suggest steaming-it's faster).
- Meanwhile, use a rolling pin to flatten out the bread-cut off the crusts after you have rolled over the bread-this gives an uptown finish to the rollups.
- Spread the cream cheese over the bread slices, sprinkle bacon bits over this, add the asparagus spear and roll jellyroll style. Cut each slice in half, place on cookie sheet, brush each roll with butter and sprinkle the parmesan cheese on top.
- Bake in preheated 400 degree oven until the parmesan has a golden glow. This should take about 5-8 minutes, but watch closely so the rolls do not get "overglowed". You could also broil 6 inches from broiler until lightly toasted.
- BONUS: These rolls can be made up early in the day (or even the night before) and refrigerated until ready to pop in the oven.
- NOTE: Although you can use canned asparagus, I really don't recommend it. It's mushy and an unappetizing color. I like to buy bacon crumbles because it's cheaper for me than buying bacon, cooking it and crumbling it (also a time saver!)

- Wash and trim asparagus spears.
- Cut bacon strips in half crosswise.
- Wrap one-half strip bacon around each asparagus spear, leaving tip and end exposed.
- Lay on a cookie sheet with sides.
- Bake in a preheated 400 degree Fahrenheit oven for 20 to 25 minutes, or until bacon is cooked.
- Serve warm or at room temperature.

- Preheat the oven to 400 degrees F (204 degrees C). Place an oven-safe wire rack (either greased or non-stick) onto a cookie sheet. (These racks work great!)
- Trim the woody ends of the asparagus. Drizzle with olive oil. Sprinkle with garlic salt and black pepper to taste. (You don't need a lot of oil, just enough for the salt and pepper to stick.)
- Cut the bacon slices lengthwise to make narrower strips. Wrap each bacon strip tightly around an asparagus stalk, only slightly overlapping the bacon on each stalk (it will shrink during cooking, creating a "striped"pattern). Place seam side down onto the wire rack.
- Bake for 10 minutes. Use tongs to turn over. Bake for 10-15 minutes more, until the bacon is almost crispy. Set the oven to broil, then place under the broiler for 1-2 minutes to crisp up more.
